Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat olive oil in a large skillet over medium-high heat. Add crushed garlic, and cook for a few seconds until it turns golden brown. Stir in the squid, and cook until it turns white. Pour in white wine and cherry pepper slices; bring to a simmer, and cook until the wine is reduced by half, about 3 minutes.
- Stir cornstarch into the cream, and add to the simmering calamari. Season with red pepper flakes, basil, salt, and pepper; stir until thickened. To serve, toss pasta with sauce, and sprinkle with Parmesan cheese.

- Season the seafood with a sprinkle of salt.
- Melt the butter over medium heat in a large skillet.
- Add the onion and garlic, cook for about two minutes.
- Add the shrimp and cook for 1 minute.
- Add the white wine, mix well and cook over high heat for 1 minute.
- Add the heavy cream and cook until the shrimp are almost done.
- Add the squid and bay scallops, cook for about two minutes or until done, and immediately remove from heat.
- Taste and add salt if needed. Add ground black pepper to taste.
- Mix in the chopped parsley.
- Serve the mixed seafood in garlic sauce immediately. You can serve it as an appetizer with bread. It can also be served as a main dish with rice, fried green plantains, salad, etc.
CALAMARI IN CREAMY WINE SAUCE
If you love calamari, you will LOVE this one! Light, flavorful and super delicious! I sub 1/2 and 1/2 for the cream and still love it as much! The original recipe was for 1/2 pound of pasta but I increase the pasta to 1 pound without increasing the other ingredients because my family doesn't like things as "saucy". If yours does, either 1/2 the pasta or double the sauce!

Steps:
- Holding calamari tube, pull off head and tentacles; set aside. Rinse squid tubes under cold water, rubbing off purplish skin. Pull out and discard "pen" (long clear plastic-like skeleton) from centre of tubes.
- On cutting board, pull off and discard fins from tubes. Cut off and discard eyes and head from tentacles, keeping tentacles attached on ring on top. Squeeze hard beak from centre of tentacles and discard.
- Cut tubes crosswise into 1/2" wide rings; pat dry.
- In saucepan, heat oil over medium heat; cook onion and garlic, stirring occasionally, until softened, about 3 minutes. Add wine and hot pepper flakes; cook for 1 minutes.
- Add tomatoes; bring to a boil. Reduce heat and simmer for 5 minutes.
- Add squid; simmer until tender, about 3 - 5 minutes. Sprinkle with salt.
- Note: fresh tomatoes could be used.but the sauce would need to cook down probably 10 minutes more.

CALAMARI IN WHITE SAUCE
Steps:
- Heat 4 Quarts water over medium high heat, using 6 quart stockpot. Add crumbled boullion cube then fresh pasta when water comes to rolling boil. Cook 5-6 minutes until pasta al dente, then drain under cool water in colander. Reserve. Combine olive oil and butter in large saute pan over medium heat. Toss calamari strips with fish seasoning and add to pan in 2 batches, sprinkling each with half basil, thyme and minced garlic. Saute each batch 4 to 5 minutes, until calamari just firms, be careful not to overcook. Reserve fish but do not drain/clean pan. Lower heat to medium and combine half and half with broth. Stir occasionally, and when warmed through, gradually add dry white wine. Slowly add arrowstarch root/water paste after increasing heat to medium high. Stir frequently until mixture thickens and simmers 2 to 3 minutes more. Add reserved calamari mixture, and gently mix into white sauce. Turn off heat, then serve, first dividing cooked pasta between 4 individual pasta bowls, then ladling on calamari in cream sauce. Finally sprinkle each portion with some of the Parmesan cheese.
CREAMY GARLIC SEAFOOD PASTA
This seafood pasta with creamy garlic sauce is the perfect dinner recipe, whether you need to get dinner on the table fast or impress guests.

- In a large pan, add a splash of oil and allow to heat up.
- Season the seafood with salt and pepper then cook in batches until golden brown.
- The shrimp/prawns should take no more than a minute per side (depending on size) and the calamari and mussels will take only a few minutes to cook. Take care not to overcook the seafood as they will go tough and rubbery. Rather undercook slightly as it will cook a little more while being tossed with the sauce and pasta.
- Remove the seafood from the pan and set aside.
- In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine.
- Bring to a simmer and allow to reduce by half.
- Pour in the cream and allow to come to a simmer. Allow to cook for 5 minutes or until the sauce coats the back of a spoon.
- Add the seafood (and any of its resting juices) and parsley and stir to combine.
- Toss the sauce with cooked pasta and a splash of the pasta cooking water and toss to coat the pasta. Serve sprinkled with parsley.
