CANYON RANCH'S LEGENDARY CHOCOLATE CHIP COOKIES



Canyon Ranch's Legendary Chocolate Chip Cookies image

A (somewhat) healthy version of chocolate chip cookies from the Canyon Ranch Spa that uses low-fat cream cheese to replace some of the oil, as well as part whole wheat flour. The recipe was printed in their cookbook, "Canyon Ranch: Nourish: Indulgently Healthy Cuisine".

Number Of Ingredients 10

1/4 cup butter, cold
1/3 cup low-fat cream cheese, cold
1 cup firmly packed brown sugar
2 egg yolks
3/4 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon sea salt or 1/2 teaspoon salt
1 (6 ounce) package semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F and lightly coat a baking sheet with canola oil or cooking spray.
  • In a large mixing bowl, cream butter, cream cheese, and brown sugar on low speed with an electric mixer. Add egg yolks and vanilla and mix on low until just combined.
  • In a medium bowl, combine remaining ingredients. Add to butter mixture and mix by hand until combined. Portion heaping teaspoonfuls (or use a 3/4 ounce scoop) onto baking sheet about 1 1/2 inches apart. Bake for 7 minutes. Lightly flatten cookies with finger. Rotate baking sheet and bake an additional 3 minutes.

1 package (16 ounces) elbow macaroni
1 cup 2% milk
2 tablespoons butter
4-1/2 teaspoons ranch salad dressing mix
1 teaspoon garlic pepper blend
1 teaspoon lemon-pepper seasoning
1/2 teaspoon garlic powder
1 cup shredded Monterey Jack cheese
1 cup shredded Colby cheese
1 cup reduced-fat sour cream
1/2 cup crushed Saltines
1/3 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a Dutch oven, combine the milk, butter, dressing mix and seasonings; heat through. Stir in Monterey Jack and Colby cheeses until melted. Stir in sour cream., Drain macaroni; stir into cheese sauce with the Saltines. Sprinkle with Parmesan cheese.

3 whole eggs
3 egg whites
Pinch of salt
1 tbsp chopped chives
1/2 cup 2 percent milk
1 tsp canola (or olive) oil
1/2 cup Neufchâtel cheese (or lowfat cream cheese)
2 oz smoked salmon, diced

Steps:

  • Preheat oven to 400°F. In a large bowl, combine eggs, egg whites, salt, chives, and milk and mix well. Heat oil in a nonstick, ovenproof saute pan 30 seconds, tilting pan to distribute oil. Add egg mixture. Using a spatula, move egg mixture so it cooks evenly, about 30 seconds, or until eggs begin to set. Remove from heat. Spread cheese evenly over egg mixture. Top with smoked salmon. Place pan in oven and bake until slightly browned all over, about 15 to 20 minutes. Remove from oven and cut into 4 equal wedges.
