CALI SPRITZ
Jon Santer, the owner of Prizefighter in Emeryville, Calif. created this simple spritz to celebrate the recent arrival of Bruto Americano, an Italian-style bitter aperitivo from St. George Distillery. To keep the drink local, he uses California chardonnay as a mixer. The pleasingly pink drink is well balanced; the easygoing quality of the wine contrasts nicely with the aggressive bite of the Americano.

Steps:
- Add liquid ingredients, in order, to a Tom Collins glass filled with ice. Squeeze grapefruit twist over top of drink, then insert it vertically down side of glass. Serve drink with a straw.

- Winter Aperol Spritz. If you love the classic Aperol spritz, I know you’ll love this wintry version. The secret to this tasty spritz is the addition of Sloe Gin.
- Blackberry Thyme Spritzer. This non-alcoholic spritzer is super fresh and super fruity! I find that herbs and fruit work so well together in drinks (and food).
