4 cups clamato ((or tomato juice))
6 ounces vodka
2 ounces fresh lemon juice
1 ounce fresh lime juice
1 ½ tablespoons prepared horseradish
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce ((your favorite brand))
½ teaspoon garlic powder
½ teaspoon celery salt
½ teaspoon smoked paprika
½ teaspoon cayenne pepper
½ teaspoon coarse ground black pepper

Steps:

  • Set out a large 6-8 cup pitcher. Pour in the clamato, vodka, lemon juice, and lime juice. Stir.
  • Then measure and add all remaining ingredients. Stir well.
  • Cover and refrigerate until ready to serve. Then fill glasses with ice and pour in the Bloody Mary Mix.
  • Garnish with celery stalks, pickles, olives, pickles or raw vegetables, citrus wedges, grilled shrimp, bacon, grilled or raw chiles, or really anything you like!

4 dried chile de arbol peppers
20 pounds tomatoes, chopped
2 pounds onions, chopped
4 green bell peppers, chopped
4 carrots, chopped
1 jalapeno pepper, chopped
4 cloves garlic, minced
2 (8 ounce) cans tomato sauce
1 cup vinegar
6 tablespoons prepared horseradish
4 teaspoons kosher salt
4 teaspoons Worcestershire sauce
2 teaspoons freshly ground black pepper
5 bay leaves
1 teaspoon celery seed
1 teaspoon seafood seasoning (such as Old Bay®)
1 teaspoon hot pepper sauce (such as Tabasco®)
1 cup lemon juice
8 (1 quart) sterilized canning jars with lids and rings

Steps:

  • Grind chile de arbol peppers into a powder with a mortar and pestle.
  • Process tomatoes, onions, green bell peppers, carrots, jalapeno pepper, and garlic in a food processor, working in batches, until vegetables are finely chopped. Transfer vegetables to a large pot.
  • Stir tomato sauce, vinegar, horseradish, ground chile de arbol peppers, kosher salt, Worcestershire sauce, black pepper, bay leaves, celery seed, seafood seasoning, and hot pepper sauce into the vegetables. Bring mixture to a boil, reduce heat, and simmer until vegetables are tender, about 30 minutes, stirring regularly. Remove bay leaves.
  • Process the mixture through a vegetable juicer, working in batches if necessary. Strain excess pulp from the juice if desired. Pour juice into a large pot, set over medium heat, and heat until juice is nearly boiling. Stir in lemon juice.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack the bloody mary mix into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot or canning kettle and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 40 minutes.
  • Remove the jars from the pot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

20 large vine-ripe tomatoes, cored and cut, in wedges (no need to peel)
2 large yellow onions, peeled and minced
2 garlic cloves, peeled and crushed
3 celery ribs, diced
1 medium bell peppers, green or 1 medium red pepper, cored, seeded and minced
1/4 cup finely grated horseradish or 1/4 cup prepared horseradish
1 1/2 teaspoons crushed dried hot red chili peppers
1 1/2 teaspoons liquid hot red pepper seasoning
1/4 cup granulated sugar
1/3 cup lemon juice
1 tablespoon salt

Steps:

  • Simmer all ingredients, covered, in a large heavy enamel or stainless steel kettle over moderate heat about 40 minutes, stirring occasionally, until tomatoes have cooked down to juice. Put mixture through a food mill or press through a fine sieve, forcing out as much juice as possible.
  • Return strained juice to kettle and bring to a boil. Pour into 4 (1-quart) hot canning jars, filling each to within 1 inch of top. Wipe rims and seal. Process for 30 minutes at 10 pounds of pressure.

This is an old family recipe. Great when you have lots of tomatoes to can! Very yummy with or without alcohol!

30 medium tomatoes, peeled, seeded, and quartered
2 1/2 cups green peppers, chopped
1 3/4 cups carrots, diced
1 cup celery, diced
1 small onion, diced
2 -3 garlic cloves, minced
1/4 cup parsley, minced
1 bay leaf
1/4 cup sugar
1/4 cup lemon juice
1 1/2 tablespoons salt
1 tablespoon Worcestershire sauce
1/2 tablespoon Tabasco sauce (to taste)

Steps:

  • Cook tomatoes, celery, carrots, onion, green peppers, garlic, bay leaf, and parsley in a large pot until mushy, approximately 30-45 minutes.
  • Remove the bay leaf.
  • Working in batches, place the vegetable mixture into a blender and puree.
  • Using a spatula, press each pureed batch through a fine sieve to remove any extra seeds.
  • Place back in a large pot and add the sugar, lemon juice, worcestershire sauce, salt, and tobasco (1/2 T. tobasco is very mild, so you may wish to add more now or add when mixing your drink).
  • Heat this to a boil.
  • Pour into clean quart jars and add prepared lids.
  • Process in a boiling water canner for 40 minutes.

1/4 cup pickle juice
1 lemon (juiced)
1 lime (juiced)

4 ounces Bloody Mary Mix
2 ounces vodka
lemon and lime slice
gherkin pickles, (garnish)
cocktail shrimp, (garnish)
1 teaspoon celery salt, (for rim (optional))

Steps:

  • Add all ingredients to a pitcher.
  • Stir well.
  • Add celery salt to a plate. Rim a glass with a slice of lemon, then dip the rim into the celery salt and spin to coat.
  • Fill glass with ice.
  • Pour vodka and Bloody Mary mix into the glass. Use a spoon to stir.
  • Garnish with a lemon slice, lime slice, pickle, and cocktail shrimp. Enjoy!

  • Prepare 6 quart jars, lids, and rings. Sterilize the jars and keep them in the hot water till its time for processing. Make sure to fill your water bath canner and get the water to a simmer.
  • In a large stainless steel or enameled dutch oven cook tomatoes, green peppers, carrots, celery, onion, garlic, bay leaf, parsley, and hot peppers approximately 30-45 minutes or until veggies are breaking down. Remove bay leaf.
  • If you want to remove the seeds and any additional skin of the tomatoes you can pour in batches through a sieve or fine mesh strainer.
  • On a dishtowel place your hot jars and using your funnel in each jar ladle the mixture into the jars leaving 1/2” headspace. Remove air bubbles and refill to the proper headspace if necessary.

  • Cut washed tomatoes in large chunks and place in a large stock pot. NOTE - Skins and seeds are fine to add in the mixture if you will be using a tomato strainer/sieve. Otherwise you will want to peel the tomatoes by placing them in boiling water for 1 minute and then immediately removing them to an ice water bath. Once cool enough to handle, remove the skins and seeds.
  • Add the beets, carrots, celery, garlic, parsley, jalapeños and cherry bomb peppers into the pot with the tomatoes. Bring the pot to a boil and reduce and simmer for at least 30 minutes, stirring occasionally so that the tomatoes do not stick to the bottom of the pot.
  • Once the vegetables are tender, run the mixture through a tomato strainer with the tomato screen attachment. If you do not have a strainer, use an immersion blender, food processor, or high speed blender to puree the liquid. *Be sure to work in batches if using a food process or blender and do not fill the container more than half full.
  • Return the liquid back into a large stockpot and add the remaining ingredients. Bring to a boil, and let simmer for 10 minutes.
