CHOCOLATE CANDY BAR CAKE

Chocolate Candy Bar Cake image

I made this once for a family gathering and now everyone insists that it be at every gathering! It's so easy; you use a box cake mix! For chopping the chocolate bars, I put them in the freezer, then hit them with a hammer while still in the wrapper

  • Place your chocolate in a microwave-safe bowl and microwave for 30 seconds. Stir well. Return chocolate to microwave and heat for another 15 seconds and stir again. Continue heating chocolate for 15 seconds, stirring after each, until chocolate is completely melted and smooth.
  • Allow chocolate to cool for at least 10-15 minutes, stirring occasionally. You want chocolate to cool so that it is not hot to the touch, otherwise it will melt your butter and sugar and the frosting will not turn out.
  • While the chocolate is cooling, place butter in a separate bowl and use a stand mixer or electric mixer to beat until creamy.

  • Preheat oven to 350°F. Spray two 9-inch round cake pans with non-stick cooking spray. Line with pre-cut parchment paper (trace shape of pan onto paper and trim to fit in pan). Spray more cooking spray. Set aside.
  • Prepare cake mix according to package instructions. Fill prepared pans equally with cake batter. Bake according to package instructions. (I used Pillsbury and baked the cakes for 28-30 minutes.) Let them cool. Then cover and put in freezer for 1 hour. You can skip this step, but the cake is much easier to handle when it is chilled and firm.
  • Meanwhile, scoop the chocolate fudge frosting into a large bowl. Add the butter. With an electric mixer, beat on medium for a minute. Turn mixer to low and gradually add the sugar and cream. Beat for 2 minutes on medium. If it's too thick, add a little more cream. Stir to combine.
  • Place chilled cake on cake board or large plate. Using a large bread knife, slice horizontally to remove the dome shape of cake. You have a nice flat surface. Frost top of cake. Level second cake and place on top. Frost all over top and sides of cakes.

  • In the bowl of an electric mixer, beat all of the ingredients for the cake together on low speed. Increase to medium speed and beat for 4 minutes, scraping the bowl as needed. Divide the batter evenly in the prepared pans and bake for 23-27 minutes (for 9 inch pans) or until a toothpick inserted in the center comes out clean. Allow the cakes to cool for 10 minutes before running a knife along the edges and flipping them out of the pans and onto a cooling rack.
  • Meanwhile, beat together the cream cheese, sugar, and powdered sugar until smooth. Fold in the whipped topping followed by the candy bars.
  • To frost the cake, place one layer on a flat surface. Spread the frosting over the cake and along the edges. Place the second layer on top and spread the frosting on the top and sides, blending with the bottom layer. Place candy bars pieces on top to decorate, either piled in the center or around the top and sides. Refrigerate until ready to serve.
