BRIE CRANBERRY AND CHICKEN PIZZA
A simple pizza using an exotic mixture of chicken, cranberry and brie.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Chop chicken breasts into bite-size pieces. Heat oil in medium skillet until hot. Add chicken and saute until browned and almost cooked through.
- Spread cranberry sauce over the pizza crust. Top with chicken, brie and cover with mozzarella.
- Bake at 350 degrees F (175 degrees C) for 20 minutes.

CABERNET CRANBERRY SAUCE
Making fresh cranberry sauce is not only easy, but it's fun! The sound of those fresh berries "popping" under the simmering liquid is quite mesmerizing. It sure beats the sound of a can opener. The salt and cayenne may seem like odd ingredients, but just a dash of each will really brighten the flavors of this great fresh cranberry sauce. Steps:
- Add the sugar to a sauce pan. Pour in the orange juice, wine, zest, cinnamon stick and spices. Bring that up to a simmer on medium heat. When it's simmering, add the cranberries. Bring back up to a simmer, and the berries will start to "pop." Simmer for about 10-12 minutes. The sauce will start to thicken and the berries will have all popped and collapsed.
- Add a 1/4 cup of cold water and turn off the heat. Don't worry if a couple berries didn't pop, as they will break down as the sauce is cooled and stirred. Take out the cinnamon stick. As the sauce cools it will get very thick. Cool to room temperature, stir, and refrigerate until needed. This will keep for several weeks.

- Preheat oven to 450°. Place crust on an ungreased baking sheet., In a small bowl, mix cranberry sauce and orange zest; spread over crust. Top with mozzarella cheese, turkey, onion and Brie cheese; sprinkle with rosemary. Bake 10-12 minutes or until cheese is melted.

- COOK CHICKEN Heat oil in a large frying pan on medium-high. Season chicken all over with salt and pepper and add to pan. Stir fry until browned and cooked through (about 5 minutes). Remove from heat.
- MAKE PIZZAS Preheat oven to 220ºC (430ºF) bake and line two oven trays with baking paper. Place a pizza base on each tray.
- Spread 2 tablespoons cranberry jelly on each pizza base. Arrange chicken on top. Thinly slice red onion. Slice camembert into strips, then chop each strip into 3 pieces. Scatter onion and camembert on the pizzas. Sprinkle with grated cheese to finish.
- Place pizzas in oven and bake for 10 minutes. Switch the position of the trays and bake for a further 8-10 minutes, until cheese is golden and bases are crisp around the edges.
