A basic scone recipe for tender, moist, butter-y scones that are so quick and easy to make! Perfect as-is with just butter and jam, or you can get creative and add fruit, spices, or chocolate.

2 cups all-purpose flour
1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, cold
1/2 cup heavy whipping cream (cold)

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment.
  • Place the flour, sugar, baking powder, and salt in the bowl of a food processor, and pulse to combine.
  • Cut the butter into pieces, and add to the food processor.
  • Pulse the food processor until the mixture resembles coarse meal.
  • With the food processor running on low speed, stream in the cream.
  • When the dough has gathered itself into a ball, turn off the food processor and divide the dough into two equal portions.
  • Flatten each portion of dough into a disc shape, about 1 1/2-inches thick.
  • Score each disc into 6 triangles with a knife, and pull the triangles slightly away from one another (allowing about 1/2-inch in between).
  • Bake the scones for 14 to 18 minutes, or until set in the centers and slightly golden on the bottoms.

How to Make Perfect Scones image

Use this basic scone dough for any sweet scone variety. See blog post for a couple savory scone options. Feel free to increase the vanilla extract and/or add other flavor extracts such as lemon extract or coconut extract. Read through the recipe before beginning. You can skip the chilling for 15 minutes prior to baking, but I highly recommend it to prevent the scones from over-spreading.

2 cups (250g) all-purpose flour (spoon & leveled), plus more for hands and work surface
1/2 cup (100g) granulated sugar
1/2 teaspoon salt
2 and 1/2 teaspoons baking powder
1/2 cup (1 stick; 115g) unsalted butter, frozen
1/2 cup (120ml) heavy cream or buttermilk (plus 2 Tbsp for brushing)
1 large egg
1 and 1/2 teaspoons pure vanilla extract
1-1.5 cups add-ins such as chocolate chips, berries, nuts, fruit, etc
optional: coarse sugar for topping

Steps:

  • Whisk flour, sugar, salt, and baking powder together in a large bowl. Grate the frozen butter using a box grater. Add it to the flour mixture and combine with a pastry cutter, two forks, or your fingers until the mixture comes together in pea-sized crumbs. See video above for a closer look at the texture. Place in the refrigerator or freezer as you mix the wet ingredients together.
  • Whisk 1/2 cup heavy cream, the egg, and vanilla extract together in a small bowl. Drizzle over the flour mixture, add the add-ins, then mix together until everything appears moistened.
  • Pour onto the counter and, with floured hands, work dough into a ball as best you can. Dough will be sticky. If it's too sticky, add a little more flour. If it seems too dry, add 1-2 more Tablespoons heavy cream. Press into an 8-inch disc and, with a sharp knife or bench scraper, cut into 8 wedges. For smaller scones, press dough into two 5-inch discs and cut each into 8 wedges. To make 10-12 drop scones: Keep mixing dough in the bowl until it comes together. Drop scones, about 1/4 cup of dough each, 3 inches apart on a lined baking sheet. To make mini (petite) scones, see recipe note.
  • Brush scones with remaining heavy cream and for extra crunch, sprinkle with coarse sugar. (You can do this before or after refrigerating in the next step.)
  • Place scones on a plate or lined baking sheet (if your fridge has space!) and refrigerate for at least 15 minutes.
  • Meanwhile, preheat oven to 400°F (204°C).
  • Line a large baking sheet with parchment paper or silicone baking mat(s). If making mini or drop scones, use 2 baking sheets. After refrigerating, arrange scones 2-3 inches apart on the prepared baking sheet(s).
  • Bake for 18-26 minutes or until golden brown around the edges and lightly browned on top. Larger scones take closer to 25 minutes. Remove from the oven and cool for a few minutes. Feel free to top with any of the toppings listed in the recipe Note below.
  • Leftover scones keep well at room temperature for 2 days or in the refrigerator for 5 days.

CINNAMON SCONES

2 cups all-purpose flour (for best results, sift or spoon the flour into the measuring cup)
1/3 cup sugar (white)
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon sea salt
4 ounces butter (cold)
1 large egg (whisked)
1 teaspoon vanilla extract
1/4 to 1/2 cup milk (or buttermilk or half-and-half)

Steps:

  • Heat the oven to 400 F.
  • In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  • Use a pastry cutter to cut in the butter. The mixture is done when it resembles coarse cornmeal.
  • Add the whisked egg and vanilla extract. Do not stir yet.
  • With minimal stirring, mix in just enough milk, buttermilk or half-and-half to make the dough stick together. It will be crumbly and there should still be a little bit of dry flour left in the mixing bowl.
  • Turn the dough out onto a heavily floured cutting board.
  • Knead the dough slightly. When it is done, it should be easy to handle and smooth.
  • Gently pat the dough into two (1-inch thick) discs.
  • Cut each disc into 6 pieces.
  • Transfer the scones to a buttered or parchment-lined baking sheet and bake in the heated oven for 15 to 20 minutes or until lightly golden. Optional: Turn pan halfway through baking.
  • Cool on the baking sheet.

You're best off describing scones to a German by saying that they are like a cross between a Kuchen (cake), a Plaetzchen (cookie), and a Broetchen (roll), but are very unique and not really like anything else found in Germany. My German husband *loves* this recipe: Classic Cream Scones (from Simply Scones, by Leslie Weiner and Barbara Albright)

2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/8 teaspoon salt
1/3 cup unsalted butter, chilled
1/2 cup heavy cream (whipping)
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup currants or 1/2 cup raisins (optional)
1 egg, mixed with 1 teaspoon water for glaze (optional)

Steps:

  • Preheat oven to 425F.
  • Lightly butter a baking sheet. In a large bowl, stir together the flour, sugar, baking powder, and salt. Cut the butter into 1/2-inch cubes and distribute them over the flour mixture. With a pastry blender or two knives used scissors fashion, cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, stir together the cream, egg, and vanilla.
  • Add the cream mixture to the flour mixture and stir until combines.
  • Stir in the currents/raisins (optional). With lightly floured hands, pat the dough into a 1/2-inch thickness on a lightly floured cutting board.
  • Using a floured 2 1/2-inch-diameter round biscuit cutter or a glass, cut out rounds from the dough and place them on the prepared baking sheet. Gather the scraps together and repeat until all the dough is used.
  • Lightly brush the tops of the scones with the egg mixture, if desired.
  • Bake for 13-15 minutes, or until lightly browned.
  • Remove the baking sheet to a wire rack and cool for 5 minutes.
  • Using a spatula, transfer the scones to the wire rack to cool.
  • Serve warm or cool completely and store in an airtight container.
  • Makes about 14 scones.
  • Variation: Add about 1 1/2 teaspoons of grated lemon peel to the dry ingredients.
  • My variation: Classic Scones 280 grams all-purpose flour 65 g granulated sugar 2 teaspoons baking powder 1/8 teaspoon salt 110 g unsalted butter, chilled 6 tablespoons milk 1 large egg 1 teaspoon vanilla sugar 125 g raisins Preheat oven to 220C.

WACKY CAKES-IN-A-CONE

One of my proudest first-grade moments, alongside playing Mrs. Rabbit in the school play, was when my mother made cake cones for the class. I beamed as she walked through the door carrying a tray of ice cream cones, topped with thickly swirled chocolate frosting and alit with candles. There was no convincing me otherwise, I truly thought those cones were the coolest birthday treat ever! The Wacky Cake that fills these cones evolved from a tradition that hearkens back to the Depression era, if not earlier, when supplies were short -- this cake is eggless and dairy free -- and innovation necessary. The wacky reaction of the baking soda and vinegar causes the cake to rise. Part of the wackiness, too, was that the batter was mixed in the pan. Although the batter for these treats is whipped up in one bowl instead, baking it in cones makes it wackier still. With little effort, you too can make a child's heart sing.

3 cups all-purpose flour
2 tablespoons white vinegar
2 cups sugar
1 tablespoon plus 1 teaspoon pure vanilla extract
1/2 cup unsweetened cocoa powder
36 flat-bottomed ice cream cones
2 teaspoons baking powder
8 tablespoons unsalted butter, at room temperature
1 teaspoon salt
3 3/4 cups confectioners' sugar
2 cups water
1/4 cup heavy cream or more as needed
3/4 cup canola or vegetable oil
Multicolored sprinkles

Steps:

  • Make the wacky cakes: Preheat the oven to 350°F. Place 1 cone in each cup of a standard 12-cup muffin pan (it helps them remain upright when you put them in the oven).
  • Stir the flour, sugar, cocoa powder, baking powder, and salt together in a large mixing bowl. Add the water, oil, vinegar, and vanilla extract (1 tablespoon) and stir until thoroughly combined, at least 150 strokes.
  • Using a 1/4 cup measure, fill each cone about three-quarters full. Bake for 30 minutes, or until a toothpick inserted all the way into a cone comes out clean. Unless you have 2 standard 12-cup muffin pans, you'll need to repeat this twice with the remaining batter. Let cool completely.
  • Meanwhile, make the Vanilla Frosting: In the bowl of a stand mixer fitted with the whisk attachment, beat the butter for 4 minutes, or until light and fluffy. Slowly add half of the confectioners' sugar until fully incorporated. Add the cream and continue to beat until smooth and creamy. Continue to add the remaining sugar and beat until your desired consistency is reached, adding more sugar or cream as necessary. Beat in the vanilla extract (1 teaspoon).
  • Frost the wacky cake cones and decorate with sprinkles.
