Steps:
- In a medium skillet, combine the walnuts, maple syrup and salt. Cook over medium high heat, stirring constantly, until golden and sticky and the walnuts are completely coated and separated (about 3 to 4 minutes).
- Pour nuts onto a silpat or parchment lined pan and use a fork to separate them. Allow the nuts to cool and harden completely, (about 15 minutes). You can place the nuts in the fridge to firm them faster.
- Meanwhile, place chocolate in a medium bowl along with the coconut oil; place bowl over simmering water and stir gently until melted (or alternatively you can melt on medium in the microwave).
- Add maple syrup to the melted chocolate and stir until fully combined.
- Transfer the candied maple walnuts to a large bowl, and pour the melted chocolate over the nuts. Stir until thoroughly coated.
- Transfer onto lined baking pan. Using two forks, separate nuts so none stick together. Return the nuts to the refrigerator until chocolate has just about set, around 10 minutes.
- Place cocoa powder into a shallow bowl or Ziploc bag. Toss the walnuts in the cocoa until well coated and sift out excess powder in a strainer.
- Store in an airtight container in the fridge.

5 MINUTE CANDIED WALNUTS
Toss these caramelized walnuts into your salad, over popcorn, or straight into your mouth. Crunch. Crunch. I love this easy method of making the candied nuts where everything goes into the pan at once. Other methods I've tried left me with globs of candy on the nuts rather than a more even coating. It also roasts the nuts at the same time so you don't have to pre-toast them, then add them back to the pan to be coated, blah, blah. Who needs extra steps? It seriously takes about 5 minutes on the stove and 5 minutes to cool. P.S. This recipe can easily be doubled.

Steps:
- Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, 1/4 cup granulated sugar and 1 Tbsp butter.
- Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). When the sugar mixture starts melting, stir constantly until all sugar is melted and nuts are coated.
- Transfer immediately onto a sheet of parchment paper and separate the nuts right away. Using two spatulas will make this task go faster. You don't want to give the nuts a chance to turn into a wad of inseparable delicious goodness unless you are the only person who will be enjoying the wad ;). Seriously, move quickly from the time the nuts are coated until they are separated out on the parchment paper.
- Once the coating hardens (5-7 minutes), you can transfer them to a bowl and enjoy!

Steps:
- Get out a Silpat or a piece of parchment or wax paper.
- Preheat a non-stick pan over medium-high heat. It's important to preheat it first so that the maple syrup caramelizes properly.
- Add the walnuts, maple syrup, vanilla and 1/8 teaspoon salt to the pan.
- Stirring almost constantly, cook for 2-5 minutes or until the syrup has caramelized. There should be no liquid left in the pan. The maple syrup coating will seem soft but will harden as it cools.
- Spoon the walnuts evenly onto the Silpat and spread. Test one now (making sure that the maple coating isn't so hot that you burn your tongue!) and if it's not salty enough, add more salt. If you don't want the nuts to be clumped together after cooling, make sure to separate them now.
- These harden within about 20-30 minutes but let them cool for about 2 hours before placing them in an airtight container. When not kept in an airtight container, they start to get a little sweaty. Can be kept at room temperature for several weeks.

- Add pecans and walnuts to a bare (or parchment-lined) baking sheet (or more baking sheets if increasing batch size) and top with oil, coconut sugar, cinnamon, cayenne, nutmeg, salt, and half of the maple syrup (1 Tbsp as original recipe is written // adjust if altering batch size). Toss to coat.
- Bake for a total of 12-15 minutes, or until golden brown and fragrant, tossing/stirring once at the halfway point to ensure even cooking. Then remove from oven and immediately drizzle with remaining maple syrup (1 Tbsp as original recipe is written // adjust if altering batch size). I also like to sprinkle on a little more salt, cinnamon, and coconut sugar to coat, but this is optional.

- Preheat the oven to 325 F and line a baking sheet with parchment paper. In a small mixing bowl, whisk together the maple syrup, vanilla extract, 1/4 tsp sea salt, cinnamon and cayenne pepper. Add the nuts and stir to combine. Pour the mixture out onto the baking sheet, including all of the liquid, and spread them around. You’ll see a pool of maple syrup, and that’s ok.

- Combine all ingredients in a sauté pan, and toss with a spoon or spatula until the pecans are evenly coated and the spices have mostly dissolved into the maple syrup.
- Cook the mixture on medium heat until the maple syrup comes to a low simmer, stirring occasionally. (We’re looking for small, gentle bubbles here — not a vigorous boil.)
- Reduce heat to medium-low (or whatever temperature works on your stovetop to maintain a low simmer). Continue simmering the mixture for about 20-25 minutes — stirring often — until the liquid in the maple syrup has evaporated and its sugars have crystalized. The maple syrup will go through the following stages: (1) Thin and liquidy: It will simmer and bubble easily, and the pecans will be lightly coated. Stir every 1-2 minutes or so. (2) Thick and syrupy: The bubbles will start to get thicker and slower, and the pecans will start to stick together more. (3) Crystalized and grainy: Once the maple syrup has almost completely evaporated (there may still be some tiny bubbles on the bottom of your pan), you’ll notice that it starts to crystalize and look like microscopic little grains of sugar on the pecans. This is good — it means that they’re nearly ready to go! Once you notice that the maple syrup has just begun to crystalize, go ahead and cook the pecans for 1 more minute. Stir often, e
- Immediately pour the candied pecans out onto a flat surface (like a cookie sheet) covered with parchment paper. Use your spatula to break apart the clumps and spread the pecans out in an even layer. (You can also do this with your fingers, once the pecans have cooled a bit). Then let them cool completely until they reach room temperature.
