APPLE PIZZA WITH BACON
Move over, marinara. This easy apple recipe takes pizza in a new direction by topping the golden-brown crust with Gala apple slices and crispy bacon. Instead of traditional mozzarella, crumbles of blue cheese help take this recipe a step above other classic pizza recipes.

- Preheat oven to 450°F. Grease an extra-large baking sheet. In a large skillet cook bacon over medium heat until crisp. Drain on paper towels, reserving 2 Tbsp. drippings in skillet (reserve any remaining drippings). Add apples to drippings in skillet; cook 5 minutes, stirring to scrape up any browned bits. Carefully stir in wine, thyme, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, 6 to 7 minutes or until liquid is evaporated, stirring occasionally.
- On a lightly floured surface, roll pizza dough into a 15x11-inch rectangle (let dough rest during rolling, if necessary). Place on prepared baking sheet and reshape. Brush with any reserved bacon drippings or olive oil. Spread dough with apple mixture to within 1/2 inch of the edges; sprinkle with cheese. Bake 10 minutes.
- Sprinkle pizza with bacon; bake 5 to 10 minutes more or until crust and toppings are golden. Top with walnuts and green onions. If desired, sprinkle with additional cheese and drizzle with honey.

CANADIAN BACON, SWEET ONION, AND APPLE PIZZA

- Preheat oven to 450 degrees F. Lightly spray 1 baking sheet with olive oil cooking spray; set aside.
- Press dough into a rectangle on a floured surface. Cut into quarters and place on prepared baking sheet with floured fingers. Top with apple butter, cheese, onion, apple, and Canadian bacon. Bake in oven 12 to 17 minutes or until crust is golden brown.
- Slice and serve.
PIZZA WITH CARAMELIZED ONIONS AND CRISPY BACON

- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
- In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
- On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
- Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
APPLES WITH CANDIED BACON à LA MODE

- Put the bacon in a large skillet over medium heat and cook until some of the fat has been rendered and it begins to brown on the edges, 6 to 8 minutes. Pour off all but 1 tablespoon of the fat from the pan and sprinkle the bacon with 1 to 2 tablespoons of the sugar. Turn the heat to low and cook, turning the bacon pieces occasionally, until the sugar begins to melt and coat the bacon, about 5 minutes. Adjust the heat as necessary to prevent the sugar from burning. When the bacon is dark, remove it with a slotted spoon and let it cool on paper towels.
- Add the apples to the remaining bacon fat in the skillet, and cook until just beginning to soften on the edges, about 6 to 8 minutes. Add the remaining sugar and continue cooking until the sugar melts and the apples are very tender, 5 to 10 minutes more. Serve the apples over ice cream along with any pan juices and a sprinkle of the candied bacon.
CANDIED BACON
Steps:
- Preheat the oven to 375 degrees F. Set a wire rack over a baking sheet.
- Spread the brown sugar on a plate. Coat the bacon on both sides of with the brown sugar, pressing to adhere. Lay the slices on the rack.
- Bake until dark brown and almost completely crisp (the bacon will continue to crisp as it cools), 20 to 25 minutes. Transfer to paper towels to cool. Crumble or chop before using.
