CALICO BEAN CASSEROLE

Kidney beans, baked beans and butter beans are combined with ground beef, bacon and onion and baked. It's thick, hearty, and pretty tasty too! This can also be done in a slow cooker.

1 (15 ounce) can kidney beans, undrained
1 (16 ounce) can baked beans with pork
1 (15 ounce) can butter beans, undrained
½ cup ketchup
2 teaspoons white vinegar
1 tablespoon dry mustard
¾ cup packed brown sugar
1 pound lean ground beef
4 ounces bacon, chopped
½ cup chopped onion
salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, fry the ground beef, bacon and onion together until ground beef is no longer pink. Drain fat.
  • In a large mixing bowl, combine the kidney beans, baked beans with pork and butter beans. Stir in the ketchup, white vinegar, dry mustard, brown sugar and cook beef mixture. Mix thoroughly, adding salt and pepper to taste.
  • Pour the bean and meat mixture into a 9x13 inch baking dish. Bake in preheated oven for 30 to 40 minutes.

American Goulash, Aka Calico Casserole image

American goulash is usually referred to in the midwestern and southern United States as simply "goulash". In the Inland Northwest around Spokane, it is a common school and home dish simply called "macaroni hamburger and tomato". It has also been called American Chop Suey. Whatever you call it, it is a tasty and inexpensive one-dish meal that lends itself to variations.

2 cups macaroni
1 lb lean ground beef
1 cup celery, chopped
1 cup onion, chopped
1 cup red bell pepper, chopped
1 cup frozen peas
1 cup frozen corn
2 teaspoons garlic, minced
1 (14 1/2 ounce) can tomato sauce
1/2 cup water
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon rosemary, crushed
1 teaspoon marjoram
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper

Steps:

  • Cook macaroni according to package directions. Drain.
  • Brown ground beef with celery, onion, and pepper. Drain accumulated grease.
  • Add remaining ingredients. Cook, stirring frequently, until vegetables are cooked to your liking.
  • If serving this as American Goulash, stop here. You're done.
  • For Calico Casserole, turn into a 3-quart casserole, and top with shredded cheese. Bake at 350 degrees for about 20 minutes, or until cheese is bubbly.
  • Variation 1: Add 1/3 cup sun dried tomatoes in Step 3. You may also need to add another 1/4 cup of water.
  • Variation 2: Substitute 2 cups mixed vegetables for the corn and peas. Or substitute any other vegetables you have on hand.

2 cups cubed peeled potatoes
1 large carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed fully cooked ham
2 tablespoons chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/2 cups 2% milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. , Pour over ham mixture. Sprinkle with bread crumbs. Bake until heated through, 25-30 minutes.

2 cups potatoes, cubed
2 cups cooked ham, cubed
1 (15.25 ounce) can whole kernel corn, drained
¼ cup finely minced fresh parsley
¼ cup butter
1 tablespoon chopped onions
⅓ cup all-purpose flour
1 ¾ cups milk
⅛ teaspoon ground black pepper
4 ounces processed cheese food, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
  • Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
  • Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.

1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
3 cups milk
2/3 cup butter or 2/3 cup margarine
1/2 medium onion, chopped
1/4 lb sharp cheddar cheese, grated
1 lb ham, cubed
1 1/2 cups breadcrumbs
1/4 cup butter or 1/4 cup margarine, melted

Steps:

  • Cook vegetables, drain.
  • Mix flour, seasonings, and 2 cups of the milk.
  • Heat remaining milk; add flour mixture and butter. Cook until thick.
  • Add onion and cheese; heat until cheese melts.
  • Add ham and vegetables.
  • Mix crumbs with melted butter; sprinkle over top of casserole.
  • Bake at 350 degrees for 40 minutes.
