Okinawan sweet potatoes are a glorious purple color which makes this ice cream a lovely lavender color. You could probably sub another kind of sweet potato in a pinch, but it won't be the same.

1/4 cup okinawan sweet potato, peeled, cooked and mashed
2 cups half-and-half
1/2 cup sugar
1 teaspoon vanilla extract

Steps:

  • Mix all ingredients until well blended.
  • Freeze in an electric ice cream maker, following manufacturer's directions.

The author of this recipe states: The use of herbs and spices might scare some from trying it... but if you're tired of store-bought ice creams and are looking for something a bit different, this is a fun one to try. I personally can't wait to try this one.....yummm !

2 1/2 cups heavy cream
1 cup whole milk
3/4 cup dark brown sugar
5 egg yolks
1 cup sweet potato puree, canned
1/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1 1/2 tablespoons dried rosemary
1/4 cup pecans, lightly chopped

Steps:

  • Place cream, milk, and brown sugar in a medium saucepan that's set to low-medium heat. Stir until sugar has dissolved and the mixture is hot, but not boiling.
  • Whisk the egg yolks in a bowl. Continue whisking and slowly add in one cup of the hot mixture. Pour the mixture back into the saucepan, whisking constantly. Cook over medium heat, stirring constantly, until the mixture thickens enough that it coats the back of a spoon, about 6 minutes. Do not boil.
  • Pour the mixture back into the bowl and whisk in the sweet potato puree, nutmeg, cinnamon, cayenne pepper and rosemary. Cover and refrigerate until it has chilled about 2 - 3 hours.
  • Follow the manufacturer's directions for the ice cream maker to freeze.
  • Once the ice cream is ready to your liking , scoop into bowls and top with pecans.

2 medium sweet potatoes
1/2 cup sugar
2 large eggs
1/4 cup light corn syrup
1/2 teaspoon salt
1 cup half-and-half
1 cup heavy cream
1/2 teaspoon vanilla extract

Steps:

  • Scrub the potatoes and bake them at 400° for 1 hour or until soft.
  • When the potatoes are cool enough to handle, peel and mash the potatoes.
  • You should have about 1 1/4 cups of mashed sweet potatoes; set aside.
  • In a mixing bowl, beat the sugar into the eggs until thickened and pale yellow.
  • Beat in the corn syrup and salt; set aside.
  • In a large saucepan, bring the half-and-half to a simmer.
  • Slowly beat the hot half-and-half into the eggs/sugar mixture.
  • Pour the entire mixture back into the pan and place over low heat.
  • Stir constantly with a whisk until the custard thickens slightly (be careful not to let the mixture boil or the eggs will scramble).
  • Remove pan from heat and beat in the potato puree.
  • Pour the hot potato custard through a strainer into a large, clean bowl.
  • Allow the custard to cool slightly, then stir in the cream and vanilla.
  • Cover and refrigerate until cold or overnight.
  • Stir the chilled custard, then freeze in 1 or 2 batches in your ice cream maker by following the manufacturer's instructions.
  • When finished, the ice cream will be soft; for a firmer ice cream, transfer to a freezer-safe container and freeze several hours.

  • Heat the cream, milk, and brown sugar in a heavy medium saucepan, stirring occasionally, until sugar is dissolved and mixture is hot. In a small bowl, whisk the egg yolks briefly. Slowly pour about 1 cup of the hot mixture into the egg yolks, whisking briskly while you pour. Pour the egg yolk mixture back into the saucepan, whisking constantly. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 6-8 minutes. Do not boil. Strain the mixture into a bowl. Whisk in the sweet potato puree and spices. Cover and refrigerate until thoroughly chilled. Freeze in ice cream maker as directed.

This recipe comes from the 1986 cookbook, I Hear America Cooking, & although some will tell you that 'pone' should be considered a veggie side dish, others will let you know that it's definitely a dessert! Well, research tells me that, whatever else it is, centuries of cooking account for it as a sweet dessert!

1/2 cup brown sugar, packed
1/4 lb unsalted butter
1/4 cup light molasses
1/2 cup orange juice, fresh-squeezed
1 lemon
1 orange, zest of, minced
4 eggs, beaten
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 tablespoon brandy (or rum)
2 cups sweet potatoes, peeled, grated (raw)
2 lemons
3/4 cup granulated sugar
1/4 cup water

Steps:

  • FOR THE PONE: Preheat the oven to 325 degrees F, then butter a 9"x9"x2" baking dish.
  • In a mixing bowl, with a hand-held mixer, cream the sugar & butter, then gradually beat in the molasses & orange juice.
  • In another container, from the 1 lemon, mince the zest & set it aside while removing & discarding the white pith from the lemon. After that, seed the lemon & chop the pulp fine, before adding this pulp to the sugar/butter mixture, along with the orange zest, eggs, seasonings & brandy, mixing well to combine.
  • Add the grated sweet potatoes & mix well, then smooth this mixture into the prepared baking dish & bake for 1 hour.
  • FOR THE CANDIED LEMON SLICES: Meanwhile, cut the 2 lemons crosswise into 1/8-inch slices & remove the seeds.
  • In a covered pan, boil the sugar with the water for 5 minutes, then remove the cover & boil rapidly until syrup reaches the soft-ball stage (236 degrees F), then remove the pan from the heat.
  • Dip lemon slices in the syrup & put them on a baking sheet to dry until ready to use.
  • As soon as the pone is done, transfer the entire pone square to a rack to cool.
  • When cooled, cut into 12 bars & top each with a candied lemon slice.
