This is a simple and quick way to enjoy a Thanksgiving favorite! Canned yams or sweet potatoes may be used.

- Preheat oven to 400 degrees F (200 degrees C).
- Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
- Bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.

- 1. In a food processor or blender - add the yams and puree. In a large sauce pan or dutch oven, add the pumpkin, ginger, pureed yams, sugar, cinnamon, nutmeg and salt. Cook for 20 minutes. Stirring constantly.
- 2. Remove from burner and cool to luke - warm. In a bowl whisk eggs, cream and vanilla.
- 3. Whisk in the egg mixture to the pumpkin mixture, until well blended.
- 4. Preheat oven to 400 degree F. Now, pour the yam - pumpkin filling into the prepared warm pre - baked pie crust and baked for 10 minutes. Reduce oven temp to 300 and bake until pie is set around the edges and center is just a little jiggly... about 30 - 35 minutes or longer depending on oven. If crust begins to get too dark, cover the crust with foil.
- 5. Cool for at least 4 hours and serve alone or with a big dollop of whipped cream.

- Make the Pie Crust: Process ¾ cup flour, sugar and salt in a food processor until combined, about two 1-second pulses. - Sprinkle the vodka and ice water over the mixture. With a rubber spatula, use a folding motion to mix, pressing down on the dough until the dough is slightly tacky and sticks together. Flatten the dough into a 4-inch disk. Wrap in plastic wrap and refrigerate for at least 45 minutes or up to 2 days.
- Remove the dough from the refrigerator and roll it out on a generously floured work surface to a 12-inch circle. Roll the dough loosely around the rolling pin and unroll into pie plate, leaving at least 1-inch overhang on each side. Ease the dough into the plate by gently lifting the edge of dough with one hand while pressing into plate bottom with other hand. Refrigerate for 15 minutes.
- Trim the overhang to ½ inch beyond lip of pie plate. Fold overhang under itself; folded edge should be flush with edge of pie plate. Using thumb and forefinger, flute the edge of dough. Refrigerate the dough-lined plate for at least 2 hours.
