CHRISTMAS MORNING BREAKFAST BAKE
This luscious breakfast fits the bill and, best of all, will satisfy adults and kids alike. Brew a big pot of coffee: It's a meal your guests will want to linger over.

Steps:
- Butter a 3-quart baking dish with 1 tablespoon butter. In a large skillet, melt 2 tablespoons butter over medium-high. Add bacon, onion, and garlic and cook until onion is softened, about 2 minutes. Gradually add spinach to skillet and cook, stirring occasionally, until just wilted, about 2 minutes. Season with salt and pepper.
- In a medium bowl, whisk together eggs, milk, and nutmeg. Season with salt and pepper.
- Scatter half the bread in dish and top with half the spinach mixture and half the cheese. Top with remaining bread, spinach mixture, and cheese. Pour egg mixture into dish and gently press bread to submerge. Cover and refrigerate at least 2 hours (or up to overnight).
- Preheat oven to 400 degrees. Uncover dish and bake until bread is golden brown and custard is just set, 45 to 50 minutes (cover with foil if browning too quickly). Let cool 5 minutes before serving.

CANADIAN BACON STRATA
Stratas make a perfect breakfast/brunch item when you have houseguests because they can be assembled the night before and then popped in the oven the next morning. Serve with a mixed fresh fruit salad and mimosas if you like!Lowfat cheese and milk can be used if you like. Steps:
- Spray a shallow 2-quart baking dish ( oval or square)with cooking spray; set aside.
- In dish, alternately arrange, cut side down, muffin pieces and Canadian bacon.
- Sprinkle with cheeses and set aside.
- In a large bowl, whisk together the eggs, milk, mustard, 1/2 t. salt, a pinch of pepper, and hot sauce until well combined.
- Pour over muffins and bacon.
- Cover tightly with plastic wrap and refrigerate at least two hours.
- *Refrigerating overnight will give you an especially custardy consistancy.
- Preheat oven to 350 degrees.
- Place baking dish on a rimmed baking sheet;remove plastic wrap.
- Bake until puffed and set in the center( a paring knife inserted in the center will come out clean) for about 1 hour and 30 minutes.
- Tent loosely with foil if strata starts to brown too quickly.
- Let stand 10 minutes before cutting and serving.
CANADIAN BACON STRATA
Posting this for ZWT 2006 (Canadian Region) this is delicious. Is it an omelet? Is it a bread pudding? Who cares?! It is cheesy with a wonderful ham flavor and such a good comfort food not to mention easy.

- Butter a shallow 2-quart baking dish. Arrange muffin halves and Canadian bacon cut sides down (see below) in dish. Sprinkle evenly with both cheeses.
- Whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and the hot-pepper sauce until combined. Pour into dish; cover tightly with plastic wrap. Refrigerate at least 2 hours (or up to overnight).
- Preheat oven to 350°F. Place baking dish on a rimmed baking sheet. Bake until puffed and set in the center, about 1 1/2 hours. (Tent loosely with aluminum foil if strata browns too quickly.) Let stand 10 minutes before cutting and serving.
- Layering Ingredients
- The muffin halves and Canadian bacon are arranged upright in the baking dish for easier serving. When cutting, you'll be able to see the layers and make sure each portion contains a few pieces of bread and bacon.

- Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.
- Place bread cubes in a large mixing bowl.
- Crack eggs into a separate mixing bowl. Season with salt, pepper, cayenne, and nutmeg. Add cream and whisk mixture thoroughly.
- Pour egg/cream mixture over the bread cubes and mix to distribute ingredients evenly. Allow bread mixture to sit about 15 minutes to absorb the liquid.
- Transfer half of the bread mixture to the baking pan; spread evenly over the bottom and press mixture down a bit. Top with half of the grated Cheddar cheese. Add cooked bacon pieces in an even layer over the cheese. Place the cooked spinach over the bacon; top with half of the remaining cheese. Finish with the rest of the soaked bread cubes, spread evenly and pressed down slightly. Sprinkle with the rest of the grated cheese. Cover and let strata sit at room temperature for 1 hour before baking.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake strata in preheated oven until set, about 45 minutes. Optionally, you can broil the strata for a minute or two to brown the top.

This hearty make-ahead breakfast is infused with Dijon mustard and bakes up to a fluffy, golden finish.

- Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
- Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
- Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.

- Heat butter in a large high-sided skillet over high heat. Add onion, garlic, thyme; season with salt and pepper. Cook until lightly caramelized, 10 to 12 minutes (adjust heat if browning too quickly). Transfer onion mixture to a plate, and let cool.
- Meanwhile, whisk together eggs, milk, Parmigiano-Reggiano, and 1 teaspoon salt in a bowl. Shingle bread slices in a 10-by-14-inch oval baking dish layering with cooked onion mixture, speck, and fontina cheese. Pour over egg mixture, pressing bread gently into liquid. Refrigerate, covered, for at least 2 hours.
