CHEESY CAMPFIRE POTATOES

Cheesy Campfire Potatoes image

These easy cheese potatoes are great over the grill or campfire. And since they're in a foil packet, there's no mess to clean up!

Provided by Michelle Bomgaars

Categories     Side Dish     Potato Side Dish Recipes

Time 45m

Yield 6

Number Of Ingredients 7

6 potatoes, sliced
¼ cup diced onion
2 tablespoons cold margarine
¼ cup grated Parmesan cheese
¾ cup shredded mozzarella cheese
¾ cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire.
  • Cut 2 lengths of heavy duty foil approximately 18 inches square, placing one on top of the other for strength. Spray top one with non-stick spray. Spread potatoes on foil leaving plenty of room to fold up later. Scatter the onion over potatoes; slice the margarine over the potatoes; layer the Parmesan, mozzarella, and Cheddar cheeses over the potatoes; season with salt and pepper. Bring opposite edges of foil together and seal.
  • Place the packet directly onto your campfire and cook until the potatoes are soft, about 35 minutes.

60 CAMPFIRE RECIPES THAT ARE EASY AND DELICIOUS - SURVIVAL ...

From survivalsullivan.com
  • Breakfast Burritos. For the first morning at camp these breakfast burritos are make-ahead ones so you do all the prep at home then wrap them in foil and bring them along neatly packed in a container to simply heat – no washing pans and plates on the first morning.
  • Campfire Bacon. There is nothing like the smell of freshly grilled bacon to get a person out of the tent fast, in case they miss out. This technique makes grilling bacon for a bunch of people a breeze – heck they can even turn their skewers of bacon themselves, so everyone has it how they like it – done but not crispy, crispy but not burnt – you know how fussy people get about the ‘doneness’ of their bacon.
  • Southwest Scrambled Eggs. Yes, everyone does scrambled egg and bacon on the campfire, and for kids keep it simple with just salt, but this recipe takes the eggs up a notch with the addition of bell peppers, red onion and, if you can take the heat, some jalapeno.
  • Blueberry Pancakes. Pancakes are a great morning dish and these blueberry ones are definitely moreish! Drizzled with butter and maple syrup they go down just fine.
  • Cornmeal Pancakes. Another pancake recipe but quite different. Don’t imagine these are going to be heavy and stodgy – there is cornmeal and flour used in these to create little rounds of deliciousness.
  • Camp Fire Skillet Breakfast. Bacon, eggs, potatoes, cheese, and onion – what’s not to like about this one that does it all in one pan for a hearty start to the day.
  • Cornmeal Mush. This is a quick one pot meal to feed everyone with a hearty dollop of cornmeal before heading off for the morning’s adventures, you can even glam it up for dessert.
  • Chickpea Breakfast Hash. Zucchini, onions, sweet peppers and chickpeas make this a healthy option that will keep campers satisfied. Serve it with bacon or eggs or both at breakfast for a gluten free hearty meal.
  • Scottish Bannock Breakfast. The ingredients are mostly dry – flour, baking powder, and rolled oats, the only ingredients you will have to keep cool are the butter and the double cream yoghurt.
  • Breakfast Oats with Baked Apple. Oats are great for diabetics, gluten free and vegan. What you add to them makes for different taste sensations. This recipe makes oats the usual way over the fire but adds baked apples in foil sprinkled with cinnamon, and pecans and pumpkin seeds toasted in a pan over the fire – all dumped over the oats with some maple syrup.

  • Campfire Skillet Breakfast. This campfire skillet breakfast tastes as good as it looks. It’s like something you might eat in a five-star restaurant. Camping breakfasts don’t mean you’re stuck boiling eggs in a pot of water and heating pre-cooked bacon over the fire.
  • Bacon & Cheese Pull-Apart Loaf. Pull-apart bread is one of my favorites, but this pull-apart bread is particularly scrumptious. All you’ll need is bread, butter, cheese, and bacon, though you can serve it with Dijon mustard if you like.
  • Breakfast Campfire French Toast. If you’ve ever tried – and failed – to make French toast on a camping trip, you’re probably shaking your head right now.
  • Camping Breakfast Sandwich. This recipe allows you to play around a little with the protein, but using leftover meat from the previous night’s meal is certainly convenient.
  • Dutch Oven Dutch Baby (Camping Breakfast Recipe) Bring a cast-iron Dutch oven with you on your next camping trip, and you’ll be able to wake your family up with the sweet smells of a berry-filled Dutch baby cooking over the fire.
  • Dutch Oven Campfire Nachos. If you’re a frequent camper, you should definitely invest in a Dutch oven if you don’t already have one. You’ll make some of the absolute best meals in these, and they’re so simple.
  • Campfire Grilled Cheese. Grilled cheese is classic comfort food, and there’s really no better way to make them than in pie irons over an open fire. Aside from the pie iron, all you’ll need is bread, butter, cheese, and a butter knife.
  • Campfire Pizza. All you’ll need to make campfire pizza dough are five ingredients: water, salt, olive oil, rapid-rise yeast, and flour. It’s surprisingly easy to whip up, and you can cook it in a skillet over an open fire.
  • Caramelized Onions on the Grill. Caramelized onions are mouthwateringly, incredibly good. Even if you don’t enjoy onions, I urge you to give these a try.
  • Dutch Oven Cornbread. Campfire cornbread is always yummy, but this cornbread is especially good, thanks to the green chiles, cheddar cheese, and honey.
