CAMPFIRE PIES
Steps:
- Make sure the campfire is very hot with glowing coals.
- Spray the insides of the sandwich iron with nonstick cooking spray.
- Lay a piece of bread in each side of the iron and press it down slightly to make an indentation in the bread. Place a few tablespoons of fruit on the bread and sprinkle on about 1 teaspoon of the cinnamon sugar mixture. Lay the other piece of bread on top of the other.
- Connect the two sides of the sandwich iron and press down, locking the handles together. Scrape away any bread hanging out of the irons as it will burn in the hot coals. Place the iron right in the middle of the hottest part of the fire and leave it there for about 2 to 3 minutes. The sides should be toasted golden brown when ready. The pie will be very hot, so allow it to cool for a couple minutes before eating.
CAMPFIRE FRUIT PIES
We've been camping often over the last 25 years, but I've only just recently discovered these delicious pies! My BFF told me about them so I decided to try them for my self! What a great camping food! These make a wonderful dessert that mixes it up a little from the traditional Campfire S'more!

Steps:
- 1. Butter One Side of Each Piece of Bread or Spray with butter flavor cooking spray.
- 2. Place one slice of the bread, buttered side down, into the sandwich maker, It's okay if the bread doesn't fit perfectly. Just press the edges into the sandwich maker.
- 3. Place 1/4 cup of pie filling onto the center of bottom slice of bread. Top with second slice of bread, buttered side up.
- 4. Fit the sandwich maker together and latch. Place the latched sandwich maker on a bed of hot coals or over flames and toast for about 5 minutes a side. Remove sandwich maker from coals every couple minutes to check and see how the bread is toasting.
- 5. When pie is toasted to perfection, turn out onto a paper plate. Let cool til warm but not overly hot. Sprinkle with powdered sugar and serve.
CAMPFIRE FRUIT PIE

- Spray the pudgy pie pan with nonstick cooking spray. Evenly spread one side of each slice of bread with softened butter. Lay a slice of bread, butter side down, into the toaster. Spoon on pie filling, top with raisins and second slice of bread, butter side up.
- Close up toaster, and cook over a hot campfire, turning occasionally, until the pie is hot and golden brown, about 4 minutes.

- Roll out the pie crust and cut out circles using a water glass. The circles will be around 2-3 inches wide. Gather together the crust and roll out again to the original thickness of the pie crust ( you can use that water glass! That's what I did!) and cut out some more circles. Repeat until you have as many circles as desired!
- You have two options to make these : you can use one circle and pinch them into a moon like a perogy OR you can use two circles and make them into a round ravioli shape. The ones I made in the photos use two circles.
- Place one circle down and place 1 heaping tbsp of cherry pie filling into the center. Place another crust circle on top and using the tines of a fork, press the edges together all the way around. Gently turn over and repeat, sealing the pies edges on both sides with the fork. ( This method works beautifully, I had no leaks!)
- Place 1-2 inches of oil in a cast iron pan and place on the fire over coals, not direct flames. Heat the oil until it sizzles instantly when water droplets are dropped into it.

MOUNTAIN PIE: HOW TO MAKE CAMPFIRE CHERRY PIES

- Prepare your campfire and keep your embers red hot. Butter up your pie iron campfire sandwich maker on the insides to stop anything from sticking while cooking.
- Liberally butter your two slices of white bread on one side each. Spread cherry pie filling on the other side of each piece of bread.
