- Place Canadian bacon slices, slightly overlapping, around the side and the bottom of a 9 inch deep dish pie plate, coated with cooking spray.
- Set aside.
- Combine eggs, mayonnaise, pepper, Parmesan cheese, Brie, and Italian herb seasonings.
- Pour into pie plate over bacon and bake at 375ºF for 30 minutes.
- After 15 minutes of baking, place foil over bacon to protect it from overcooking and drying out.

- Preheat the oven to 375°F. Coat a 9-inch pie plate with cooking spray.
- Place the Canadian bacon slices, slightly overlapping, around the side and the bottom of the prepared pie plate. Set aside.
- In a medium bowl, combine the eggs, mayonnaise, Parmesan cheese, Brie, Italian seasoning and white pepper. Pour the mixture into the pie plate over the bacon. Bake for 30 minutes. After 15 minutes of baking, place foil over the quiche to protect it from overcooking and drying out.
- Slice and serve.

A delicious make ahead that you can freeze for later-- how convenient is that. More time to enjoy my family! Timing does not include chilling pastry. Hope you like as much as we have. I have changed the original method for making pastry and think it works much better.

- In mixing bowl, use beaters to cream butter, add cottage cheese and beat with mixer, using spoon gradually stir in flour.
- Form into disk, cover with plastic wrap, and chill for at least 1 hour or up to two days. I cut plastic wrap big enough so that I can later roll pastry out on it so clean up is easy.
- Roll out pastry to fit a 9 inch pie plate.
- Transfer pastry to greased pie pan.
- Trim pastry to 1/2 inch beyond edge of plate; flute edges.
- In skillet, sauté onions in remaining butter (1 1/2 t.) until golden brown. It is important to get the onions done to your preference because the baking steps do not cook it much more than this step does.
- Remove skillet from heat.
- Stir in garlic and set aside.
- Put cheese at bottom of pastry, top with Canadian bacon.
- in large bowl, add egg and peppers, lightly beat, stir in onion mixture from skillet.
- Pour into pastry shell.
- At this point, either wrap well and freeze or bake at 350 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. (After 25 minutes, I peek to see if crust is browned enough and cover just the crust with foil so it is browned just enough. I hate real dark crust. It is not easy to do but worth it IMO.) Let sit for 10 minutes before cutting.
- TO USE FROZEN QUICHE: Remove frozen quiche from freezer 30 minutes before baking. Put rack in middle. Preheat oven to 350 degrees. Place pie on a baking sheet. Bake at 350 degrees for 40 minutes, then cover with foil and move to lowest shelf and bake another 25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

- Preheat oven to 350°. In a small bowl, mix flour and 1/4 teaspoon salt; cut in 1/2 cup butter until crumbly. Gradually add cottage cheese, tossing with a fork until dough holds together when pressed. Shape into a disk., On a floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Lovely colors and flavors in a reduced-fat version of a classic quiche. This would be a wonderful addition to your brunch table or a quick and healthy week-night supper. The crust is made of bread slices so this is easily adapted to solo or duo cooking, using individual baking dishes.

- Preheat oven to 350°F.
- Spray a 9-inch pie dish with vegetable oil spray.
- With a rolling pin, flatten each slice of bread on a cutting board or flat surface.
- Cut 5 slices in half vertically (from top crust to bottom crust).
- Cut a 3-inch circle from the remaining slice with a round cookie cutter or a knife (this will go in the center of the crust).
- Place slices of bread in the bottom of the pie dish, slightly overlapping each piece to form a crust, gently pressing in the bottom and partially up the side of the pie dish.
- Place the reserved bread circle in the center and gently press down into the other slices of bread.
- Bake for 10 minutes, or until bread is toasted and golden brown. Remove from oven and place on a cooling rack.
- Scatter Canadian bacon evenly in the bottom of the crust. Top evenly with red bell pepper and green onions.
- In a medium bowl, whisk together the milk, egg substitute, eggs, Parmesan cheese, oregano, salt, and pepper, until blended.
- Carefully pour egg mixture over the meat and vegetable filling and place the pie dish on a baking sheet.
- Bake for 35 to 40 minutes, or until center is set. Remove from oven and let mixture rest 5 minutes before cutting into wedges.
