BBQ CHICKEN PIZZA
A topping of spicy barbeque sauce, diced chicken, cilantro, peppers, and onion all covered with cheese, and baked to bubbly goodness! This is similar to a recipe I had at a popular pizza place in California. My family LOVES it!

Steps:
- To make BBQ Chicken: In a large frying pan, cook the chicken in olive oil over medium-high heat until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through.
- Once chilled, coat the chicken with 2 tablespoons BBQ sauce; set aside in the refrigerator.
- To make the pizza: Place the pizza stone in the center of the oven and preheat to 500 degrees F for one hour before cooking pizzas.
- Use a large spoon to spread ¼ cup BBQ sauce evenly over the surface of the prepared dough within the rim. Sprinkle 1 tablespoon smoked Gouda cheese over the sauce. Cover with ¾ cup shredded Mozzarella. Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces). Place approximately 18 to 20 pieces of red onion over the surface. Sprinkle an additional ¼ cup Mozzarella over the top of the pizza.
- Transfer the pizza to the oven; bake until the crust is crisp and golden and the cheese at the center is bubbly, 8 to 10 minutes. When the pizza is cooked, carefully remove it from the oven; sprinkle 1 tablespoon cilantro over the hot surface. Slice.

Steps:
- Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
- Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
- Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
- While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
- Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

Steps:
- Cut the chicken into pieces about ½-inch thick. (Too thin and it will dry out.) Mix the chicken with half of the barbecue sauce and chill. Dissolve yeast and sugar in ¼ cup water. In a bowl, combine remaining ¾ cup water with 2 cups of flour and salt. When yeast bubbles, add to flour mixture. Stir and turn out onto a floured board. Let dough stand while you clean bowl. Coat inside of bowl with olive oil. Knead dough 10 minutes, adding flour as necessary to make it silky. Return to bowl, cover with 2 tight layers of plastic wrap, and let rise in a warm place for 2 to 3 hours or until double in size. Punch down dough and flatten on a well-floured board. Pound dough with heel of hand and lift to stretch it, methodically working dough into a circle about 14 inches in diameter. Sprinkle peel (a wooden pizza paddle) with cornmeal and place dough on it. Sprinkle cornmeal on pizza stone; put in oven. Preheat to 500°F. Spread the other half of the barbecue sauce across the dough, leaving a ½-inch un-sauced border. Sprinkle half the mozzarella over the sauce. Spread out the hoops of onion. Add the chicken, then the remaining mozzarella and the Gouda cheese. Transfer pizza to baking stone in oven. Bake 10-12 minutes. Kitchen Counter to 4. Makes 1 14-inch pizza.
