Instructions are for a Big Batch of Marinara Sauce utilizing a huge can of Nina San Marzano Tomatoes 106 ounces which you can purchase for less than four dollars at Costco. The price of yearly membership is worth it just to be able to buy these cans of tomatoes. When you open up this can look at how beautifully bright red the tomatoes are. Also, note that there is a nice beautiful tomato sauce not a watered down version like you find in most canned tomatoes. After I tried the San Marzano tomatoes I couldn't go back to regular canned tomatoes. This is a very flavorful simple marinara sauce. I usually make up a batch when I'm making lasagna and then the extra sauce goes into the freezer to use later. Don't rate this recipe negatively if you choose to make it with other types of tomatoes rather than San Marzano. I have received so many complements on my sauce. Try this you won't be sorry. 106 ounces san marzano tomatoes (Nina San Marzano Imported Canned Tomatoes)
8 garlic cloves (finely sliced)
8 garlic cloves (crushed)
20 basil leaves (sliced)
1 cup olive oil
2 teaspoons sea salt (or to taste)
splash white wine

Steps:

  • Open the can of Nina San Marzano tomatoes, being very careful since the large size of the can makes it awkward. The lid is very sharp be careful not to cut yourself. Pour the tomatoes into a large pot. Mash them a few times with your potato masher and set aside.Slice your garlic with a garlic slicer or use a sharp paring knife to cut very thin slices.
  • Now you'll need a fairly large saute pan. Heat about ¼ cup of the olive oil in the pan on medium and then add the sliced garlic. Saute only until golden brown. (Be careful not to burn it, there is nothing worse than burnt garlic. Watch your heat if it's too hot it can burn the garlic almost instantly. If you do burn the garlic you might as well start all over again.) Then add the crushed garlic, splash with some white wine if desired and saute for just a little longer.
  • Remove the saute pan from the heat and pour the garlic mixture into the large pot with the tomatoes. Pour in the remaining olive oil, salt and simmer uncovered for approximately 60 to 90 minutes. When the sauce has reduced to the thickness you like, remove from heat and add the freshly cut basil and stir.
  • There is a common misconception that you should cook the family recipe for pasta sauce "all day". Not this marinara sauce recipe!

2 cups tomatoes, in addition to their juices (for example, a 28-ounce can of San Marzano whole peeled tomatoes)
5 tablespoons butter
1 onion, peeled and cut in half

Steps:

  • Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt.
  • Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
  • Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.

1 28 ounce can whole peeled San Marzano tomatoes (recommend Cento brand)
2 tsp dried basil
1 tsp dried oregano
Salt (to taste)

Steps:

  • Heat the olive oil in a non-reactive saucepan (one with a stainless steel finish) over medium-low heat. Cook the garlic in the oil for few minutes, stirring frequently to avoid burning. Pour in the canned tomatoes with their juices, and add the basil and oregano.
  • Reduce heat to low, and let the sauce simmer for about 30 minutes. Stir occasionally, using a wooden spoon to break up the tomatoes as they cook. Taste and add salt (or other seasonings) as desired. Remove from heat, and serve immediately or store in the fridge or freezer.

8 cloves minced garlic
2 tbsp extra-virgin olive oil
4-5 28oz cans San Marzano Peeled Tomatoes ((with juices))
2-3 tbsp amore sun-dried tomato paste
1/2 tsp (each) salt & black pepper
3 Tbsp fresh basil ((for dried basil - 1 Tbsp))
2 Tbsp fresh oregano ((for dried oregano - 2 tsp))

Steps:

  • Cook garlic: In a large pot on LOW-MEDIUM heat sauté garlic in olive oil for 30-60 seconds. Stir constantly to keep garlic from burning.
  • Add tomatoes and simmer: pour canned tomatoes with juices in with the garlic. Add tomato paste, salt, and black pepper. Mix ingredients together, partially cover with lid - but not completely, and simmer on LOW heat for 4+ hours. Stir every so often to avoid burning. Note: if using a parmesan rind, add it in this step and let it simmer with sauce until finished. Remove and discard rind when ready to serve.
  • For smooth sauce: when sauce is finished cooking, use a hand immersion-blender to puree. Note: If you prefer a chunkier/thicker sauce (like I do), you can skip this step as the San Marzanos naturally break down while cooking.
  • Add herbs: when sauce is finished, mix in chopped fresh herbs. Season with additional salt & black pepper if needed and serve!

12 ounces canned San Marzano-style peeled plum tomatoes
1 (8 ounce) can tomato sauce
½ cup vodka
1 tablespoon minced garlic
1 teaspoon dried oregano
1 teaspoon dried basil
1 pinch salt and ground black pepper
1 cup heavy whipping cream
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain. Transfer to a serving dish.
  • Pour canned tomatoes into skillet over medium heat; stir in tomato sauce, vodka, garlic, oregano, basil, salt, and pepper. Simmer sauce, stirring occasionally, until alcohol is completely cooked off, 15 to 20 minutes. Stir in cream and simmer until heated through, about 5 more minutes. Remove sauce from heat.
  • Pour sauce over penne pasta; toss to coat. Sprinkle with Parmesan cheese.

My tried-and-true canning tomato sauce recipe, perfect for pasta dishes, homemade pizza, and more.

45 pounds of tomatoes
6 cups chopped onions (I use a food processor for this)
12 cloves of garlic, minced
1/4 cup olive oil
1 tablespoon ground black pepper
2 tablespoons brown sugar (more to taste)
¼ cup coarse sea salt (more to taste)
Bottled lemon juice (2 tablespoons per quart jar)
A water bath canner

Steps:

  • Wash the tomatoes and remove the ends and any damaged spots. Quarter them and deseed them by running your fingers down the middle and scraping out the bulk of the seeds and juice. Puree the tomatoes in a food processor or blender.
  • (OR, you can run the tomatoes through a food mill and save yourself a lot of time! When I'm using my food mill, I wash them, remove any bad spots, and that's it- the machine does the rest.)
  • Sauté the onions and garlic in the olive oil in a large pot. Add the tomatoes, pepper, sugar, and salt. Bring to a simmer and allow to reduce by about one-half. If you are using very juicy tomatoes, this can take 3-5 hours.
  • The most important part of homemade tomato sauce is the tasting! Tomatoes greatly differ from variety to variety, so you must taste as you go.
  • In order to keep the ratios of high acid to low acid foods at a safe level in this recipe, you cannot increase the amount of onions or garlic you use, but you CAN increase the herbs, sugar, or salt.
  • Once the sauce has reduced by half and the flavor is where you want it to be, add 1 tablespoon of lemon juice to each pint jar and 2 tablespoons of lemon juice to each quart jar.
  • Ladle the sauce into the jars, leaving 1/2-inch headspace.
  • Process pints for 35 minutes and quarts for 40 minutes in a hot water bath canner. (Keep in mind that you may have to adjust your processing time according to your altitude.)
  • REMEMBER: Don't start timing until the water has returned to a boil with the filled jars inside.
  • Store your sealed jars in a cool, dark place. I use this all-purpose sauce in all sorts of recipes- add basil and oregano to give it an Italian twist, or add chili powder and cumin for Mexican food.
