- Heat Canadian bacon as directed on package.
- Meanwhile, beat egg and dressing in small microwaveable bowl with wire whisk until well blended. Microwave on HIGH 1 min., stirring gently every 30 sec. Cover. Let stand 1 min. or until egg is set and no visible liquid remains. (Do not overstir.)
- Cover 1 of the muffin halves with Canadian bacon; top with egg mixture and remaining muffin half.

CANADIAN BACON AND CHEESE PUFFS
My own creation, easy and versatile.My husband loves Canadian Bacon and these are light and fluffy and go well with any breakfast or just on their own. Take them to work and pop them in the microwave. Bring to a brunch and share them with your friends. We had them for dinner. My husband really enjoyed them.

- 1. Preheat oven to 400F. In a bowl beat eggs with salt & peper and set aside.
- 2. Seperate biscuits and flatten in a greased cup cake pan bringing dough up the sides.
- 3. Add canadian bacon and cheese. Pour egg mixture over meat and cheese. Be careful to not over fill. Bake for 30 minutes or until thorouly cooked. Let set for 10 minutes. Remove from pan on to a plate. Enjoy

- In a large bowl, combine the flour, baking powder, Italian seasoning and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk just until moistened., Turn dough onto a lightly floured surface; knead 6-8 times. Pat or roll out to 1/4-in. thickness; cut 10 biscuits with a 2-1/2-in. floured biscuit cutter. Spread each with about 1/2 teaspoon mustard. , Cut cheese with a 2-1/2-in. round cutter; place a slice on five of the biscuits. Top with onion and bacon. Cover with remaining biscuits, mustard side down., Place on a 1-in. apart on greased baking sheet. Bake at 425° for 15-18 minutes or until golden browned. Serve warm.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large pot, combine the green beans, onion and water. Bring to a boil, and cook until tender, about 5 minutes. Drain, and transfer to a 2 quart casserole dish. While the beans cook, fry the Canadian bacon in a skillet over medium-high heat until crisp. Stir in with the beans along with the cream of celery soup and milk. Sprinkle bread crumbs over the top.
- Bake for 30 minutes in the preheated oven, until heated through and sauce is bubbly. This recipe also works well to make ahead and refrigerate or freeze until needed. If baking cold, bake for 1 hour.
