CLASSIC CANDIED YAMS RECIPE
Candied yams are a classic Southern side dish, especially when it comes to Thanksgiving. Even though Mama makes the same sweet potato casserole every year, she won't be offended if you bring these candied yams once she tries them. Lightly spiced and oh-so-sweet, these candied yams will become a mainstay in your Thanksgiving recipe lineup. Cinnamon, nutmeg, and vanilla combine with sweet potatoes for the most comforting holiday dish you can serve. One of the best parts about this side dish is that it only has 20 minutes of hands-on time, and you can assemble the dish up to 3 days in advance. Make the recipe through step 3, store it covered in the refrigerator, then bake it Thanksgiving Day. With all the other dishes you have to worry about on Thanksgiving, these candied yams will be a breeze. We recommend serving them straight from the oven while the syrup is still hot.

Steps:
- Preheat oven to 350°F. Layer sweet potato slices in a lightly greased 13- x 9-inch baking dish.
- Melt butter in a small saucepan over medium. Add sugars, stirring until well combined. Stir in cream; cook, stirring often, just until mixture comes to a simmer, 5 to 7 minutes. Remove from heat; stir in vanilla extract, cinnamon, salt, and nutmeg.
- Pour sugar mixture evenly over sweet potatoes, and cover with lightly greased aluminum foil.
- Bake, covered, in preheated oven, about 40 minutes. Uncover and gently stir potato mixture. Bake, uncovered, until potatoes are tender, 25 to 30 more minutes. Transfer potatoes to a serving bowl with a slotted spoon; pour syrup over potatoes. Serve immediately.

My honey kept asking for candied yams with the OJ and marshmallows. I couldn't find a recipe, so I made one up. I must say it came out mighty fine!

- Preheat oven to 400 degrees F (200 degrees C).
- Roast whole yams in preheated oven until heated through but not quite tender, 35 to 40 minutes. Allow to cool.
- Reduce oven heat to 350 degrees F (175 degrees C).
- Melt butter in a large pot over medium heat. Stir brown sugar, orange juice, and nutmeg with the melted butter to dissolve the sugar completely; bring to a boil, reduce heat to low, and cook until the liquid thickens into a syrup, 10 to 15 minutes.
- Peel cooled yams. Cut yams into bite-size chunks; arrange in a single layer in a 13x9-inch baking dish. Drizzle syrup over the yams.
- Bake in the preheated oven, twice opening the oven to spoon syrup over the yams, until the chunks are fork-tender, about 35 minutes. Arrange marshmallows over the yams and continue baking until the marshmallows are puffy and browned, about 10 minutes more.

- Preheat oven to 400°
- Line a baking sheet with foil and place potatoes on top. Bake for 45-60 minutes or until soft.
- Cool the potatoes on a separate plate for about 10 minutes or until you can safely handle them. Peel and slice into ½ inch medallions.
- In a large, cast iron pan over medium heat, add the butter, sugar and spices stirring constantly until fully melted and combined, at least 2 minutes.
- Add the cooked potato medallions and carefully stir with a spatula until well coated in the sugar mixture, roughly 3 minutes. Turn off the heat but leave on the burner if you want it to continue to caramelize.

- Prep the yams. Arrange a rack in the middle of the oven and heat the oven to 350ºF. Peel and cut 3 large yams into 1-inch pieces.
- Partially cook the yams. Place the yams in a large saucepan or pot and cover with water by about 1 inch. Bring to a low boil over medium-high heat and simmer just until they can be pierced with a fork and starting to soften (they will not be fully cooked), about 10 minutes. Be careful not to overcook.
- Transfer to a baking dish. Using a slotted spoon, carefully transfer the yams into an 8x8-inch square baking dish (reserve the cooking water). Spread the yams out in an even layer.
- Combine the water, brown sugar, and vanilla. Transfer 3/4 cup warm reserved cooking water into a measuring cup or medium bowl. Add 1/2 cup packed dark brown sugar and stir to dissolve. Add 1/2 teaspoon vanilla extract and stir to combine.
