Canadian Bacon Macaroni and Cheese image

Macaroni and cheese mixed with tomatoes and Canadian bacon. Cheesy, eh?!

1 cup elbow macaroni
6 slices Canadian-style bacon
2 tablespoons margarine
2 ½ tablespoons all-purpose flour
1 cup canned tomatoes, half-drained
1 cup shredded Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • While macaroni is boiling, fry bacon and place on paper towels to drain. Cut into bite size pieces.
  • Melt margarine in a large saucepan over medium low heat. Stir in flour, then tomatoes and wait for sauce to thicken, stirring occasionally. When thickness is to your liking, stir in cheese until it has melted. Stir in cooked macaroni and bacon and heat through. Serve hot.

1 bag (10 ounces) ready-to-eat baby spinach
12 ounces sliced Canadian-style bacon, cut in half
8 ounces Gouda cheese, sliced
2 medium fresh peaches, peeled, pitted and sliced
1/2 cup honey Dijon dressing

Steps:

  • Arrange spinach on 4 plates.
  • Top with bacon, cheese and peaches. Drizzle with dressing.

Stuffed Chicken With Canadian Bacon image

I needed a new chicken recipe and it had to only use healthy ingredients. My dad had a heart attack and he is only allowed Asiago cheese and canadian bacon as substitutes for their counter fattening parts.

Salad Supreme dry seasoning
grated romano cheese
grated parmesan cheese
steak seasoning (Mrs Dash Steak Grilling Blends)
oregano
parsley
paprika
Mrs Dash's extra spicy seasoning
1 1/2 tablespoons crushed garlic
2 cups of shredded asiago cheese
1/2 cup of diced red onion
5 slices of precooked Canadian bacon, diced
5 boneless skinless chicken breasts, thawed & pounded down

Steps:

  • Preheat oven to 350 degrees, line bottom of a glass pan with olive oil and set aside at least 10 – 15 toothpicks near your workstation.
  • Mix seasoning ingredients in a shallow pan, with enough room to lay one chicken breast down in it.
  • Add as much as you want of each seasoning per your taste, I used a couple of shakes for each ingredient and a little extra of the cheeses.
  • Mix all stuffing ingredients together in a bowl.
  • Lay one chicken breast in the shallow seasoning dish to coat the outside, and then in the center of the chicken breast add a line of the stuffing mixture.
  • Roll and seal by sticking a toothpick on the top of each end to close.
  • Once all the chicken breasts are stuffed and in the glass dish, you will have left over stuffing, place the leftover stuffing on top of each chicken breast on the lip of the “seal”.
  • Bake in oven for 30 minutes, check to see if done, depending on oven you may need another 15 minute.

8 cups torn fresh spinach
6 ounces Canadian bacon, cut into narrow strips about three inches long
1 cup thinly sliced celery
1 diced apple (I like Braeburns)
1/2 cup peanuts
8 ounces non-fat vanilla yogurt
1 teaspoon Equal sugar substitute
2 teaspoons orange zest
1/2 cup orange juice

Steps:

  • In small bowl, combine dressing ingredients and mix well.
  • In large bowl, combine salad ingredients and toss.
  • Chill everything in the refrigerator until ready to serve.
  • Combine dressing and salad and toss well.
  • Plate it up and dig in!

  • First, toast the walnuts. In a small skillet, toast the walnuts, over medium heat, stirring frequently. Cook until the walnuts turn brown and smell toasted. This will take about 5 minutes. Transfer to a small bowl to cool.
  • Place the greens in a large bowl. Top with sliced apples, Gouda cheese cubes, farro, dried cranberries, and toasted walnuts.
  • To make the vinaigrette, whisk together the olive oil, apple cider vinegar, honey, mustard, and shallot. Season with salt and black pepper, to taste. Drizzle the salad with the vinaigrette and gently toss. Serve!
  • Note-I like to use Honeycrisp or Granny Smith apples, but any apple variety will work. I also like to use Trader Joe's 10 minute farro.
