4 Golden Delicious apples
Nonstick cooking spray
1 1/4 cups sugar
1/4 cup light corn syrup
1/2 teaspoon orange gel food coloring
2 ounces bittersweet chocolate

Steps:

  • Insert lollipop sticks one-third of the way into each apple. Line a baking sheet with parchment paper and coat the parchment with cooking spray.
  • Combine the sugar, corn syrup and 1/4 cup water in a small saucepan; bring to a boil. Reduce the heat to medium and add the orange food coloring. Continue cooking, swirling the pan but not stirring, until a candy thermometer registers 290 degrees F, about 10 minutes; remove from the heat. Working one at a time, dip the apples into the candy, then twirl over the pan to let the excess drip off, keeping your fingers out of the way of the hot candy coating. Transfer to the prepared baking sheet and let stand until set, about 5 minutes.
  • Put the chocolate in a large microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth. One at a time, hold each apple over the bowl and use a fork to drizzle with chocolate, turning to coat around the base of the apple. Return to the baking sheet; let set, about 5 more minutes.

1 11-to-15-pound whole smoked ham
3/4 cup apple butter
1/2 cup dijon mustard
1/4cup packed light brown sugar
1/4cup apple cider vinegar
1/4teaspoon ground cloves
8 small apples, halved

Steps:

  • Preheat the oven to 325 degrees F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat-side up, in a large roasting pan. Bake 1 hour, 30 minutes.
  • Make the glaze: Whisk the apple butter, mustard, brown sugar, vinegar and cloves in a bowl until smooth. After 1 hour, 30 minutes, brush the ham all over with some of the glaze and bake 20 more minutes. Add the apples to the pan, cut-side up, and bake, brushing the ham with more of the glaze every 20 minutes, until the ham is crisp and the apples are tender, 1 hour to 1 hour, 30 minutes. (Turn the apples cut-side down in the last 20 minutes.)
  • Transfer the ham to a cutting board and let rest 15 minutes before carving. Serve with the roasted apples.

1 spiral-sliced fully cooked bone-in ham (7 to 9 pounds)
1/2 cup packed brown sugar
1/2 cup unsweetened applesauce
1/2 cup unsweetened apple juice
1/4 cup maple syrup
1/4 cup molasses
1 tablespoon Dijon mustard
Dash ground ginger
Dash ground cinnamon

Steps:

  • Place ham on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2 hours., In a small saucepan, combine the remaining ingredients. Cook and stir over medium heat until heated through. Brush ham with some of the glaze; bake 30-60 minutes longer or until a thermometer reads 140°, brushing occasionally with remaining glaze.

20 -30 whole cloves
1/2 cup apple jelly
1/2 cup red cinnamon candies
1/4 cup lemon juice

Steps:

  • Preheat oven to 325 degrees.
  • Place ham in roasting dish and score with knife and stud with cloves.
  • Roast ham at 20 minutes per pound.
  • Meanwhile, in small saucepan combine jelly, candy and lemon juice. Cook over medium heat until candies are melted, stirring constantly.
  • During last 30 minutes of cooking time, baste frequently with jelly mixture.
  • Let ham stand 15 minutes before serving.
