6 tablespoons popcorn kernels
1/4 cup peanut oil
1/2 cup sugar
Cooking spray
1 cup candy corn
1/2 cup salted roasted peanuts
4 cups mini marshmallows (about 2/3 of a 10-ounce bag)
4 tablespoons unsalted butter

Steps:

  • Heat a large pot over medium-high heat; add the popcorn kernels and peanut oil. When the oil starts to sizzle, sprinkle the sugar over the kernels. Cover with a tight-fitting lid and shake the pot until the popping slows down, about 8 minutes. Remove from the heat and set aside to cool. Spray a large bowl with cooking spray and add the popcorn, candy corn and peanuts.
  • Combine the marshmallows and butter in a large pot over medium-high heat. Cook, stirring, until melted and smooth, about 5 minutes.
  • Pour the melted marshmallow mixture over the popcorn mixture and gently toss to coat.
  • Coat your hands with cooking spray, then shape the popcorn into 3-inch balls. Let cool.

Cane syrup, a caramelized, concentrated version of pure cane juice, is one of the basic flavors of southern Louisiana, where about half the sugar cane in the United States is grown. Here, use it to give popcorn balls a deep, buttery caramel taste, perfect for a Halloween treat. Make sure to butter your hands well before shaping the mixture into balls. And if you live outside a region where you can get cane syrup, try Lyle's Golden Syrup, a British sweetener often found in supermarket baking aisles.

Number Of Ingredients 8

1 cup sugar
1 1/3 cups cane syrup, preferably Steen's (see note)
2 tablespoons white vinegar
1 teaspoon salt
3 to 4 quarts popped corn, preferably not microwave popcorn, lightly salted (see note)
3/4 cup roasted salted peanuts (optional)
2 tablespoons butter, more for hands
1/4 teaspoon baking soda.

Steps:

  • In a saucepan fitted with a candy thermometer, melt sugar, syrup, 2/3 cup water, vinegar and salt over medium heat. Cook, stirring occasionally, until mixture reaches 260 degrees, 5 to 10 minutes. Watch carefully so mixture does not boil over.
  • In a very large bowl, combine popcorn and peanuts, if using. Cover a work surface with waxed or parchment paper. When syrup mixture is ready, turn off heat and stir in butter and baking soda; it will foam up.
  • Pour about 2/3 of syrup over popcorn and set remainder over very low heat. Mix popcorn well with wooden spoon. Working quickly, butter hands and form mixture into balls, setting them on prepared surface to cool; this is best done by more than one person, so syrup does not have time to harden. If mixture seems dry or isn't holding together, stir in remaining syrup.
  • Cool and serve, or wrap individually in waxed paper and store in an airtight container.

1 cup light corn syrup
½ cup butter
¼ cup water
salt to taste
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
5 quarts popped popcorn

Steps:

  • In a saucepan over medium heat, combine the sugar, corn syrup, butter and water. Stir and heat to hard-crack stage or 300 degrees F (150 degrees C). Remove from heat, add vanilla or vinegar; mix well.
  • Pour slowly over popped popcorn while stirring. Wait 5 minutes and shape into 3 inch round balls.

3 quarts (12 cups) popped popcorn
1 cup granulated sugar
1/2 cup Karo® Light OR Dark Corn Syrup
1/4 cup butter or margarine
1/2 teaspoon salt
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
3 tablespoons festive sprinkles, optional

Steps:

  • Spray large roasting pan sprayed lightly with nonstick cooking spray; add popcorn and place in 300ºF oven until warm.
  • Combine sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to boil over medium heat. Continue stirring and boil 2 minutes.
  • Remove syrup mixture from heat; stir in vanilla and baking soda.
  • Pour syrup mixture over warm popcorn stirring to coat well. Add in sprinkles and mix to combine.
  • Once mixture has cooled slightly and is able to be touched, spray your hands with nonstick cooking spray. Working quickly to shape twelve 3-inch popcorn balls.
  • Cool completely. Wrap individually in plastic wrap.

4 quarts popped popcorn
2 teaspoons water
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup light corn syrup
1/4 cup butter
2 cups sugar
24 miniature candy canes

Steps:

  • Place popcorn in a large greased bowl or roasting pan; set aside. In a small bowl, combine the water, baking soda and vanilla; set aside. , In a heavy saucepan, combine corn syrup and butter; heat over medium heat until butter is melted. Add sugar; cook and stir until sugar is dissolved and mixture comes to a boil. Cook and stir until a candy thermometer reaches 230° (thread stage), about 2 minutes., Remove from heat. Stir in vanilla mixture (mixture will foam) until blended. Immediately pour over popcorn, stirring to coat evenly. Cool for about 5 minutes, stirring several times. , When cool enough to handle, firmly shape with buttered hands into 2-in. balls. Insert straight end of candy cane in the center of each ball.

12 peppermint candy canes, crushed

Steps:

  • Pop popcorn in an air popper according to manufacturer's directions; transfer to a bowl and remove any unpopped kernels.
  • Place a sheet of aluminum foil on a work surface and spray with cooking spray.
  • Melt butter in a saucepan over medium-high heat. Add marshmallows to melted butter and stir constantly until mixture is smooth; remove from heat. 10 oz. bag mini marshmallows (6 cups)
5 Tbsp. unsalted butter
1/4 tsp. kosher salt
3/4 tsp. pure vanilla extract
Nonstick spray

Steps:

  • Go through popcorn and remove any unpopped kernels. Set aside. Lay a rectangle of parchment on the counter.
  • Heat a large pot (big enough for the popcorn) over medium low heat. Add butter and marshmallows. Stir until melted.
  • Remove from heat and stir in kosher salt and vanilla extract.
  • Add popcorn to pot and stir until completely coated. Allow to cool for 3 minutes.
  • Spray hands well with nonstick spray. Measure out a cup of the popcorn mixture. Roll into a ball.
  • Set on prepared parchment. Repeat until you have used all the popcorn. Store in an airtight container.
