DUCKLING CHASSIGNAT

1 (4 pound) duck
4 cups vegetable oil
1/2 cup red wine vinegar
1 cup peach juice
1/4 cup sugar
1 teaspoon "Marmite" (meat flavored yeast concentrate)
1/2 cup dry red wine
Freshly ground salt, to taste
Freshly ground pepper, to taste
1 teaspoon arrowroot, mixed with 1 teaspoon red wine
Clarified butter
1 (28-ounce) can peach halves
3 tablespoons brandy

Steps:

  • Cut duck into 8 pieces (2 legs, 2 thighs, 2 wings, 2 breasts). Remove breast meat from bones and cut in half. Cut wings and carcass into small pieces.
  • Heat oil in deep fryer to 350 degrees F. Fry duck for 15 minutes.
  • Meanwhile, combine red wine vinegar, peach juice, and sugar in saucepan. Stir well over high heat. Add Marmite and bring to boil. Add carcass bones and wing pieces. Reduce sauce by half, skimming frequently. Add wine.
  • Remove duck from fryer, season with salt and pepper, and place in simmering sauce for 15 minutes, then remove and drain slightly. Continue to reduce sauce, adding arrowroot/red wine mixture to thicken, if necessary.
  • Heat clarified butter in frying pan. Fry duck for a few minutes, careful not to burn. Remove duck and set aside. Add peach halves and 2 tablespoons brandy and flame, shaking pan. Add remaining brandy and turn peaches to coat with sauce. Dip duck into sauce and arrange on heated platter. Pour sauce over duck and place peach halves around. Serve piping hot.

2 fatty ducks (or 4 sets of thighs and drumsticks)
1/3 cup Kosher salt (about 4 teaspoons per pound of duck, half for short preserving periods)
4 shallots, minced
3 tablespoons parsley, minced
1/2 teaspoon thyme leaves, crumbled
1 bay leaf, crumbled
2 teaspoons white peppercorns, crushed
2 quarts rendered poultry and pork fat
1 garlic head, halved and stuck with 2 cloves
2 cups pork lard for storing the confit (only if there is not enough duck fat)

Steps:

  • Quarter the ducks and remove the backbones. Cut and trim off as much fat as possible. Grind any excess skin and all the fat in a food processor, place in a deep saucepan with 1 cup water and render the fat (simmer it over low heat for about 45 minutes, uncovered), strain, and reserve.
  • Cut each breast into halves with the wings attached. Roll each piece of duck in the salt and place it in a large stainless glass or earthen bowl. Sprinkle each piece of duck with a mixture of the shallots, herbs, and spices and scatter any remaining salt over the top. Cover loosely and refrigerate 24 hours. NOTE: This may be cut down to a few hours if it is to be eaten within a week or two.
  • Rinse quickly, then wipe the pieces of duck to remove all the salt, herbs, spices, and liquid.
  • Heat the strained fat in a deep, wide kettle. Add the duck, 1/2 cup of water, the halved garlic head, and enough rendered poultry or pork fat to cover. Bring the mixture to a boil. Lower heat and cook at a simmer for 1 1/2 hours, or until the duck flesh can be easily pierced with a straw. Do not let the mixture boil.
  • Remove the duck, drain and discard any loose bones. Strain the warmed fat. Put about 1 cup of warmed fat into each of the bowls or mason jars intended for storage of the confit and cool in order to congeal the fat.
  • Arrange the duck pieces in the containers without compacting them. Strain the remaining fat, tepid but not hot, over the duck to cover. The pieces of duck must be completely submerged in the fat. Cover and chill until solid. Cover with a layer of melted lard. Cover tightly with a glass top or with plastic wrap and store in a cool place such as a cold cellar or the refrigerator. Leave to ripen at least 1 month. It keeps well for 6 months.
  • To use the confit, set the jars or bowl in a warm oven. When the fat softens, remove pieces desired. Return jar or bowl to the refrigerator. Be sure all of the remaining pieces are covered with fat. The duck can be served at room temperature or warmed in an oven, then Sauteed to crisp the skin.

1 tablespoon salt
1 (3 pound) Muscovy duck, skin on, cut into 4 even pieces
1/2 cup peanut oil
1 (30-ounce) can pineapple pieces, drained and juices reserved
2 green peppers, diced to same size as pineapple
2 tablespoons grated fresh gingerroot
1 cup pineapple juice
2 tablespoons soy sauce
1 teaspoon freshly ground black pepper
2 tablespoons arrowroot

Steps:

  • Bring large saucepan with 3 quarts salted water to boil. Add duck, reduce heat and cover to simmer for 2 to 2 1/2 hours until tender. Remove duck and strip flesh from carcass and dry with cloth. Strain cooking liquid and let cool. Once cooled, skim fat and reserve.
  • Heat oil in frying pan and add duck pieces, frying 15 minutes until crisp brown on all sides. Return duck to large saucepan, add 1 3/4 cups cooking liquid, 1 cup pineapple pieces, green pepper and ginger. Cover and simmer another 15 minutes. Remove duck and rest on heated serving dish to keep warm.
  • Skim any fat from surface of cooking liquid and bring to a boil. Separately combine pineapple juice, soy sauce, pepper and arrowroot, mixing well. Add this to cooking liquid and stir until it thickens and clears. Pour sauce over duck.

CANARD GRILLE (BROILED DUCK)

1 duck, 4 to 6 pounds, with giblets
1 bay leaf
Salt and freshly ground pepper to taste
2 tablespoons olive oil
1 clove garlic, peeled and split

Steps:

  • Cut the duck or have it cut as follows: Cut off the thighs with legs attached. Cut off the wing tips and reserve, along with the carcass, for soup. Cut off the second wing joint. Cut off the two breast portions (with the main wing bones attached) from the carcass. Trim around the breast and thigh portions to cut away all peripheral skin, that is to say the outer edges.
  • Put the breasts, thighs, second wing joints, neck, liver and gizzard in a large bowl.
  • Chop the bay leaf as finely as possible on a flat surface. Put the chopped bay leaf in a small mixing bowl and add salt and pepper to taste and the oil. Mix well. Rub the duck pieces with the mixture and let stand until ready to cook.
  • When ready to cook, arrange the breast, thigh and leg and wing portions skin side up in one layer in a flat baking dish. Add the neck, liver and gizzard so that they, too, will be exposed to the broiler heat.
  • If the broiler and oven have separate temperature controls, preheat broiler to high and oven to 425 degrees. If they have the same temperature control, preheat broiler to high.
  • Place duck under the broiler about three or four inches from the source of heat. Broil about five minutes until skin is golden brown. Turn the pieces.
  • Broil duck on second side about five minutes or until golden brown.
  • If the broiler and oven have the same temperature controls, turn the oven heat to 425 degrees. Let the duck bake in the oven 10 minutes.
  • Turn the pieces skin side up and continue baking 10 minutes. Rub the outside of the duck skin with the garlic and then put the garlic in the baking dish. Continue baking five or 10 minutes and serve.
