1 package (10 ounces) frozen mixed vegetables
1 can (15 ounces) kidney beans, rinsed and drained
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper
3/4 cup sugar
1/2 cup vinegar
1 tablespoon cornstarch

Steps:

  • Cook the mixed vegetables on the stove or in the microwave until crisp-tender. Drain; place in a large bowl. Add kidney beans, celery, onion and green pepper. In a saucepan over medium heat, bring sugar, vinegar and cornstarch to a boil, stirring constantly, until thickened. Cool slightly. Pour over vegetables and toss. Refrigerate.

1 (15 ounce) can peas, drained
1 (15 ounce) can shoe peg corn, drained
1 (15 ounce) can green beans, drained
1 (2 ounce) jar pimentos
1 cup chopped celery
½ cup chopped green bell pepper
½ cup chopped onion
1 cup white sugar
½ teaspoon ground black pepper
1 teaspoon salt
½ cup vegetable oil
¾ cup white wine vinegar

Steps:

  • Mix together the peas, corn, green beans, pimentos, celery, bell pepper and onion.
  • In a saucepan over medium heat, combine the sugar, black pepper, salt, oil and vinegar. Bring to a boil and pour over salad; mix well to coat. Refrigerate for 24 hours.

CANNED ZUCCHINI SALAD



Canned Zucchini Salad image

Number Of Ingredients 8

1 kg (6 cups) diced zucchini
1.5 kg (7½ cups) tomato
4 big bell peppers
4-5 garlic cloves
½ cup sugar (Or ¼ cup honey)
1 tablespoon salt (1 teaspoon is enough)
1 tablespoon vegetable oil (optional)
1 cup 5% white vinegar (See note)

Steps:

  • Wash and slice tomatoes and peppers
  • Dice zucchini into ½-1 inch cubes.
  • Cook tomatoes with sugar (or honey) and salt - cook for 10 minutes
  • Add all other ingredients - cook for 20-30 minutes or till done.
  • Ladle into sterilized jars
  • Wipe rims, apply lids, and screw on bands
  • Process in water canner for 20 minutes

17 ounces corn, canned
16 ounces green beans, canned
2 ounces pimientos, chopped
4 stalks celery, chopped
1 green pepper, chopped
1/2 small onion, chopped
2/3 cup vegetable oil
2 tablespoons water
1 1/2 cups sugar
lettuce, garnish

Steps:

  • Combine water chestnuts, corn, green beans, pimiento, celery, green pepper, and onion in a large bowl, tossing lightly.
  • Cover and refrigerate 1 hour.
  • Combine vinegar, oil, water, and sugar; mix well.
  • Pour over vegetable mixture, cover and refrigerate at least 24 hours.
  • Drain and serve in a lettuce-lined bowl.

Made with chopped hard-boiled eggs, mashed potatoes, and green onions, Vegetable Potato Salad is creamy, comforting, and oh so delicious! The addition of eggs and green onions might not be the makings of a traditional Newfoundland potato salad in your home, but it surely is in mine! You've got to try this version!

6-8 medium potatoes, (white flesh, peeled and roughly chopped)
½ cup mayonnaise
2 tablespoons sugar
15 ounces canned mixed vegetables, (drained)
6 large eggs, (hard boiled, peeled and roughly chopped)
1/4 cup green onions, (finely sliced)
1/2 teaspoon salt

Steps:

  • Add the chopped potatoes and salt to a large pot and cover the potatoes with cold water. Bring to a boil and cook until potatoes are fork-tender. Drain and set aside to cool slightly.
  • Using a hand-held potato masher, or a potato ricer, mash the potatoes leaving no lumps.
  • Add all of the other ingredients, and using a large spoon, vigorously mix all of the ingredients together.
  • Taste for seasoning and sweetness and adjust accordingly.
  • Transfer to a glass bowl with a tight fitting lid. Refrigerate for at least 4 hours or overnight for best results.

  • Add in chopped vegetables.

One 14- to 15-ounce can low-sodium white beans or black-eyed peas, rinsed and drained
One 14-ounce jar artichoke hearts, drained, rinsed and quartered
One 14-ounce can hearts of palm, drained and cut into about 1/2-inch slices
4 ounces crumbled feta
3 to 4 celery stalks, peeled and cut into about 1/2-inch pieces, plus some coarsely chopped celery leaves
1 cup grape tomatoes, cut in half
3 tablespoons extra-virgin olive oil
1 tablespoon finely grated lemon zest plus 1 or 2 lemons, halved
Kosher salt
1/4 cup pine nuts, toasted

Steps:

  • Combine the beans, artichoke hearts, hearts of palm, feta cheese, celery and leaves, tomatoes, oil and lemon zest in a large serving bowl. Squeeze on lots of lemon juice to make the salad taste really bright, then sprinkle on about 1/2 teaspoon salt. Toss really well and season with more salt to taste. Sprinkle on the pine nuts.
