CANDIED SWEET POTATOES - SOUTHERN TRADITIONAL
This is a great Southern-Traditional recipe that is great served with ham, pork, chicken or even Holiday meals. Very simple to prepare and so very good!

Steps:
- Melt butter in a large skillet over medium-low heat.
- While butter is melting, in a small bowl combine sugar, cinnamon, nutmeg and salt.
- Add sliced potatoes to melted butter and turn to coat.
- Sprinkle sugar mixture over potatoes, stir to coat.
- Cover skillet, reduce heat to low.
- Stirring occasionally, Cook for 50-60 minutes (depending on how thick you sliced your potatoes), or until potatoes are tender.

When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.

- In a large pot, boil sweet potatoes in their jackets in water to cover until fork-tender, 20 to 45 minutes depending upon their size. Drain and cool.
- Heat oven to 450 degrees. Peel potatoes and slice into 1/2-inch-thick rounds. Place in a 9-by-13-inch baking dish or 2-quart gratin dish, overlapping slices to fit in one layer.
- In a small saucepan, melt butter. Whisk in sugar and salt until smooth. Pour evenly over the potatoes. Bake until potatoes look shiny and glazed, 25 to 30 minutes. Serve hot or warm.

- In a small bowl, combine sugars. In a greased 5-qt. slow cooker, layer a third of the sweet potatoes; sprinkle with a third of the sugar mixture. Repeat layers twice. In a small bowl, combine the butter, vanilla and salt; drizzle over potatoes. Cover and cook on low for 5-6 hours or until sweet potatoes are tender., Using a slotted spoon, transfer potatoes to a serving dish; keep warm. Pour cooking juices into a small saucepan; bring to a boil. In a small bowl, combine cornstarch and water until smooth; stir into pan.
