Easy Homemade Chicken and Dumplings image

A classic favorite -- chicken and dumplings. The secret to dumplings is cook them COVERED and not to cheat by peeking!

2 tablespoons butter
1 large yellow onion, chopped
2 cloves garlic, minced
1 pound boneless chicken thighs
1 cup low-sodium chicken broth
1 (10 ounce) package frozen mixed vegetables
½ teaspoon dried sage
½ teaspoon dried thyme
1 ½ cups self-rising flour
3 tablespoons chopped fresh parsley
3 tablespoons shortening
⅔ cup buttermilk

Steps:

  • Melt butter in a large saucepan or pot over medium heat. Saute onion and garlic for 5 minutes, then stir in chicken and saute until browned, about 7 to 10 minutes. Stir in broth, vegetables, sage and thyme; mix all together and let simmer over medium heat while preparing the dumplings.
  • In a medium bowl, mix flour and parsley together. Add shortening and stir mixture into a coarse, mealy dough. Stir in buttermilk, a little bit at a time, until dough holds together and is soft but firm. (If needed, add up to 2 tablespoons more buttermilk).
  • Bring chicken mixture to a boil over medium high heat and drop round spoonfuls of dumpling mixture on top (do not let dumplings touch each other). Reduce heat to low, cover pot and let simmer for 10 to 12 minutes.

This easy recipe for Chicken and Dumplings is the ideal comfort food. A hearty recipe that uses roasted chicken, fluffy buttermilk and chive dumplings that's both simple to make and shockingly easy to lose yourself in for a moment or two.

1 cup all-purpose flour
1 egg (beaten)
2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoon chives (chopped)
1/2 cup buttermilk
1 tablespoon olive oil
1 large onion (chopped)
1 large carrot (chopped)
1 stalk celery (chopped)
1/2 teaspoon thyme (dried)
4 cups chicken broth
1/3 cup all-purpose flour
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1/2 cup peas (frozen)
2 cups roasted chicken (shredded (any part of the chicken will do, both white and dark meat would be great for flavor))

Steps:

  • In a large Dutch oven add the olive oil and heat over medium-high heat. Add the chopped onion, carrot and celery to the pot and cook for about 5 to 7 minutes until the onion sweats and becomes translucent. Add thyme to the pot and the 4 cups of chicken broth.
  • In a small bowl whisk the flour with a ladle of the broth from the pot then pour back into the pot and whisk making sure there are no lumps. Stir in the frozen peas and the shredded chicken. Season with salt and pepper and cook for 5 minutes.
  • While the broth is cooking, prepare the dumplings. In a bowl whisk together all the dumpling ingredients, making sure not to overmix, if you overmix the dumplings will turn out too dense.
  • Drop dumpling batter using a spoon into the thick broth. Make sure you don't take too much batter at once because the dumplings will double in size while they cook, so make them as big or small as you wish.
  • Cover the pot and simmer for about 15 to 20 minutes or until the dumplings are cooked. Make sure you don't peek while the dumplings are cooking, because they need to steam in order for them to cook and be nice and fluffy, lifting the lid will release the steam. After about 15 minutes use a toothpick to test if the dumplings are cooked through.

3 cups chopped cooked chicken breast
2 eggs
4 ¾ cups chicken broth, divided
1 cup all-purpose flour
¼ cup chopped fresh parsley
2 teaspoons salt
⅛ teaspoon black pepper
½ teaspoon dried tarragon
¼ cup butter
2 cups chopped onion
1 ½ cups thinly sliced celery
2 cloves garlic, minced
½ cup all-purpose flour
2 quarts chicken broth
1 ½ teaspoons salt
1 ½ cups chopped carrots
3 cups chopped cooked chicken breast

Steps:

  • In a blender or food processor, combine 3 cups cooked chicken, eggs, 3/4 cup chicken broth, 1 cup flour, parsley, 2 teaspoons salt, pepper and tarragon. Process until smooth.
  • In a large pot, bring 4 cups chicken broth to a boil. Drop dumpling mixture by rounded spoonfuls into boiling broth. Simmer, uncovered, 5 to 8 minutes, until well formed and slightly browned. Remove with a slotted spoon and drain on paper towels. Reserve dumpling cooking liquid.
  • In a large pot melt butter over medium heat. Cook onion, celery and garlic in butter until onion is translucent. Stir in 1/2 cup flour until fully incorporated. Pour in 2 quarts chicken broth, stirring constantly. Bring to a boil. Introduce 1 1/2 teaspoons salt and carrots. Cover, reduce heat, and simmer 15 minutes.
  • Stir in dumplings, reserved liquid and 3 cups cooked chicken. Simmer 15 minutes more before serving.

Tired of super salty, quick-prep chicken and dumplings, my hubby and I set out to create a simple homemade version. In 2004 we came up with this, and we've been making it (to rave reviews from guests) ever since! Straight forward and simple, the trickiest part is remembering to put the flour and milk in AND remove the Bay Leaf. We hope you enjoy this "comfort food" as much as we do!

1 1/2 lbs chicken, boneless skinless breasts, cut into one-inch cubes
2 garlic cloves
2 tablespoons oil
3 cups vegetable broth (or water)
2 teaspoons chicken bouillon
1 teaspoon salt
1/4 teaspoon pepper, freshly cracked
1 bay leaf
1/2 onion, chopped
4 stalks celery, sliced
5 carrots, sliced
optional chopped fresh broccoli
optional 3 Tablespoons, fresh snipped parsley
optional corn (fresh or frozen)
1/3 cup flour
1/2 cup milk
14 ounces Pillsbury Grands refrigerated buttermilk biscuits (8 biscuits)

Steps:

  • Heat oil in Dutch oven (or a nice big pt that you have a lid for) on medium high heat, add cubed chicken and garlic. Stir; cooking until chicken is white.
  • Add broth, bouillon, salt, pepper, bay leaf, and fresh vegetables to create a stew. Bring to a boil.
  • Reduce heat on stew; simmer on low, covered, 30 minutes, or until chicken and vegetables are tender.
  • While stew simmers, open biscuits and set out on a plate (to rise) or make your own biscuits.
  • In separate container, mix flour and milk. After 30 minutes of simmering, remove bay leaf from broth, then whisk flour and milk into broth on stove. Stir well.
  • Add biscuits to top of stew. Cover and continue cooking on low heat 15 minutes.
  • Let stand a few minutes before serving.
  • VARIATION: Make homemade or Biquick biscuits instead of canned.

8 skinned and boned chicken thighs
4 cups all-purpose baking mix, divided
1 teaspoon paprika
1 teaspoon ground red pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon poultry seasoning
1/4 teaspoon freshly ground black pepper
Dash salt
2 tablespoons vegetable oil, divided
3 (14.5-ounce) cans chicken broth, divided
1/4 (1.41-ounce) box coriander and annatto seasoning (2 packets)
2/3 cup milk

Steps:

  • Rinse chicken with cold water; pat dry. Combine 2 cups baking mix, paprika, and next 6 ingredients in a large zip-top freezer bag. Add chicken thighs, 1 at a time; seal bag, and shake to coat.
  • Heat 1 tablespoon oil in a 6-quart Dutch oven over medium heat. Add half of chicken, and cook 5 minutes on each side or until golden brown; remove chicken. Repeat procedure with remaining oil and chicken.
  • Add 1/2 cup chicken broth to drippings in pan, stirring to loosen browned bits from bottom.
  • Return chicken to pan; stir in remaining broth and 2 seasoning packets. Bring to a boil; cover, reduce heat, and simmer 25 minutes.
  • Combine milk and remaining 2 cups baking mix in a medium bowl, stirring just until moistened. Drop dough by tablespoonfuls onto simmering chicken mixture; cook, uncovered, 10 minutes. Cover, and cook 10 more minutes. Serve immediately.

This stew is definitely in the "comfort foods" category. Grandma made it almost every Sunday for the family dinner. (Grandpa had a chicken farm.) I actually think my version is better. The addition of the frozen vegetables add color and you can add as many as you want to.

1 large chicken, cut into pieces,visible fat removed
2 stalks celery, sliced,leafy part too
1 large onion, chopped
2 parsnips, peeled and sliced (optional)
1/2-1 teaspoon seasoning salt (I like Lawrys)
1/2 cup minced Italian parsley
2 cups frozen mixed vegetables (I like the kind with peas, beans, carrots, and small lima beans)
2 tablespoons flour
water, to cover an inch
1 3/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons minced parsley
2 tablespoons green onions or 2 tablespoons regular onions
1/4 teaspoon dried thyme (optional)
1/4 teaspoon dried marjoram (optional)
2/3 cup milk
1 egg

Steps:

  • Place chicken, celery, onion, parsley, parsnips in a large Dutch oven and cover with water.
  • Bring to a boil and lower heat to medium low, just hot enough to maintain a slow simmer.
  • When chicken is tender, remove the chicken to a bowl.
  • Whisk the flour into about 1/2 cup of the chicken broth from the pot.
  • When smooth, return to the pot, stir and heat to thicken.
  • Add seasoning salt to your taste.
  • When the gravy tastes just right, return the chicken and add the frozen vegetables to the pot.
  • Prepare the dumplings: Sift flour, baking powder, and salt together.
  • Stir in parsley, chives; thyme and marjoram if you're using them.
  • Beat the milk and egg together and add to the dry ingredients.
  • Stir with a fork just until mixed.
  • Don't beat or handle too much.
  • Bring chicken and gravy to a simmer.
  • Drop heaping tablespoons of the dumpling batter all over the surface of the stew.
  • Replace cover and steam for about 10 minutes.
  • If you have more batter than you have room, make a second batch.
  • Don't overcrowd the dumplings.
