WATERMELON FRUIT BOWL
All of your favorite fruits, lightly sweetened, served in a watermelon 'bowl'.

- With a large, sharp knife, remove the top 1/4 section of the watermelon. With a melon baller, scoop flesh from inside of watermelon, removing as many seeds as possible. Leave 1/2 inch of flesh inside the shell of the watermelon. Scoop cantaloupe and honeydew in the same manner, removing as much flesh as possible, and discarding the rinds. Refrigerate fruits separately until ready to assemble.
- In a small saucepan over medium-high heat, bring water and sugar to a boil. Remove from heat, and continue stirring until sugar has completely dissolved. Add lemon zest, and set aside to cool.
- To serve, place watermelon balls, cantaloupe, honeydew, oranges, pineapple, strawberries, and grapes, in a large mixing bowl. Pour syrup over, and toss thoroughly. Transfer mixture to watermelon bowl, and serve. Set aside any fruit mixture that will not fit. There will be enough fruit to refill the bowl.

- Using a large chef's knife cut the cantaloupe in half. Remove and discard seeds. Scoop out the insides of the cantaloupe, leaving about 1' of fruit. Cut up the removed cantaloupe into small pieces, set aside. Wash, peel, and cut up a granny smith apple into 1/2" pieces, set aside. Wash and pick over 1/4 cup of fresh blueberries and set them aside. Wash and slice 10 or more ripe strawberries, set aside. Peel and slice a banana, set aside. Combine all of the prepared fruit into a mixing bowl. Drizzle the fruit with honey. Serve.

- Measure all ingredients, and boil the water ,keep it ready - ghee , raisins , cashew nuts, semolina , cantaloupe puree ( peel the skin , remove - discard seeds , chop into pieces and grind to smooth puree (do not add water while grinding) , Keep aside some fresh cut cantaloupe chunks to add them at the end, cardamom powder , food color powder (optional) , white granulated sugar , boil the given amount of water ( and keep it ready to add , make sure water doesn't reduce) , saffron strands.
- Take a wide pan, which you're planning on cooking the sweet , Add four tablespoon of ghee , and heat in medium flame. Add both cashew nuts and raisins and fry them until it is golden brown color ( approximately for a minute) , remove the nuts from the ghee into a bowl and set aside ( drain the nuts from the ghee).
- In the same pan, with the remaining ghee , add the semolina and roast until it slightly changes color ( make sure the flame is in medium - low , sauté continuously without getting the semolina burnt). Now add a pinch of food color (optional) , then add the one and half cups of boiling water into the roasted semolina , stir continuously until all the water is absorbed ( stir repeatedly , else lumps will form).
- Now add granulated sugar, cantaloupe puree and the chopped chunks , cardamom powder, saffron strands , and the fried cashew nuts - raisins , Make sure to keep the flame in medium- low , stir well without lumps ( you will notice the semolina consistency turning watery after adding sugar , it is normal) . Cover the pan with a lid and simmer , and cook for three to five minutes , stir once in- between. It will start to come together , open the lid , add the remaining two tablespoons of ghee , and mix well. For best taste, serve warm.
