CALIFORNIA CASSEROLE



California Casserole image

Rice casserole with chiles, cheese and sour cream. Very adaptable to ad-ins. Great for a make ahead dish or a potluck. YUM!

2 cups chicken stock
¾ cup uncooked long grain rice
2 cups sour cream
2 (4 ounce) cans diced green chiles
½ cup chopped green onions
½ teaspoon salt
black pepper to taste
4 cups shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 1 1/2 quart casserole dish.
  • Bring chicken stock to a boil in a saucepan over medium heat. Add rice, reduce heat to low, and cook until the liquid is absorbed, about 20 minutes. In a medium bowl, mix together the sour cream, green chilies, green onion, salt and pepper. Set aside.
  • Spread half of the rice into the bottom of the prepared pan. Spread with half of the sour cream mixture, and then half of the cheese. Repeat layers ending with cheese on top.
  • Bake uncovered for 45 to 50 minutes in the preheated oven, or until the cheese is melted and bubbly. Let stand for 5 minutes before serving.

SUSHI RICE AND CALIFORNIA ROLLS RECIPE



Sushi Rice and California Rolls Recipe image

A tutorial on how to make the perfect sushi rice and a recipe for legitimate California rolls :)

2 cups Japanese short or medium grain rice
2 1/2 cups cold water
5 Tbsp Sushi Vinegar
4 Tbsp Rice vinegar
2 Tbsp sugar
2 tsp salt (I used sea salt)
1/2 lb Imitation crab meat (p.s. the "log" shaped crab meat is the easiest to work with)
1 Avocado (ripe but still firm)
1/2 medium cucumber (peeled and sliced into long julienne strips)
Toasted Nori Seaweed
Toasted sesame seeds
A sushi rolling mat ($2 at Cost Plus World Market If you don't have a sushi mat, try using parchment paper instead.)
Soy sauce (regular or low sodium)
Wasabi paste or wasabi powder
For spicy mayo: Mayonnaise (~1 Tbsp and Sriracha hot chili sauce (~1 tsp) or to taste)

Steps:

  • Wash the rice with cold water until the water runs clear. Drain well. If you have a rice maker (way easier!), follow rice maker instructions and cook on the white rice setting then skip to step #4
  • Put drained rice in a heavy sauce-pan and add 2 cups cold water. Cover tightly and set the pan over high heat and bring to a boil. Once it boils, reduce heat to medium and let cook covered until all the water is absorbed (7-8 min). Do not remove the cover to check, but listen for the bubbling to stop.
  • Once you hear a faint hissing sound, reduce the heat to very low and cook another 6 min. Remove from the heat and let stand 15 min covered. This is the basic white rice eaten with japanese meals.
  • Transfer the hot rice to a large bowl and break it up to get rid of all the hot clumps.
  • Let the rice cool down until it is just warm, then stir in your cooled sushi vinegar
  • Wrap your sushi matt in plastic wrap before using it (this makes it re-useable and you don't even have to wash it!).
  • Fold the pieces of nori in half to split them.
  • Toast your sesame seeds over medium heat, stirring constantly until golden. Slice up your veggies.
  • Spread a generous handful of sushi rice onto the 1/2 sheet of nori. Use your WET FINGER TIPS (keep your hands wet to prevent sticking) to spread the rice evenly over the entire surface of the nori.
  • Flip the rice covered piece of nori over so the rice is facing down (this way, your rice will be on the outside). Place your fillings across the center of your rice in the middle of the sheet (don't overfill or the roll won't seal).
  • Start rolling away from you using your matt to firmly keep the roll in place. Apply some pressure to make a tight roll. If its not tight enough, it will be difficult to cut. Once the roll is complete, sprinkle the roll with toasted sesame seeds while it is still on the mat so you can turn it easily.
  • Run your sharp knife through a damp paper towel before slicing so the rice won't stick as much. Cut the roll in half, then line the two halves up and slice even 1-inch rings. I have found that it slices easier when you slice quickly.

Back in the 1920s, my great-aunt Mable lived with her four children in an old World War I army tent. She had to be creative in her cooking, and this was one dish she relied on.

4 bacon strips, diced
3/4 cup chopped onion
2 tablespoons olive oil
1 cup uncooked long grain rice
1 can (14-1/2 ounces) beef broth
1 cup diced green pepper
1 cup diced sweet red pepper
1 can (14-1/2 ounces) stewed tomatoes

Steps:

  • In a large skillet, cook bacon until crisp; remove to paper towels. Drain, reserving 2 tablespoons drippings. In the drippings, saute onion until tender. Remove and set aside. , In a small skillet, heat oil over medium heat. Add rice; cook and stir until golden brown. Reduce heat; stir in broth. Cover and simmer for 20 minutes. Stir in the bacon, onion, peppers and tomatoes. Cover and simmer 25-30 minutes longer or until rice is tender and most of the liquid is absorbed.

1 c chopped onion
1/4 c (1/2 stick) butter
4 c cups cooked white rice
2 c sour cream
1 c cottage cheese
1 bay leaf
1/2 tsp salt
1/8 tsp pepper
3 small cans green chiles, drained
2 c sharp cheddar cheese, grated
chopped parsley

Steps:

  • 1. In a large skillet, saute onion in butter until golden. Remove from heat and stir in rice, sour cream, cottage cheese, bay leaf, salt and pepper. Lightly mix.
  • 2. Layer half the rice mixture in a buttered 9x13-inch baking dish, then half the chiles, and sprinkle with 1 cup of the cheese. Repeat layers.
  • 3. Bake in a preheated 375-degree oven for 30 minutes. Sprinkle with the chopped parsley and serve.

1 pint sour cream

  • Bake 25 minutes at 325 degrees or microwave until heated through.
  • Can be assembled the day before (tastes even better).
  • Or can be frozen before baking.
  • Defrost before baking.

2 cups sour cream
1 cup diced onion
1 -2 garlic clove, minced
4 tablespoons butter
4 cups cooked rice
1 cup cottage cheese
2 (4 ounce) cans green chilies
4 cups shredded cheddar cheese
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Grease bottom of 9" x 13" casserole dish with butter or cooking spray.
  • Melt butter in skillet over medium heat. Saute onions in butter until very soft, stirring constantly. Add garlic during last two minutes of cooking.
  • In large bowl combine cooked rice, onion/garlic/butter mixture, sour cream, cottage cheese, chilis, salt and pepper.
  • Layer half the rice mixture in bottom of casserole dish and top with half of shredded cheese. Repeat with remainder of rice mixture; top with remainder of cheese. (If making ahead of time, cover with plastic wrap after everything is assembled and refrigerate up to a day. Remember to let your dish come to room temperature before you place it in the oven.).
  • Bake for 30 - 40 minutes or until cheese is bubbly.

1/2 pkg. refrigerated pie dough (for 1 crust)
1 small zucchini (chopped into 1 inch cubes)
1 cup onion (chopped)
1/2 large red bell pepper (diced)
1 cup mushrooms (sliced)
6 ounces artichoke hearts (drained (reserve 3 tablespoons of the marinade))
1 cup Monterey Jack cheese
4 large eggs
1 1/2 cups half and half
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon fresh oregano (chopped)

Steps:

  • Make pie dough and line a 10-inch tart pan or deep dish pie plate. Refrigerate until ready to assemble the quiche.
  • Preheat the oven to 425 degrees.
  • Add the 2 tablespoons of reserved artichoke marinade (liquid from the can) to a large skillet along with the chopped onion, bell peppers, and mushrooms. Sauté veggies over medium high heat for 2 - 3 minutes.
  • Add another tablespoon of the artichoke marinade to the skillet and stir in the chopped zucchini. Continue cooking for about 5 minutes, or until the zucchini begins to soften.
  • Layer the cooked veggies on top of the prepared pie crust, then top with the drained artichoke hearts. Sprinkle evenly with Monterey Jack cheese.
  • Whisk together the eggs, half and half, salt, and pepper; pour over cheese. Sprinkle with fresh oregano (or 1/2 teaspoon dried oregano).
  • Bake at 425 degrees for 15 minutes. *
  • Reduce the oven temperature to 350 degrees and continue baking 20 minutes or until set. Cool for 15 minutes before serving.

1 pound sliced mixed mushrooms
2 red bell peppers, cut into strips
1 medium zucchini, halved lengthwise and sliced
1/4 cup walnuts, roughly chopped
1 clove garlic, finely chopped
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 15-ounce can low-sodium cannellini beans, drained and rinsed
1 1/2 tablespoons fresh lemon juice
1/2 cup chopped fresh parsley
5 cups frozen brown rice (or prepared brown rice)
1 cup sprouts (optional)

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 425 degrees F. Combine the mushrooms, bell peppers, zucchini, walnuts, half of the garlic, 2 tablespoons olive oil, 1/2 teaspoon salt, and pepper to taste in a bowl; toss, then divide between 2 rimmed baking sheets. Roast, stirring once or twice, until the vegetables are tender and browned in spots, about 25 minutes.
  • Meanwhile, combine the beans, the remaining garlic, the lemon juice, the remaining 1 tablespoon olive oil, 1/2 teaspoon salt and 1/3 cup water in a blender; puree until smooth. Add the parsley and pulse until just combined.
  • Heat the brown rice as the label directs. Divide among plates and top with the roasted vegetables, bean puree and sprouts.
