CALIFORNIA CHICKEN FLATBREAD

Yield 4 servings

Number Of Ingredients 12

1 large or 2 small flatbread or naan
2 tablespoons olive oil, divided
½ cup shredded mozzarella cheese
1 boneless skinless chicken breast, pounded to ½ inch thickness
½ teaspoon each salt and fresh cracked black pepper
2 slices cooked bacon, cooked and chopped
½ avocado, sliced or diced
½ red pepper, diced
1 tablespoon packed cilantro leaves, roughly chopped
½ teaspoon crushed red pepper flakes (optional)
2 tablespoon ranch dressing
½ teaspoon chipotle seasoning

Steps:

  • Preheat oven to 350 degrees. Season chicken with salt and pepper. Heat 1 tablespoon olive oil in skillet. Add chicken and cook over medium-high heat for about 3-4 minutes on each side or until cooked through. Dice chicken and set aside.
  • Brush flatbread with remaining tablespoon of olive oil. Sprinkle with shredded cheese. Top with chicken, red peppers, and bacon. Place on foil and bake on the oven rack for 10 minutes until cheese is completely melted.
  • While flatbread is baking, whisk together ranch dressing and chipotle seasoning. Remove flatbread from oven, top with avocado, cilantro, and crushed red pepper flakes. Drizzle with chipotle ranch dressing and serve immediately.

1 large flatbread or naan (or 2 small, (I used Stonefire brand- my favorite!))
2 tablespoons olive oil
½ cup shredded mozzarella cheese ((or any other favorite cheese such as monterey jack or pepperjack for a spicier version))
1 boneless skinless chicken breast (pounded to ½ inch thickness )
salt and pepper (to taste)
2-3 slices cooked bacon (chopped)
½ avocado (sliced or diced )
½ red pepper (diced )
1 tablespoon packed cilantro leaves (roughly chopped)
½ teaspoon crushed red pepper flakes ((optional))
¼ cup ranch dressing
1 teaspoon chipotle seasoning ((see note))

Steps:

  • Preheat oven to 350 degrees. Season chicken with salt and pepper to taste. Cook in a pan or skillet on the stove over medium-high heat for about 3-4 minutes each side or until cooked through. Dice chicken and set aside.
  • Brush flatbread with olive oil. Sprinkle with shredded cheese. Top with chicken, red peppers, and bacon. Place on a lightly greased sheet of foil and bake on the oven rack for 10-15 minutes until cheese is completely melted.
  • While flatbread is baking, whisk together ranch dressing and chipotle seasoning. When flatbread is finished baked, top with avocado, cilantro, and crushed red pepper flakes. Drizzle with chipotle ranch dressing and serve immediately.

4 slices bacon, chopped
3 plum tomatoes, sliced
Extra-virgin olive oil, for brushing
1 pound store-bought pizza dough, at room temperature
6 ounces goat cheese, crumbled
Kosher salt and freshly ground pepper
1 1/2 cups radish sprouts
3 cups baby arugula
Juice of 1/2 lemon

Steps:

  • Preheat the oven to 475 degrees F. Cook the bacon in a large skillet over medium heat until crisp, about 10 minutes. Remove with a slotted spoon and drain on paper towels. Add the tomatoes to the drippings in the pan and cook, turning once, until slightly softened, about 2 minutes.
  • Brush a large rimmed baking sheet with olive oil. Stretch the pizza dough to fit the pan (if the dough shrinks back, let it rest a few minutes before continuing). Prick the dough all over with a fork. Top with the tomatoes, reserving the bacon drippings. Bake until the crust is golden brown, 12 to 15 minutes.
  • Remove the flatbread from the oven; top with the goat cheese. Season with salt and pepper. Toss the sprouts and arugula with 1/2 tablespoon of the reserved bacon drippings (rewarm, if necessary), the lemon juice, and salt and pepper. Top the flatbread with the greens and bacon.

1 (1 pound) loaf frozen bread dough, thawed
⅓ cup Alfredo sauce
1 (8 ounce) package shredded mozzarella cheese, divided
½ cup sliced fresh mushrooms
3 slices bacon, cooked and crumbled

Steps:

  • Marinate chicken breast in Italian dressing for 10 minutes.
  • Slice chicken thinly across the grain into pieces the width of thick bacon.
  • Cut bread dough into 2 equal pieces. Roll dough into 9-inch circles.
