CHICKEN BREASTS IN CAPER CREAM SAUCE



Chicken Breasts in Caper Cream Sauce image

My husband (who is not a cook) developed this recipe when looking through what we had in the fridge. We love capers and my VERY picky 8-year old always asks for 'Daddy's chickie.'

Number Of Ingredients 8

4 boneless, skinless chicken breast halves
1 teaspoon lemon pepper
1 teaspoon salt
1 teaspoon dried dill weed
1 teaspoon garlic powder
3 tablespoons butter
½ cup whipping cream
2 tablespoons capers, drained and rinsed

Steps:

  • Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder.
  • Melt butter in a large skillet over medium heat. Place breasts in skillet, and increase heat to medium-high. Turn chicken frequently, until brown, about 5 minutes. Reduce heat to medium, and cook 5 to 7 minutes, until breasts are cooked through. Remove chicken to a warm serving platter, and cover with foil.
  • Return skillet to stove, and increase heat to high. Whisk in whipping cream, whisking continuously until reduced to sauce consistency, about 3 minutes. Remove from heat. Stir in capers. Pour sauce over chicken, and serve.

Flavorful for any fowl. My cranberry-hating son even gave it the thumbs up! My thanksgiving guests had fun trying to figure out what this gravy was made out of and were amazed when I finally told them. I had regular turkey gravy out and this gravy. The cranberry gravy was every bit as gone as the regular turkey gravy!

¼ cup water
1 tablespoon cornstarch
1 ½ cups cranberry sauce
½ cup turkey drippings
2 teaspoons curry powder
1 teaspoon thyme
1 teaspoon anise seed
1 teaspoon ground cardamom
1 teaspoon orange zest

Steps:

  • Whisk water and cornstarch together in a bowl until smooth.
  • Combine cranberry sauce, turkey drippings, curry powder, thyme, anise seed, cardamom, and orange zest in a small saucepan; cook, stirring occasionally, over medium heat for about 5 minutes.
  • Stir cornstarch mixture to remove any lumps and pour into cranberry mixture. Reduce heat to medium-low and cook, stirring occasionally, until gravy is thickened, 5 to 10 minutes.

2 tablespoons butter
2 tablespoons all-purpose flour
2 cups broth or 2 cups water
1 tablespoon capers, more if you like
salt
lemon juice
1 egg yolk (optional)
2 tablespoons water (optional)

Steps:

  • Over medium heat melt the butter, add the flour and stir until the flour turns a pale yellow.
  • Slowly add the broth (water) stirring constantly as not to create lumps.
  • Bring to a boil and boil 1 minute.
  • Remove from heat, add the capers, salt, and lemon juice, let stand for 10 minutes.
  • In the meantime mix the egg yolk and water, and whisk into gravy.

50 g caperberries
2 cups beef broth or 2 cups vegetable broth
1 teaspoon flour (use more or less to thicken)
2 tablespoons butter
salt
pepper

Steps:

  • Melt butter in a saucepan.
  • Add broth and mix.
  • Add caperberries and mix.
  • Add flour and mix.
  • Simmer on low heat until it thickens.
  • If needed, add more flour until desired thickness is achieved.
  • Add salt and pepper to your liking.
  • Don't mess up like Bridget.
  • Serve over an omelete.
  • (Really! It's good! Ugly, but good!) Also, you can use this sauce with Lamb or Chicken.
