HOT PEPPER MUSTARD RECIPE



Hot Pepper Mustard Recipe image

Makes approximately 7 pints

Number Of Ingredients 8

40 medium-large banana peppers
4 hot peppers, optional for additional heat
1 quart of prepared yellow mustard
1 quart of apple cider vinegar
1 1/4 cup all-purpose flour
5 cups white sugar
1 1/2 cup water
1 teaspoon Kosher salt

Steps:

  • Seed and chop peppers into fine pieces. *We use the Hamilton Beach Food Processor to complete this task in a fraction of the time.
  • Place peppers in a large stockpot. Add the remaining ingredients and stir.
  • Bring mixture to a boil, stirring constantly. Boil for 5 minutes. Continue to stir to prevent the mixture from sticking to the bottom of the pan.
  • Place in warm, sterilized pint jars, leaving 1/4 inch headspace. Wipe rim and add warm lid and finger tighten the ring. Place in hot water bath and process for 10 minutes (adjust for altitude).

Pickled Banana Peppers image

20 banana peppers (sliced)
2 onions
6 tsp. minced garlic
5 c. vinegar
1 c. water
4 tsp. canning salt
2 T. sugar
1/2 tsp. turmeric

Steps:

  • Slice banana peppers into about 1/8" rounds. Thinly slice onions.
  • Make sure your jars are clean and sterile. Add several onion slices and about 1-2 teaspoons of minced garlic to each jar.
  • Pack peppers tightly into jars.
  • Combine vinegar, water, turmeric, and canning salt and bring to a boil. Boil for 5 minutes.
  • Remove from heat and pour the hot pickling mixture into each of the jars, leaving about 1/2" of head space.
  • Wipe the top of the jars then place a new lid on each and seal with a band.
  • Place the jars on a heat resistant surface to cool completely. As the jars cool, you should here them "pop" as they seal.
  • Label and date your jars. Enjoy

1 ½ pounds banana peppers, cut into 1 inch pieces
1 pound jalapeno peppers, cut into 1 inch pieces
¼ pound serrano peppers, cut into 1 inch pieces
6 cups vinegar
2 cups water
3 cloves garlic, crushed
1 onion, chopped

Steps:

  • Place the banana peppers, jalapeno peppers, and serrano peppers into a large pot. Add the vinegar, water, garlic, and onion. Bring to a boil, then reduce heat to medium-low, and simmer for 5 minutes.
  • Ladle peppers into sterile jars, and fill to the top with the liquid, leaving 1/4 inch headspace. Tap jars on the counter to remove air bubbles. Place two piece lids on the jars.
  • Place jars in the rack of a large, canning pan, and fill with enough water to cover the jars completely. Bring to a boil, and boil for 10 to 15 minutes. Refrigerate jars after opening.

48 hot banana peppers (washed, seeded and cut lengthwise or into chunks)
1/4 cup canning salt
1 quart white vinegar
3 quarts water

Steps:

  • Use gloves when handling hot peppers.
  • Sterilize four quart jars, lids and rings in boiling water.
  • Taking one jar at a time, place as many peppers as you can into the jar.
  • Mix the vinegar, salt and water together until dissolved in a sauce pan . Bring just up to a boil but do not boil and pour over peppers.
  • Run a spatula or butter knife around the edges of the jars and press peppers to get all the air bubbles out.
  • Wipe the rims of the jars with a clean cloth, place lids and screw bands on fingertip tight.
  • Place in boiling water bath five minutes (no more or they will be soggy).
  • After 5 minutes take out and set jars on a cloth-protected counter to cool (the lids will make a snapping sound).
  • The ones that do not snap after the jars are cooled, store in fridge as you cannot put in water bather the second time.

I grew up canning my grandma's peppers in tomato sauce. Which my husband also loves. So every year.... I do lots of canning with peppers...

TO MAKE THE OVERNIGHT BRINE
1 gal water
2 c salt
PREPARING PEPPERS & QUARTS
6-8 quart jars for canning, lids & rings
1 bushel, fresh picked hot peppers (or sweet) examples: hot hungarian wax, hot banana peppers, jalapeno, medium hot hungarian. (for sweet peppers, you can use sweet banana, etc.)
2-3 clove garlic, per quart
1/2-1 tsp italian seasoning mix, per quart
2-3 Tbsp olive oil, extra virgin, per quart
pinch small, of alum (optional), per quart
CANNING SOLUTION
1 gal water
1 c pickling salt
1 c cider vinegar

Steps:

  • 1. Prepare peppers: Wash peppers, drain. Then, wearing rubber gloves to protect your hands, cut into rings about 1/2" thick. Discard stem ends. Place cut pepper rings into a large stainless steel bowl or pan, or glass bowl. Make brine using one gallon of water and 2 cups of salt, stir together until salt is dissolved. Pour brine over peppers. Cover and allow to soak overnight. (10-12 hrs)
  • 2. Next day: Prepare quart sized jars for canning peppers. Clean, & sterilize jars, lids & rings. Place 2-3 cloves of garlic, Italian seasoning, EVOO, & alum (optional) in each quart sized jar.
  • 3. In a large stock pot, make canning solution of 1 gallon water, one cup pickling salt, & 1 cup cider vinegar. Bring to a boil. Remove from heat.
  • 4. Drain peppers. **** Rinse lightly with cold water. Pack peppers into quart size jars with garlic, olive oil, and Italian seasoning, leaving 1/2 inch head space. Fill with canning solution. (make sure to release any air bubbles. Clean rim of jar. Tightly place lids and rims on jars. Process in a hot water bath for 10 minutes. (Do not process in pressure cooker. Peppers will get mushy & not stay crisp.)
  • 5. **** You may add small green tomatoes, small pickles, small pieces of cauliflower, &/ or carrot slices to make a hot pepper vegetable mix. Just soak vegetables in brine overnight with peppers
  • 6. Store away in a cool place to allow seasonings to work. Can be used after 4 weeks, but they get better and hotter as more time goes by. For hot peppers and oil, pour peppers into a glass bowl and add 1/2 cup olive oil. Serve with fresh Italian bread and butter.

Enjoy pickled peppers year round with this easy four ingredient canning recipe. Use your favorite mix of hot peppers or banana peppers.

1 3/4 pound assorted hot peppers
6 cups vinegar
2 cups water
3 cloves garlic, crushed

Steps:

  • Prepare boiling water bath canner, clean hot jars, and clean two piece lids.
  • Wash hot peppers. Leave peppers whole or cut into slices. If using different varieties, toss to blend so you have a mix of peppers in each jar.
  • Combine vinegar, water and garlic in a large sauce pot. Bring liquid to a boil; reduce heat and simmer about 5 minutes. Discard garlic.
  • Pack hot peppers into hot jars; leaving 1/4 inch headspace. Ladle hot liquid over peppers, leaving 1/4 inch headspace. Remove air bubbles. Wipe rim clean and seal with two piece canning lids.
  • Process pickled peppers 10 minutes in a boiling water bath canner. Makes about 5 pints.
  • I prefer to pack mine in half pint and half cup jars, because we tend to go through a smaller amount of peppers at one time.

How to Can Banana Pepper Rings image

1 lb sweet or hot banana peppers
3 cups cider vinegar, (5%)
2 cups water
3 tsp. pickling salt
3 cloves garlic
3 Tbsp. mustard seed, optional
1 1/2 Tbsp. celery seed , optional

Steps:

  • Sterilize canning jars and keep warm. Prepare hot water bath.
  • Using gloves, wash and cut off the stems of the peppers. Slice into 1/8-1/4 inch slices.
  • Place vinegar, water, and pickling salt in a medium sauce pan and heat until boiling.
  • Fill each jar with 1/2 clove of garlic, 1 1/2 tsp. mustard seed (optional) and 3/4 tsp. celery seed (optional). Then add the pepper slices, making sure to leave 1/2" of headspace at the top of the jar.
  • Ladle the hot liquid into the jars filling to cover the peppers, maintaining the 1/2" of headspace. Use a plastic utensil to remove any air bubbles, adding more liquid as needed.
  • Add lid and finger tighten the ring. Process in hot water bath that is already close to boiling for 10 minutes for half pints or pint jars. * Adjust for altitude as necessary.
  • Remove and let cool for 24 hours. Check to make sure the jar is sealed prior to storing. If jars did not seal (the lid bounces up and down), place in refrigerator and use within 2 weeks.

1 gallon cabbage, chopped
6 teaspoons salt
5 teaspoons celery seeds
1 teaspoon black pepper
8 cups white vinegar
7 cups water
5 lbs sugar

Steps:

  • Seed and de-vein peppers.
  • Mix together cabbage, salt, celery seed and black pepper.
  • Stuff peppers and pack into jars.
  • Mix together vinegar, water and sugar.
  • Bring to a boil.
  • Pour over peppers.
  • Wipe edges of the jars with a clean cloth, place lids and screw bands on fingertip-tight.
  • Turn jars upside down for 5 minutes, then turn right-side up and allow to seal**.
  • **Inversion is an heirloom method no longer recommended by the USDA/NCHFP (National Center For Home Food Preservation). To meet current guidelines, the filled jars should be processed in a boiling water bath for 10 minutes up to 1000 feet in elevation, 15 minutes from 1000 to 6000 feet, and 20 minutes at over 6000 feet.
