BROWN SUGAR BACON
Steps:
- Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
- Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
- Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.

Steps:
- Line a baking sheet with foil. (Use non-stick foil or spray the foil with cooking spray if you want to make your life a lot easier!).
- Preheat oven to 275°F.
- Put brown sugar on a plate. (I don't really measure the brown sugar.) Place a slice of bacon on the brown sugar, patting to help the brown sugar adhere to the bacon, coating both sides. Place on baking sheet. Repeat with rest of the pound of bacon. Sprinkle any remaining brown sugar over the bacon.
- Bake for 20 minutes. Carefully pour off grease. Bake for 10 more minutes. Pour off grease again. Check bacon every 5-7 minutes until browned to your desired crispness, pouring off grease as necessary.
- Let cool slightly and remove to a lightly buttered plate to cool completely. (If it you let it cool completely on the baking sheet, it can be very difficult to remove.)
- We prefer to chill ours for a few hours before eating it. It enhances the flavors vs. eating it room temperature.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil and set a rack on top (like a cookie cooling rack). Spray the rack with nonstick spray.
- Mix the sugar and cinnamon in a bowl. Dip bacon slices in the cinnamon-sugar, coating both sides, and place the coated bacon strips on the rack. I like to poke the bacon into the grooves of the rack in a few places so your bacon will come out looking a little wavy.
- Bake 15 to 20 minutes, or until the bacon appears to be caramelized and somewhat crispy. Watch closely after 15 minutes since the sugar can begin to burn when left in too long. Serve immediately.

- Preheat oven to 400 degrees. Line two large rimmed baking sheets with heavy aluminum foil. If you have a broiler pan or cooling racks you can use to elevate the bacon, do this.
- Arrange thick cut bacon strips in a single layer on baking sheets. Evenly spoon brown sugar mixture over bacon strips. You might need to do this in batches, depending on your oven.
- Bake on middle rack for 20 minutes. Keep an eye on bacon, sugar can burn easily. The goal is for bacon strips to be almost crispy, but still a little chewy. The natural fats will be sizzling and bubbling around them.

- Begin by lining 2 baking sheets with parchment paper to ensure the bacon does not stick to the pan. Preheat oven to 325 degrees.
- Measure brown sugar into shallow-sided dish. Place a slice of bacon on the brown sugar, patting to help the brown sugar stick to the bacon slice, coating evenly on both sides. Place on baking sheet. Repeat with remaining slices of bacon.
- Place on center rack of the oven. Bake for 20 minutes. Check bacon every 5 minutes until golden brown and fairly crispy.
- Drain bacon grease and immediately remove bacon from baking sheet and place on a cooling rack. Do not let the bacon cool completely on the baking sheet; it can be very difficult to remove. Tip – place parchment paper underneath the cooling rack to avoid messy cleanup.
