2 1/4 cups Gold Medal™ all-purpose flour
1 2/3 cups sugar
2/3 cup shortening
1 1/4 cups milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla or almond extract
5 egg whites
Chocolate Buttercream Frosting

Steps:

  • Heat oven to 350°F. Grease and flour bottom and sides of rectangular pan, 13x9x2 inches, 2 round pans, 9x1 1/2 inches, or 3 round pans, 8x1 1/2 inches.
  • Beat all ingredients except egg whites and Chocolate Buttercream Frosting in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally.
  • Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pan(s).
  • Bake rectangle 40 to 45 minutes, 9-inch rounds 30 to 35 minutes, 8-inch rounds 23 to 28 minutes or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool rectangle in pan on wire rack. Cool rounds 10 minutes; remove from pans to wire rack. Cool completely.
  • Frost rectangle or fill and frost layers with Chocolate Buttercream Frosting.

12 ounces white chocolate ((melted and cooled to room temperature))
1 cup butter ((softened))
1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • **Melt the white chocolate in advance and allow it to come to room temperature. If it is hot when you add it to the whipped butter, it will melt the butter and the texture of the frosting will be off.
  • Using a stand mixer, beat the butter for 2 minutes until it is almost white in appearance. Drizzle in the white chocolate, mixing and scraping the bowl as needed as you pour it in.
  • Add the powdered sugar and vanilla.
  • Beat the frosting for 2-3 minutes until the frosting is smooth and creamy.

2 cups water
2/3 cup canola oil
2 tablespoons white vinegar
2 teaspoons vanilla extract
3 cups all-purpose flour
1/3 cup plus 1 tablespoon baking cocoa, sifted
2 teaspoons baking soda
1 teaspoon salt
FROSTING:
3-3/4 cups confectioners' sugar
1/3 cup baking cocoa
1 cup butter, softened
1 teaspoon vanilla extract
3 to 5 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., In a large bowl, beat sugar, water, oil, vinegar and vanilla until well blended. In another large bowl, whisk flour, sifted cocoa, baking soda and salt; gradually add to sugar mixture, beating until smooth., Transfer batter to prepared pans. Bake until a toothpick inserted in center comes out clean, 30-35 minutes. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., For frosting, sift confectioners' sugar and cocoa together. In a large bowl, beat butter and vanilla until blended. Beat in confectioners' sugar mixture alternately with enough milk to reach desired consistency. Spread frosting between layers and over top and sides of cake.

This white chocolate buttercream has a nice white chocolate flavor, is smooth, creamy, and, pipes beautifully!

Number Of Ingredients 6

3 sticks (339g) unsalted butter, softened (do not soften in the microwave)
8 ounces (227g) white baking chocolate (I used 2 Ghirardelli Premium Baking Bars)
5 cups (575g) powdered sugar
1 teaspoon (4g) vanilla extract
4 tablespoons (42 g) milk or cream
1/2 teaspoon (3g) salt - optional to cut the sweetness

Steps:

  • Cut/chop the white chocolate into very small pieces, put into a microwave safe bowl and add 4 Tablespoons milk or cream.
  • Microwave for 15 seconds let sit for a minute or two, stir and microwave again 15 seconds letting it sit a minute to soften further, stir. Be careful not to over heat the chocolate. The chocolate will continue to melt as it is stirred. Let the chocolate cool down before using.
  • Beat the butter until softened and smooth, add the powdered sugar 1 cup at a time. Add the white chocolate and milk mixture. Add vanilla. Add another Tablespoon milk if needed. Beat on medium speed for 3 to 4 minutes and it will become smooth and creamy.
  • Makes 5 cups frosting. Makes enough to frost a 2 or 3 layer eight inch cake. If you will be doing a lot of decorative piping, you will need additional frosting.

1/2 cup hot water
4 large eggs ((separated))
1 cup butter ((softened))
1 cup granulated sugar
1 teaspoon vanilla extract
2 3/4 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1 cup buttermilk
12 ounces white chocolate ((melted and cooled to room temperature))
1 cup butter ((softened))
1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • Place the white chocolate (broken into pieces) and hot water in a microwave-safe bowl.
  • Melt the white chocolate in 20 second intervals, stirring between each time, until the chocolate is melted. Set aside.
  • Separate the eggs, placing the egg yolks in a small bowl to set aside for later and place the egg whites in a mixing bowl. Beat the egg whites until they are frothy and hold stiff peaks. Set the frothed egg whites in the refrigerator for later.
  • Preheat the oven to 325 degrees Fahrenheit.
  • In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy.
  • Add in the egg yolks and vanilla. Mix well.
  • Add in the melted white chocolate and mix well.
  • In a small bowl, combine the flour, salt and baking soda.
  • Add the flour mixture to the butter/sugar alternately with the buttermilk, beating and scraping the sides of the bowl as needed between each addition.
  • Carefully fold in the egg whites and mix just until the egg whites are fully mixed in.
  • Grease with shortening and flour two 9" cake pans.
  • Divide the cake batter evenly between the two prepared pans.
  • Bake at 325 degrees Fahrenheit for about 25-28 minutes or until the center of the cake bounces back when you touch it.
  • Allow the cakes to cool for 10 minutes, then turn them out onto a wire rack to cool completely.

  • This cake can be stored at room temperature for 24 hours, then refrigerate any leftovers.

1/2 cup sour cream

1/4 cup cocoa
dash salt
1/4 cup milk
3 1/2-4 cups powdered sugar
1 tsp vanilla extract

Steps:

  • Bring butter and water to a boil in a medium sized saucepan. While mixture is boiling, whisk together the flour, sugar, and salt in a large mixing bowl. Pour hot mixture over dry ingredients and beat well. Whisk together baking soda, sour cream, eggs, and flavorings in a small bowl. Add to mixing bowl and beat till smooth.
  • Pour into a well greased 10"x15" sheet pan with sides. Bake at 375° for about 20 minutes or until a toothpick comes out clean.
  • Bring butter, cocoa, salt, and milk to a boil in a small saucepan. It may appear curdled- that's fine. While mixture is boiling, measure 3½ cups of the powdered sugar into a mixing bowl. Pour boiling chocolate mixture over powdered sugar. Beat till smooth and add vanilla. Add more powdered sugar if needed. Pour over cake after it has cooled for about 5 minutes.

1 cup pecans, chopped toasted
2 1/4 cups sugar
1 1/2 teaspoons baking soda
4 ounces white chocolate
11 ounces cream cheese, softened
5 tablespoons unsalted butter, at room temperature
1 1/2 cups sifted powdered sugar
1 1/2 teaspoons vanilla extract

Steps:

  • Cake: Preheat oven to 350 degrees. Grease and flour three 9-inch round cake pans. Melt butter in a medium saucepan. Add water. Bring to a boil over medium heat, stirring occasionally. Remove from heat. Add chocolate, stirring until it melts. Stir in buttermilk, eggs, and vanilla. Set aside. Combine 1/2 cup flour and pecans, stirring to coat. Set aside. Combine remaining 3 cups flour, sugar, and baking soda in a large bowl. Gradually stir in chocolate mixture. Fold in pecan mixture. (Batter will be thin.) Pour batter into prepared pans.   • White Chocolate Frosting: Melt chocolate in top of a double boiler over low heat, stirring constantly. Remove from heat. Set aside to cool, about 10 minutes. Beat cream cheese and butter. Gradually add chocolate, mixing constantly, until blended. Slowly mix in powdered sugar until smooth. Add vanilla. Mix until blended.
  • Spread frosting on tops of two layers then stack layers on a serving plate. Use wooden picks to stabilize the two layers. Add third layer. Frost top and sides of cake. Refrigerate until ready to serve.

4 (1 ounce) squares white chocolate, melted
1 (8 ounce) package cream cheese, softened

6 ½ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 or 9 inch round cake pans. Stir together 3 cups flour, white sugar, and soda. Set aside.
  • Combine 1 1/2 cup butter and water in a medium saucepan. Bring to a boil over medium heat, stirring occasionally. Remove from heat, and add 4 ounces white chocolate. Stir until chocolate melts.
