CHEESY CAMPFIRE POTATOES
These easy cheese potatoes are great over the grill or campfire. And since they're in a foil packet, there's no mess to clean up!

Steps:
- Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire.
- Cut 2 lengths of heavy duty foil approximately 18 inches square, placing one on top of the other for strength. Spray top one with non-stick spray. Spread potatoes on foil leaving plenty of room to fold up later. Scatter the onion over potatoes; slice the margarine over the potatoes; layer the Parmesan, mozzarella, and Cheddar cheeses over the potatoes; season with salt and pepper. Bring opposite edges of foil together and seal.
- Place the packet directly onto your campfire and cook until the potatoes are soft, about 35 minutes.

its fast and easy for me to make. everybody that ive fixed it for wants the recipe. the recipe was given to me from a friend that found it in a cook book that featured the singing cowboy , and marty robbins sent this in. this came from a good friend that gave it to me, he got it from old cookbook that featured the singing cowboys this recipe was sent in by marty robbins. i just love to fix it

Steps:
- brown meat, onion, spices in a large skillet;drain.
- add the poato to the meat, stir briskly to keep from sticking.
- add a small amount of vegetable oil if necessary.
- add eggs to mixture when potatoes are brown.
- continue to stir until eggs are done.
- salt and pepper to taste.

CAMPFIRE COFFEE CAN CASSEROLE
This came from a kids cookbook so it's really easy. If you don't want to, you don't even have to wash the casserole pan when this is gone. You can make this an indoor recipe by cooking it at 350F in a casserole dish in the oven for an hour or so.

- Peel the potatoes and carrots with a vegetable peeler, and grate them or cut them into really thin slices.
- Remove the skins from the onions and cut them into really thin slices.
- Make four layers in a clean 3 lb coffee can, starting with the ground beef, add the onions, then the potatoes, then the carrots, sprinkling each layer very lightly with salt and pepper.
- Cover with aluminum foil and set in or on the campfire.
- Cook 30-60 minutes depending on how hot your fire is.
