Yield Makes about 5 dozen 3-inch cookies

Number Of Ingredients 13

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup vegetable shortening
1 cup granulated sugar
1 cup packed light brown sugar
3 large eggs
1 teaspoon vanilla
2 cups quick-cooking rolled oats
2 cups Special K cereal
12 ounce bag milk-chocolate chips
1 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350°F.
  • Sift together flour, baking soda and powder, and salt. Beat together shortening, sugars, eggs, and vanilla with an electric mixer until light and fluffy. Beat in flour mixture on low speed until just combined. Stir in oats, cereal, chips, and coconut.
  • Drop rounded tablespoons of batter 2 inches apart on greased baking sheets.
  • Bake cookies, 1 sheet at a time, in middle of oven until golden brown, 15 to 18 minutes. Cool cookies on sheets 1 minute, then transfer to a rack to cool completely.

Number Of Ingredients 12

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups quick-cooking oats
2 cups crisp rice cereal
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats, cereal and coconut., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 7-9 minutes. Remove from pans to wire racks to cool.

I used to love these cookies as a kid, still do.. I made these for my husbands last deployment and sent them in a care package and they held up really nicely as well... This is one of my grandmas recipes she had not sure were she got it but they are good.

Steps:

  • Cream shortening and gradually add sugars. Add milk, eggs and vanilla. Add sifted dry ingredients, oats, coconut and corn flakes. Mix well. Drop by tsp on cookie sheet. Bake 350 for about 10 min

  • Bake until edges of cookies are just beginning to brown, 10 to 12 minutes, switching and rotating sheets halfway through baking. Let cookies cool on sheets for 5 minutes, then transfer to wire rack. Let cookies cool completely before serving. (Cooled cookies can be stored in zipper-lock bag at room temperature for up to 5 days.)
