CANNED BASIL & GARLIC WAX BEANS
I love waxed yellow beans and my husband grows them for me in our garden. I decided to change up my recipe and this is what I came up with. Simple but delicious! Happy Harvest!

Steps:
- 1. Place 2 cloves and basil to each canning jar. Pack each jar with beans and fill with hot water to 1/4 of an inch from the top. Place hot lids and rings on.
- 2. Process in your canner for 25 minutes at 10 pounds of pressure. Allow canner to cool and place jars on 2 thick towels out of a draft.

Steps:
- Blanch fava beans in a pot of boiling well-salted water 1 minute, then transfer with a slotted spoon to an ice bath to stop cooking. Transfer favas with slotted spoon to a small bowl.
- Cook Romano beans in same pot of boiling water, stirring occasionally, until just tender, about 5 minutes, then transfer to ice bath to stop cooking. Drain well and transfer to a bowl.
- Cook green beans in same pot until just tender, 6 to 7 minutes, then transfer to ice bath. Add to Romano beans.
- Gently peel skins from fava beans (it's not necessary to peel edamame, if using), then add to other beans.
- Cut basil into very thin shreds.
- Cook garlic in oil with a rounded 1/4 teaspoon each of salt and pepper in a 12-inch heavy skillet over medium heat, stirring occasionally, 1 minute. Add beans, water, and zest and cook, stirring occasionally, until heated through. Stir in basil and 2 1/2 teaspoons lemon juice and remove from heat. Season with salt and additional lemon juice if desired. Serve beans warm or at room temperature.

- Place beans in a large Dutch oven and cover with water. Bring to a boil; cover and cook for 8-10 minutes or until crisp-tender. Drain and keep warm., In the same pan, melt butter. Add garlic; cook for 1 minute or until golden brown. Add basil and beans; toss to coat.

GARLIC CANNED GREEN BEANS
I love green beans and garlic, so I decided to add garlic cloves to my beans as I was canning them. This is much healthier for you than what you get in the grocery store and tastes better, too.

Steps:
- Wash and break green beans, then wash and rinse again.
- Put into large pot, cover with water and bring to boil. Let boil 5-10 minutes.
- Meanwhile, sterilize jars in boiling water bath and sterilize seals.
- Place 1 garlic clove into jars.
- Ladle green beans into hot jars, then fill jars with hot bean water, making sure to leave 1/4 inch headspace.
- Add 1/4 tsp salt to each pint.
- Wipe rims of jars, place hot seals on jars and tighten bands.
- Place in pressure canner and process 20 minutes at 10 lbs pressure.

- Place beans in a saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. , Place beans in a serving dish. Add the basil, butter, salt and pepper. Toss until butter is melted and beans are evenly coated. Serve immediately.
