½ cup coarsely chopped pecans
2 tablespoons white sugar
½ teaspoon sea salt, or to taste
¾ cup white sugar
¼ cup real maple syrup
2 eggs
1 teaspoon vanilla extract
1 drop maple-flavored extract, or to taste
3 cups half-and-half
1 pinch coarse sea salt, or to taste

Steps:

  • Place pecans into a heavy saucepan over medium heat and toast the nuts, stirring constantly, until fragrant, 1 to 2 minutes.
  • Sprinkle 2 tablespoons sugar over pecans and stir constantly until the sugar melts to a light brown syrup and coats the pecans. Immediately pull the pan off the heat; sprinkle with 1/2 teaspoon sea salt.
  • Turn hot pecans out onto a piece of parchment paper and cool thoroughly; break apart any large clumps. Set candied pecans aside.
  • Whisk 3/4 cup sugar, maple syrup, eggs, vanilla extract, and maple flavoring in a large bowl until smooth. Slowly whisk in half-and-half.
  • Pour mixture into an ice cream maker and freeze according to manufacturer's instructions. Mix the candied pecans into the softly-frozen ice cream. Sprinkle servings with a pinch of coarsely ground sea salt.

4 large ripe peaches (2 pounds total)
1/2 stick (1/4 cup) unsalted butter
6 tablespoons packed light brown sugar
1/3 cup dark rum
1/4 teaspoon cinnamon
1/8 teaspoon salt
Cane syrup pecan ice cream
Garnish: chopped toasted pecans

Steps:

  • Have ready a large bowl of ice and cold water. Bring a 6-quart pot three-fourths full of water to a boil, then gently drop peaches into water and cook 15 seconds. Transfer with a slotted spoon to ice water and cool completely to stop cooking. Remove skin with a paring knife and cut peaches into 1/2-inch-thick wedges, discarding pits.
  • Melt butter in a 10- to 12-inch heavy skillet over moderate heat, then stir in brown sugar, rum, cinnamon, and salt until smooth. Add peaches and simmer, stirring and turning peaches over occasionally, until tender, 3 to 5 minutes. Cool until warm and serve over scoops of ice cream.

Buttery Cane Syrup Ice Cream with Pecans image

2 cups chopped pecans
3 tablespoons unsalted butter, melted
½ teaspoon kosher salt, divided
1 cup cane syrup
4 large eggs
3 cups heavy whipping cream
1 cup whole milk
Cane syrup and pecans, to serve

Steps:

  • Preheat oven to 350°.
  • Place pecans on a baking sheet. Bake until toasted, about 8 minutes, stirring occasionally. Remove from oven. Stir in butter and ¼ teaspoon salt. Let cool completely.
  • In a medium bowl, whisk together cane syrup and eggs.
  • In a large heavy saucepan, whisk together cream, milk, and remaining ¼ teaspoon salt. Bring to a boil over medium-high heat, stirring constantly. Remove from heat.
  • Whisk 1 cup hot cream mixture into egg mixture. Whisk egg mixture into remaining cream mixture in pan. Cook over medium heat until mixture is thickened and coats the back of a spoon, about 8 minutes. Pour into a bowl; place bowl in a larger bowl of ice. Let stand until cool, stirring occasionally.
  • Remove bowl from ice, and refrigerate egg mixture until very cold, about 5 hours.
  • Process in an ice cream freezer according to manufacturer's instructions. Stir in half of pecans. Spoon into a chilled, freezer-proof bowl. Freeze until firm. Serve with pecans and cane syrup.

This sweet, rich ice cream is best when made with real maple syrup and high-quality pecans.

dozen ice cubes cold water 1 cup heavy cream 2 cups whole milk 2 tablespoons raw cane sugar 6 egg yolks ⅔ cup maple syrup, Grade B or darker ¼ teaspoon sea salt 1 cup chopped pecans

1 cup heavy cream
2 cups whole milk
2 tablespoons raw cane sugar
6 egg yolks
⅔ cup maple syrup, Grade B or darker
¼ teaspoon sea salt

Steps:

  • Fill a large bowl about ⅓ of the way with cold water and add ice cubes. Nest a smaller metal bowl (at least 2 quarts in size) in the ice bath. Pour heavy cream into nested metal bowl. Place a fine mesh strainer over cream. Set aside. Heat milk and sugar in a medium saucepan over medium heat until steam begins to rise from the surface, about 3 to 5 minutes. In a separate bowl, beat egg yolks until smooth. When milk mixture is steaming, slowly pour ¼ cup of milk into the yolk while whisking constantly. Pour egg mixture into saucepan with rest of the milk. Cook over medium heat stirring constantly with a wooden spoon until mixture thickens and coats back of the spoon, about 3 to 5 minutes. To test, run your finger on the back of a spoon coated with the milk. It should leave a clean path. Pour the thickened milk mixture through the fine mesh strainer. Add maple syrup and sea salt. Whisk to combine until custard is cooled by the ice bath. Remove and cover bowl. Chill in the fridge until completely cooled, at least 4 hours. Freeze the mixture in an ice cream maker according to the manufacturer's instructions. When ice cream is just about done, add pecans and stir to combine. Transfer to a large container and place a layer of plastic wrap directly on surface of ice cream to prevent ice crystal from forming. Cover and freeze until firm, at least 4 hours.

¾ cup pecans (chopped)
1 tablespoon butter
1 tablespoon honey
¾ cup whole milk
¾ cup heavy cream
2 tablespoons pure maple syrup

Steps:

  • Using a frying pan, melt the butter on medium-low heat and then add the chopped pecans. Add the honey and cook until the nuts are very slightly browned, 3 - 5 minutes. Be very careful not to overcook the nuts because they can go from perfect to burnt in less than a minute. (Note: these nuts are also a delicious replacement for the plain pecans used in this chocolate Powerball recipe...just add two teaspoons of water instead of using the peanut butter.)
  • While the nuts are cooking stir together all three ingredients for the ice cream. Turn on your ice cream maker and then pour the milk mixture into the machine.
  • When the ice cream is almost all the way thickened add the nuts...serve immediately and enjoy!

Steps:

  • Heat the oven to 350 degrees F (80 degrees C /Gas 4). Mix the icing sugar with the pecans on a baking tray and sprinkle with a little water to make a thick-ish paste.

Steps:

  • Whisk together cane syrup, sugar, cornstarch, and a pinch of salt in a large bowl, then add eggs, whisking until combined. Bring milk and cream just to a boil in a 4-quart heavy saucepan over moderately high heat, stirring occasionally, then add egg mixture in a stream, whisking constantly. Transfer custard to saucepan.
  • Cook custard over moderately low heat, stirring constantly with a wooden spoon, until thick enough to coat back of spoon and registers 170°F on thermometer, 5 to 8 minutes (custard may look slightly curdled; do not let boil).
  • Immediately pour custard through a fine-mesh sieve into a bowl, then stir in vanilla and cool, stirring occasionally. Chill custard, its surface covered with wax paper, until cold, at least 3 hours.
  • Freeze half of custard in ice cream maker until almost firm, then stir together ice cream and half of pecans in a large bowl. Transfer to an airtight container and put in freezer to harden. Repeat with remaining custard and pecans.
