1/2 cup sugar
3/4 cup butter, softened
1 tablespoon milk
1 teaspoon vanilla
2 eggs
2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
2 cups rolled oats
1 (13.3-oz.) Snickers™ fun-size candy bars, unwrapped, each cut into 8 pieces

Steps:

  • Heat oven to 350°F. Spray cookie sheets with nonstick cooking spray. In large bowl, combine brown sugar, sugar and butter; beat until light and fluffy. Add milk, vanilla and eggs; blend well. Add flour and baking soda; mix well. Stir in oats until well combined. Stir candy pieces into dough.
  • Drop dough by heaping tablespoonfuls 2 inches apart onto sprayed cookie sheets.
  • Bake at 350°F. for 10 to 12 minutes or until light golden brown. Cool 2 minutes; remove from cookie sheets.

These are the BEST Oatmeal Cookie Bars you'll ever bake! Soft, chewy, and loaded with rolled oats and chocolate, this is a great recipe the whole family will love! Super easy and no mixer required!

2 sticks (8 ounces, 1 cup) unsalted butter, melted
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs plus 1 egg yolk, at room temperature
2 tablespoons milk
1 tablespoon vanilla extract
1 and 2/3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups rolled oats
1 and 1/4 cups chopped dark chocolate OR your mix-in of choice (see post for ideas!)
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
  • In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
  • Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
  • Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
  • Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.
  • Cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup softened unsalted butter
2 cups packed light brown sugar
2 large eggs
2 teaspoons vanilla
3 cups old fashioned oats
1 cup walnuts
1 (14 ounce) can sweetened condensed milk
2 cups semi-sweet chocolate chips
2 tablespoons unsalted butter
1/4 teaspoon salt
1 teaspoon vanilla
3/4 cup coarsely chopped walnuts

Steps:

  • Center rack in the oven and preheat the oven to 350 degrees. Butter a 9X13 inch pan and place the pan on a baking sheet.
  • Whisk together the flour, baking soda, salt and cinnamon.
  • Using an electric mixer, beat the butter on medium speed until it is soft and creamy. Add the brown sugar and beat for 2 minutes, then add the eggs one at a time, beating for a minute after each egg goes inches Beat in the vanilla. The mixture should be light and fluffy. Reduce the mixer speed to low and add the dry ingredients, mixing just until they disappear. Still on low speed, stir in the oats and 1 cup of the chopped walnuts.
  • Set aside 1 1/2 to 2 cups of the mixture, then turn the remaining dough into the prepared 9X13 pan. Set aside while you prepare the next layer.
  • Set a heat proof bowl over a saucepan of simmering water. Put the condensed milk, chocolate chips, butter and salt in the bowl and stir occasionally until the milk is warm and stir in the vanilla and 3/4 cup walnuts.
  • Pour the warm chocolate over the oatmeal crust, then scatter the remaining oatmeal mixture over the top. Don't try to spread the oatmeal, and don't worry about getting the topping even. It will create a a pretty open lacy pattern as it bakes.
  • Bake for 25 to 30 minutes, or until the topping is golden brown and the chocolate layer is dull and starting to come away from the sides of the pan. Transfer the baking pan to a cooling rack for about 2 hours.
  • Run a blunt knife between the edges of the cookie and the pan and carefully turn the cookie out onto a rack. Turn right side up, then refrigerate for at least 1 hour before cutting. ( Ok so there was no way my fam could wait that long. I was able to cool it for 2 hours but that was it. It was fabulous a bit warm and also later when it was refrigerated!).

If you like toll house cookies, but wish they were a little softer, these are the ones for you! My daughter loved the Reese's Cups quartered into them. For folks with orthodontia or sensitive teeth, these are perfect!

1 cup salted butter
3/4 cup dark brown sugar
3/4 cup white sugar
2 eggs
2 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon salt
2 1/2 cups flour
6 ounces roughly chopped candy bars (use amount and kind you prefer)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cream together the butter and the sugars until fluffy, beat in the eggs and vanilla. Add the flour with the baking powder and salt mixed inches Stir until blended. Fold in gently the chopped candy bars. If desired, add a cup of chopped almonds, walnuts, pecans or other nut.
  • 3. Drop on a cookie sheet in the size you wish and bake until edges are browned nicely in the middle of the oven (ten minutes or less). Transfer to a cooling rack. From here they disappeared so I can't tell you shelf life but assume these will freeze nicely and ship well.

These candy bar cookies contain 'my five,' which are cookie, pretzel, caramel, peanuts, and chocolate. Lots of steps, but none of them are hard. I wouldn't plan on whipping these out in 1:30 hours, but I find I can do one step at a time while doing something else, like making dinner and they are done by the end of the night. Works best if you can let it cool slightly between layers.

2 (16.5 ounce) rolls refrigerated peanut butter cookie dough
1 cup peanut butter, divided
1 cup crushed pretzels
1 cup chopped salted peanuts, divided
1 (14 ounce) can sweetened condensed milk
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (12 ounce) bag chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Mix 1 tube of cookie dough, 1/3 cup peanut butter, and pretzels together in a bowl. Press into an even layer in the prepared baking dish.
  • Bake in the preheated oven until just golden and set, 12 to 15 minutes. Allow to cool slightly.
  • Mix remaining tube of cookie dough, remaining peanut butter, and 1/3 cup peanuts together in a bowl. Press in an even layer onto a piece of parchment paper the size of your baking dish. Refrigerate until firm, about 30 minutes.

  • Combine condensed milk and caramels in a saucepan over medium heat. Cook, stirring frequently until smooth, about 5 minutes. Pour over the cookie dough crust in the baking dish and spread in an even layer. Top with the refrigerated cookie dough mixture and peel off the parchment paper.
  • Bake in the preheated oven until golden brown, 25 to 30 minutes. Allow to cool slightly.
  • Pour chocolate chips into a microwave-safe bowl; heat in the microwave until smooth, about 1 minute. Stir in remaining 2/3 cup peanuts and spread over cookie bars. Refrigerate until set, at least 20 minutes.
