HALIBUT WITH PEPITAS, CAPERS, CHERRY TOMATOES, AND BASIL
Steps:
- In a small, dry skillet over medium-low heat, toast the pepitas lightly. Don't allow them to brown. As soon as you begin to smell them, remove the pan from the heat and transfer to a large plate. Set aside.
- Preheat the oven to 400 degrees F.
- Sprinkle the halibut on both sides with 1 teaspoon of the salt and the pepper. Heat the oil in a large skillet with an ovenproof handle over medium-high heat until it begins to shimmer but is not smoking. Place the fillets skin side up in the hot oil and sear until the fish begins to turn color, 2 to 3 minutes. Turn the fillets and add the lemon juice, wine, and butter to the pan. As soon as the butter melts and becomes foamy, add the capers and tomatoes and simmer until the tomatoes release some juices, about 1 minute.
- Place the pan in the oven until the fish is cooked through, 7 to 10 minutes. Baste the fish with some of the juices and transfer to serving plates. Add the cup torn basil, pepitas, and the remaining teaspoon of salt to the pan juices and stir until the basil is slightly wilted. Spoon the mixture over the fish, garnish with fresh basil leaves, and serve.

- Cut each breast in half. Cut away >and discard any membranes or bone sections, and any remaining peripheral fat. Sprinkle chicken with salt and pepper.
- Cut kernels from ears of corn. There should be about 1 cup.
- Heat butter in a heavy skillet large enough to hold chicken breasts in one layer. Add breasts and cook 2 minutes. Turn chicken pieces and sprinkle shallots between the pieces. Add wine and bring to boil. Cover and cook about 3 minutes.
- Sprinkle with capers and cream. Stir to distribute ingredients. Cover and cook 5 minutes.
- Transfer chicken pieces to warm platter. Add corn to the sauce and cook 1 minute. Add chives and stir. There should be about 1 cup sauce.
- Spoon sauce over chicken pieces and serve.

- Place cauliflower into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 5 to 7 minutes. Drain.
- Mix olive oil, lemon juice, 1 teaspoon lemon zest, capers, anchovy paste, salt, and pepper together in a bowl. Reserve remaining lemon zest for another use.

- Add rice to a large pan of boiling water and cook over high heat for about 15 minutes, or until just tender. Yes, I know this is not the norm for rice. You'll be cooking it in more water than it needs (like you would cook pasta). Drain, rinse under cold running water, and drain again thoroughly.
- Heat 1 tablespoon of the butter in a heavy skillet over low heat. Add the rice, salt, and pepper and heat, stirring gently with a fork. Stir in the lemon juice, parsley, and capers and remove from heat.
- Stir in the remaining butter and taste for seasoning. Serve immediately.
