- Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.

Mix sugar with next 8 ingredients and mix well. Sprinkle over sweet potatoes. Pour orange juice and lemon juice over sweet potatoes. Cover with the sliced oranges. Bake in a preheated 350-degree oven for 45 minutes to 1 hour.

- Preheat oven to 350 degrees F (175 degrees C).
- Place whole sweet potatoes in a steamer over a couple of inches of boiling water, and cover. Cook until tender, about 30 minutes. Drain and cool.
- Peel, and slice sweet potatoes lengthwise into 1/2 inch slices. Place in a 9x13 inch baking dish.
- In a small saucepan over medium heat, melt butter, brown sugar, water and salt. When the sauce is bubbly and sugar is dissolved, pour over potatoes.
- Bake in preheated oven for 1 hour, occasionally basting the sweet potatoes with the brown sugar sauce.

A friend of our family use to make this dish when sweet potatoes are in season. I think its a traditional Canadian recipe. Our friend has a sister that lives in Toronto and gave her the recipe.

Steps:
- Boil the sweet potatoes in water until tender. Then drain and mash them.
- Add the butter, orange juice, honey, brandy, salt and the nutmeg.
- Place in a buttered casserole dish.
- Preheat the oven at 180C or 350°F.
- Combine the sugar, the butter and the walnuts. Sprinkle over the potato mixture.

- In 4-quart saucepan or Dutch oven, place potatoes; add enough water just to cover potatoes. Heat to boiling. Reduce heat to low; cover and simmer 20 to 25 minutes or just until potatoes are tender. Drain; rinse with cold water to cool slightly.
