- Preheat a griddle, or you can use a grill.
- Cover a serving dish with lettuce leaves and set aside.
- Griddle or grill the steak; it should be rare, really, but obviously cook it as you prefer. When it's done, remove to a board on which to carve it and pour any juices in the grill pan into a bowl.
- Cut the steak into very thin slices across and put it and any more of the juices that run out into the bowl as well.
- In another bowl, mix the fish sauce, lime juice, sugar, chopped chilli and sliced shallot, stirring well.
- Then mix the contents of the two bowls together, adding the mint leaves and quickly turn out on the lettuce and serve while still warm.

- Place tripe and beef lung in a soup pot, cover with water and cook 15 minutes. Drain and rinse, cut into bite-size pieces. Cut beef into thin slices. Combine the beef lung, tripe and beef into a large mixing bowl. Add kroeung, salt, tamarind juice, and chicken stock powder to the meat mixture. Mix well.
- Transfer the meat/kroeung mixture into a large soup pot, and cover it with water. Cover the pot and let it cook to a boil. Once it boils over, lower the heat to a simmer (medium-low). When the meat is tender, add water spinach stalk and celery. Adjust the taste to suit your palate – add sugar if you want a bit of sweetness ( I don't use sugar in mine), more prahok or fish sauce for a saltier taste, more tamarind juice for tartness. Once everything is cooked, add the water spinach leaves and basil leaves. Turn off the heat right away as you don't want to overcook the leaves. Most families don't add the water spinach leaves, but we do, since I like the taste of it, and it's wasteful to not use everything.

- Marinate the steak with 1 tbsp of soy sauce and black pepper, set it aside for 15 minutes or longer.
- Heat a gas or charcoal grill, grilling pan or in my case, a cast iron grill over high heat until very hot. Lower to medium-low heat and grill to desired doneness, 5-6 minutes per side for medium-rare. Transfer to a bowl and let rest for at least 10 minutes.
- Meanwhile, let's make the sauce. Cut the lemongrass stalk into thin slices. Pile the sliced lemongrass together and place a piece of pahok on it. Chop the pahok and lemongrass together. I like pahok in my recipe because it gives it that umami taste without using msg. I usually only use 1 small piece of pahok but if you prefer more, you can put more depending on your preference. Transfer it into a small bowl. Add the rest of the sauce ingredients: salted crab juice, palm sugar, fish sauce, lime, chopped garlic, bird eye chilies and hot water, mix it well.
- Place the papaya into a mortar, add half of the sauce to the papaya and pound a few times just to soften the papaya. Use a spatula to turn the papaya and sauce mixture a few time in between the pounding in order to really mix the sauce in well. Scrap the papaya and sauce from the mortar and place it into a large mixing bowl. Set it aside for now.
