BUTTERSCOTCH BARS
These rich and chewy bars of butterscotch goodness are extra-easy to make with cake mix and butterscotch caramel topping.

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pan). In small bowl or 2-cup measuring cup, mix topping and 1 tablespoon of the dry cake mix. In large bowl, stir together remaining dry cake mix, the butter and egg, using fork, until crumbly. Reserve 1 cup crumb mixture. Using a piece of plastic wrap on crumb mixture, press remaining mixture in bottom and 1/2 inch up sides of ungreased 9-inch square pan; remove wrap.
- Bake 12 minutes. Pour topping over crust to within 3/4 inch of edge. Sprinkle with reserved 1 cup crumb mixture.
- Bake 22 to 26 minutes or until light golden brown. Cool 10 minutes; loosen edges of crust with knife. Cool completely, about 50 minutes. Sprinkle with coarse salt. For bars, cut into 4 rows by 4 rows. Store covered.

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
- In large bowl, beat cake mix, melted butter, brown sugar, eggs, milk and vanilla with spoon until well blended. Stir in butterscotch chips and pecans. Spread in pan.
- Bake 24 to 28 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- Cut into 6 rows by 4 rows. Store covered in airtight container at room temperature.

- Preheat oven to 350°. In a large bowl, combine cake mix, pudding mix, oil and 1 egg; mix until crumbly. Reserve 1 cup for topping. Press remaining mixture into an ungreased 13x9-in. baking pan. - 1. Combine dry pudding mix, flour, and baking powder. Mix well. Melt oleo in saucepan. Remove from heat . Add sugar. Beat in eggs. Blend in vanilla and pudding mixture. Add nuts. Spread in greased 8-inch square pan. Bake at 350^ for 35 minutes. Cut into bars when cool. Can be frosted or powdered sugar dusted. Recipe from Mom's friend, Joan. --- Recipe 2 Quick Butterscotch Bars 3 oz. pkg. cook and serve butterscotch pudding 2 cups milk 18 oz. white cake mix, use dry 1/2 cup chopped walnuts 1/2 or more butterscotch chips In a large saucepan combine pudding mix and milk and make according to package directions for pudding. When pudding has cooked remove from heat and pour in whole box of dry cake mix. Stir gently just to combine and break up any lumps. Pour into a sprayed 9x13-inch baking pan. Spread even. Sprinkle nuts and chips over top evenly. Bake in 350^ oven for 35 minutes or until tested done with a toothpick. No need to frost these babies. Enjoy. This is my version of Joan's recipe.
