- Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
- In a large bowl, whisk together butter, sugars, egg, salt, and cinnamon until smooth. Add flour, oats, and raisins; fold in just until combined.
- Spread batter in prepared pan, and bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 bars.

- Preheat oven to 350 degrees F. Grease and flour 9 x 13 inch pan.
- Cook first six ingredients over low heat until well blended. Set aside to cool.
- In a separate bowl, mix together brown sugar, oatmeal, baking soda, butter, flour and salt until crumbly. Press half of mixture into pan.
- Pour cooked mixture over crust and crumble the other half of crust over the top.
- Bake for 20 minutes.

- In a large bowl, cream the butter and brown sugar until light and fluffy. Combine the flour, oats, baking powder, baking soda and salt; gradually add to creamed mixture (mixture will be crumbly). , Set aside 2 cups; pat remaining crumbs into a greased 13-in. x 9-in. baking pan. Bake at 350° for 15 minutes. Cool., Meanwhile, in a small saucepan, combine filling ingredients. Bring to a boil; cook and stir for 5-8 minutes. Pour over crust; sprinkle with reserved crumbs. Bake 15 minutes longer.

RUM RAISIN CHEESECAKE BARS
This Christmas bake these extraordinary cheesecake bars that are enriched with rum and raisins - a perfect dessert.

Steps:
- In 1-quart saucepan, heat raisins and rum to simmering over medium heat. Remove from heat; let stand 15 minutes.
- Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In medium bowl, beat butter, 1/4 cup of the granulated sugar and the vanilla with electric mixer on medium speed until well blended. On low speed, beat in flour until soft dough forms. Press in bottom of pan. Bake 10 to 15 minutes or until center is set.
- Meanwhile, in large bowl, beat cream cheese and remaining 3/4 cup granulated sugar with electric mixer on medium speed 1 to 2 minutes or until creamy. Add eggs, one at a time, beating until blended. Stir in raisins and any rum remaining in saucepan. Pour over partially baked crust. In small bowl, mix sour cream and brown sugar. Drop sour cream mixture by tablespoonfuls randomly onto cream cheese filling. Swirl sour cream mixture through filling with knife for marbled design.
- Bake 25 to 30 minutes or until set. Cool completely in pan on cooling rack. Refrigerate 2 hours or until chilled. Cut into 4 rows by 4 rows. Store covered in refrigerator.

Steps:
- Heat oven to 350°F.
- Combine butter and brown sugar in bowl. Beat at medium speed until creamy. Add all remaining crust ingredients; continue beating until well mixed.

One of our families favorite cake like cookies. A German recipe handed down from mom's side of the family. A Mennonite cookie that grandma used to make and send in our Christmas box when I was young. My mom still makes them today at Christmas time.

- 1. Preheat oven to 375F. Lightly grease baking sheets.
- 2. In mixer combine butter, eggs, sugar & vanilla; beat until fluffy. Add to egg mixture the sour cream. Mix well. In a bowl combine flour, salt, baking powder and baking soda. Mix in slow till combined well. Stir in raisins. Refrigerate for 1 hr.
