CANADA GOOSE IN SWEET CHILI SAUCE
Wild Canada goose breast with cooked onions and garlic in a sweet chili sauce.

Steps:
- Heat olive oil in a skillet over medium heat. Cook and stir onion and garlic in hot oil until fragrant, about 2 minutes.
- Season goose with salt and pepper; add to the hot oil. Cook goose breast slices in hot oil for 2 minutes, flip, and continue cooking until evenly browned, about 2 minutes more.
- Pour chili sauce over the goose; reduce heat to medium-low and cook at a simmer until the chili sauce thickens, about 3 minutes.

- In a large shallow dish, combine the soy sauce, oil, lemon juice, Worcestershire sauce and garlic powder. Add goose; turn to coat. Refrigerate for 4 hours or overnight., Drain goose, discarding marinade. Place flour in another large shallow dish; add goose in batches and turn to coat. In a large skillet over medium heat, brown goose in butter on all sides. , Transfer to a 3-qt. slow cooker. Add the soup, water and soup mix. Cover and cook on high for 4-5 hours or until meat is tender. Serve with potatoes, noodles or rice.

Steps:
- Combine the first 4 ingredients. Marinate the goose for 2 to 3 hours (at a minimum) in this mixture.
- Preheat oven to 325 degrees. Quarter the onion and cut celery stalk into 3 pieces. Place into cavity of goose. Sprinkle goose with salt and place into roasting pan, breast side down. Pour marinade over goose.
- Cover and bake for 2 to 2-1/2 hours or until tender. Baste several times with marinade. Turn and roast, breast side up, for the last 15 minutes.

- Pour water and all the spices into a pot and bring to a boil. Turn down the heat and let it simmer for 5 minutes, stirring to make sure all the salt is dissolved.
- Place breasts into the brine pot and refrigerate overnight. I like more than 16 hours for this and usually wind up around the 20 hour mark. 24 hours or more wouldn't hurt anything but isn't necessary.
- I will forewarn you, don't start this unless you have 3-4+ hours when you'll be available to maintain your grill. You will often have to add more coals to maintain temperature and add wood chips to keep the smoke going.
