1 medium cantaloupe, peeled and cubed
1 cup sugar
1 cup milk
1 cup self rising flour or 1 cup Bisquick
1 egg
1 cup melted butter

Steps:

  • Place melon in a casserole dish.
  • Combine all the other ingredients,mix well.
  • pour over melon.
  • Bake 350 for 45 minutes to 1 hour.

I created this peach cobbler recipe myself with a few tips from my mom and grandma. Because it's so quick and easy, this cobbler can be made in minutes to suit any occasion. I've used it for a breakfast fruit dish, dinner dessert and light snack. -Martha Betten, North Manchester, Indiana

1/2 cup butter, melted
1 can (15-1/4 ounces) sliced peaches, drained
1-1/4 cups sugar, divided
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup 2% milk
Whipped cream, optional

Steps:

  • Preheat oven to 400°. Pour butter into a shallow 2-qt. baking dish; set aside. Drain peaches, reserving 1/4 cup juice. In a saucepan, bring peaches and reserved 1/4 cup juice just to a boil. Meanwhile, in a bowl, combine 1 cup sugar, flour, baking powder and salt. Stir in milk; mix well. Pour over butter in baking dish. Spoon hot peaches over batter. Sprinkle with remaining 1/4 cup sugar. Bake until bubbly and golden, 20-25 minutes. Serve warm and if desired, with whipped cream.

2 cans (29 ounces each) sliced peaches
1/2 cup packed brown sugar
6 tablespoons quick-cooking tapioca
1 teaspoon ground cinnamon, optional
1 teaspoon lemon juice
1 teaspoon vanilla extract
TOPPING:
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter, cubed
2 large eggs, room temperature, lightly beaten
BUTTERSCOTCH SAUCE:
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1/4 cup butter, melted
2 tablespoons lemon juice
Vanilla ice cream, optional

Steps:

  • Drain peaches, reserving 1/2 cup syrup for the sauce. In a large bowl, combine peaches, brown sugar, tapioca, cinnamon if desired, lemon juice and vanilla. Transfer to an ungreased 11x7-in. baking dish. Let stand for 15 minutes., In a large bowl, combine the flour, sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Stir in eggs. Drop by spoonfuls onto peach mixture; spread evenly. Bake at 350° until filling is bubbly and a toothpick inserted in topping comes out clean, 50-55 minutes. Cool for 10 minutes., For butterscotch sauce, in a small saucepan, combine the brown sugar, flour, salt, butter and reserved peach syrup. Bring to a boil over medium heat; cook and stir until thickened, 1 minute. Remove from the heat; add lemon juice. If desired, serve cobbler with ice cream.

Warm cantaloupe?! Turns out it's amazing! Especially when it's combined with the sweet peaches in this easy cobbler. We would have never thought to pair those fruits together, so thank goodness for Melissa. A delicious summertime dessert.

Number Of Ingredients 16

1 ripe cantaloupe, seeded, peeled, cubed (about 3-4 cups)
1 can(s) large, peaches - drained, 30 oz.
1/2 c sugar
1/4 tsp ground ginger
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp vanilla
1/2 stick butter
1 pinch salt
1 stick butter (to be melted in pan during preparation)
TOPPING
1 c flour, self-rising
1 c sugar
1 c milk
1 tsp vanilla
1/4 tsp cinnamon

Steps:

  • 1. Combine all cobbler ingredients in a large saucepan. Cook until fruit is softened and sauce is slightly thickened. Remove from heat. Make sure you taste after combining and heating the ingredients. You may need to add more sugar or seasonings but it will all depend on your taste.
  • 2. Place 1 stick of butter in 13 x 9 pan and heat in 350 deg oven until melted. As this is melting, mix topping. Mix together all topping ingredients until smooth. If topping is too thick, add more milk until thinned.
  • 3. Pour fruit into the pan over melted butter. Pour topping over fruit. Sprinkle with sugar if desired.
  • 4. Bake at 350 deg until golden brown and bubbly (approx. 35 minutes).
  • 5. Remove from oven and serve while warm. Can top with whipped cream or ice cream.
