This cornbread has a really nice texture. I started making it this way when I got some hand-me-down coarse-ground cornmeal. I think it was Bob's Red Mill brand and my grocery store had it once, but then I couldn't find it for a while. Now they carry Bob's Red Mill "Corn Grits or Polenta". I think it's the same thing.

1/2 cup cornmeal (regular)
1/2 cup cornmeal, coarsely ground (corn grits or polenta)
1 cup flour
2 teaspoons baking powder
1 tablespoon sugar
1 teaspoon salt
1 cup buttermilk (or put 1 Tablespoon vinegar in your measuring cup and fill to 1 cup with milk)
1/2 teaspoon baking soda
2 eggs
1/2 cup butter, melted

Steps:

  • (Make "buttermilk" if you're going to do that, so it can sit a bit and do whatever it does that makes it buttermilky.).
  • Preheat oven to 425°F.
  • Combine the dry ingredients (except the soda).
  • Stir the baking soda into the buttermilk and add that to the dry ingredients.
  • Add eggs and melted butter. Stir together and pour into a 9x9 pan.
  • Bake for 20 minutes.

Think you can't make cornbread without cornmeal? No problem! We use sweet in-season corn and blend it up with milk and sour cream to deliver all that good corn flavor, even without cornmeal. Don't hold back if you get the craving to stir a little Cheddar, scallions and crispy bacon in there, as well.

2 1/2 cups all-purpose flour (see Cook's Note)
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
3/4 cup sour cream
3/4 cup whole milk
1 stick unsalted butter, melted, plus more for the baking dish
2 ears corn, kernels cut off (about 2 cups)
2 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk the flour, sugar, baking powder, salt and baking soda together in a large bowl.
  • Combine the sour cream, milk, butter, corn and eggs in a blender and blend until smooth. Add to the dry ingredients and whisk until smooth. Butter a 9-by 13-inch baking dish and pour in the batter.
  • Bake until the cornbread springs back when pressed and is golden around the edges, 30 to 35 minutes. Let cool 15 minutes in the baking dish before slicing.

1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup granulated sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1/3 cup neutral oil or melted butter
1 large egg
1 cup milk

Steps:

  • Grease a 9-inch round cake pan or cast iron skillet well and set aside. Preheat the oven to 400 degrees.
  • In a medium mixing bowl, add the flour, cornmeal, sugar, salt, and baking powder. Whisk to combine well.
  • Make a well in the center of your dry ingredients and add your oil or butter, milk, and egg. Stir just until the mixture comes together and there are only a few lumps remaining.
  • Pour the batter into the prepared pan and bake for 20-25 minutes until the top is a deep golden brown and a toothpick inserted into the center comes out clean.
  • Serve hot.

1/2 stick butter to melt in skillet
2 cups self-rising cornmeal mix. I use White Lily (ad)
1 1/2 cups buttermilk
1 large egg (beaten)
1/4 cup melted butter for batter
This recipe works in a small skillet or 9" pie plate. Double the ingredients if you are using a large 12" cast iron skillet.

Steps:

  • Preheat oven to 425 degrees.
  • Place 1/2 stick butter in a cast iron skillet or baking dish. Melt in hot oven for 3 minutes.
  • Take skillet out of oven and swirl the butter around to coat the pan.
  • Add flour, buttermilk, egg and additional melted butter in a large bowl. Mix well. It's okay for batter to have a few lumps.
  • Pour batter into preheated buttered skillet and bake at 425 degrees for 25 to 30 minutes until golden brown.

1 1/4 cups stone-ground white cornmeal (not self-rising)
1/2 cup flour
1/4 cup stone-ground yellow corn grits
4 teaspoons baking powder
1 teaspoon salt
2 cups buttermilk
2 eggs
1/4 cup butter

Steps:

  • Preheat oven to 425. Place a 10-inch cast-iron skillet in oven to heat.
  • In a large bowl, stir together cornmeal, flour, grits, baking powder and salt.
  • In a separate bowl, whisk together buttermilk and eggs. Add to cornmeal mixture, stirring until just combined.
  • Remove skillet from oven and add butter to hot skillet. When butter has melted, swirl skillet to coat bottom and sides. Pour excess butter into batter and stir. Pour batter into skillet.
  • Bake for 25-30 minutes, until browned and has begun to pull away from sides of skillet. Let cool in pan for 10 minutes, then invert onto plate and cut into wedges.

Notes: You can bake the cornbread 1 day before making the dressing; cool, wrap airtight, and store at room temperature.

2 1/2 teaspoons baking powder
3/4 teaspoon salt
2 large eggs
1 cup buttermilk
About 1/4 cup (1/8 lb.) cooled melted butter or margarine

Steps:

  • In a bowl, mix flour, polenta, sugar, baking powder, and salt. In another bowl, beat eggs to blend with buttermilk and 1/4 cup butter; pour into flour mixture. Stir batter until evenly moistened.
  • Scrape batter into a buttered 8-inch square pan and spread level.
  • Bake in a 400° oven until cornbread is browned, springs back when lightly pressed in the center, and begins to pull from pan sides, 20 to 25 minutes. Use hot or cool.
