SOUTHERN-STYLE COLLARD GREENS RECIPE
These Southern-style collard greens are guaranteed to bring some comforting home cooking to your dinner table.

Steps:
- Add the pork, onion, salt, garlic powder, black pepper, and red pepper flakes to a large pot with 1 quart (4 cups) water. Cover, bring to a boil, reduce to a simmer, and cook for 30 minutes to create the pork broth. (You should be able to wash and prepare the collard greens while you make the broth.)
- Add the cut collard greens to the pork broth, cover, and continue to simmer until nice and silky, anywhere from 45 minutes to 2 hours (or more).
- Remove the smoked pork neck bones, pick the meat off the bones into small pieces, and return the meat to the collard greens, discarding the bones. Add the vinegar, taste, and adjust the seasonings as you see fit. Serve.

Steps:
- Pull the leaf portions of the collard, mustard, and turnip greens away from the tough stems, and discard the stems. Gently wash the greens in warm water to remove all soil and sand. Partially fill a clean sink with warm water, and stir in 3 tablespoons of salt and 2 cups of chicken broth; allow greens to soak in the mixture for 10 minutes. Scoop up the greens and allow to drain in a colander; discard used chicken broth. Do not rinse the greens.
- Pour the remaining 2 cups of chicken broth into a large pot, and mix in the greens. Stir in vegetable oil, garlic, bacon bits, and sugar, and season with salt and black pepper. Bring to a boil, reduce heat to a simmer, and cook until the greens are tender, stirring occasionally, 45 minutes to 1 hour.

GLORIOUS CANNED GREENS
don't have time to slave over the stove for a quick healthy vegetbale side dish that happens to come out of a can; glory has a healthier version of their now famous canned goods. i personally don't like too many canned food veggies, however i've cooked these a few times and they were great, when i was in a pinch.

- 1. put oil in a heated pan. fry up turkey bacon or turkey sausage. add chopped onion and chopped garlic to bacon. sautee for 2 minutes or so. add greens and simmer for a few minutes...these are quick and easy...these greens are healthy and tasty!!!

- Fill a large 10 quart pot with water about 2/3rds full. Add the seasoned salt, pepper, onion and garlic powder, red crushed pepper, smoked paprika, and smoked ham hocks or smoked turkey tails. Bring the water to a boil and cook the meat with seasonings for 45 minutes.
- Using tongs, remove the meat from the water. Use a fork to the hold the meat and use a knife to slice the meat with your other hand. Once most of the meat has been cut, add the meat, including the bone, back into the water. Add the greens to the seasoned water and cook for, at least 4 hours on a medium boil. If there is too much water in the pot to where it is overflowing, carefully remove some of the excess water and cover with lid and continue to cook for 4 hours or longer (preferably).
