OLD-FASHIONED SOUTHERN TOMATO GRAVY



Old-Fashioned Southern Tomato Gravy image

This Southern tomato gravy is an old-fashioned tomato sauce, and it is delicious on biscuits. The easy roux is made with bacon drippings or butter.

2 large tomatoes , peeled, cored, and chopped
1 cup chicken stock , low sodium or unsalted
1/4 cup bacon drippings or butter or a combination
1/4 cup all-purpose flour
1/2 to 1 cup milk or cream, water, or more broth
Optional: 2 to 3 tablespoons tomato paste, or to taste
1 dash kosher salt
1 dash freshly ground black pepper, to taste
Garnish: fresh parsley, chopped

Steps:

  • Gather the ingredients.
  • Put the chopped tomatoes in a saucepan with 1 cup of the chicken stock. Place the saucepan over medium-high heat and bring to a boil.
  • Reduce the heat to low and continue to simmer the tomatoes while you prepare the roux.
  • Put the bacon drippings or butter in a medium saucepan and place it over medium-low heat.
  • When the fat has melted and the foaming subsides, add the flour.
  • Cook, whisking constantly until the roux is just light brown. It should be about the color of peanut butter. Don't let it burn.
  • Remove the pan from the heat and gradually stir in the simmering tomato and broth mixture.
  • Return the tomato mixture to the heat and stir in 1/4 cup of milk, cream, water, or stock.
  • Whisk in tomato paste, if using, along with kosher salt and freshly ground black pepper. Cook, stirring until hot and bubbling. If too thick, add more liquid (milk, cream, water or stock) as needed.
  • Garnish the sauce with a sprinkling of chopped fresh parsley and serve.

This dish is truly a taste of Louisiana Cajun Country. I mean where folks are already sitting at the table drinking coffee and eating breakfast by the time the rooster crows. Mama made countless batches of biscuits and tomato gravy in her lifetime. I'm sure she learned to make this from her mother: Carmen Inez Shirley. This is the dish that puts my feet back under my mama's table. Serve with love over hot buttermilk biscuits along with bacon or sausage for breakfast, brunch, lunch or dinner.

¼ cup bacon drippings
3 tablespoons all-purpose flour
2 cups water
½ (6 ounce) can tomato paste
salt and ground black pepper to taste

Steps:

  • Heat bacon drippings in a skillet over medium-high heat. Stir the flour into the bacon drippings and cook, stirring constantly, until lightly browned. Slowly pour the water into the flour mixture while whisking. Whisk in the tomato paste. Cook the mixture until it begins to thicken. Reduce heat to low and simmer until thick, about 5 minutes. New Orleans Red Gravy is made with tomatoes, onions, green peppers and Creole spices, and my own little secret touch, this stuff will have your mouth watering.

1-15 ounce can diced tomatoes
1 green bell pepper (diced)
1 medium onion (diced)
1 1/2 cups chicken stock
1 tablespoon Louisiana hot sauce
1 tablespoon Worcestershire sauce
1 teaspoon Cajun seasoning
1/4 teaspoon ground black pepper
2 garlic cloves (minced)
1/4 cup heavy cream
1 tablespoon unsalted butter

Steps:

  • Heat butter in a skillet over medium heat. Add the green pepper and onion and cook until soft.
  • Add the tomatoes and cook for one minute. Add all remaining ingredients except the cream. Bring to a simmer, cover and let cook for 20 minutes.
  • Add the cream and bring back to a simmer. Simmer for 3-5 minutes, until thickened. Remove from heat and serve .

This is a mildly spicy, flavorful gravy you can pour over chicken, turkey or just plain mashed potatoes. It is very similar to a certain fast food chain's Cajun gravy.

2 (4.5 ounce) cans chopped green chilies
1 ½ teaspoons chicken bouillon granules
1 ½ cups warm water, divided
¼ cup all-purpose flour
1 teaspoon onion powder
⅛ teaspoon ground cayenne pepper, or to taste

Steps:

  • Place the green chilies into a blender, and process until smooth. Stir chicken bouillon granules and 1 cup water together in a saucepan, and bring to a boil, stirring until the granules have dissolved. Mix in the pureed chilies. Bring the sauce back to a boil over medium-low heat.
  • In a bowl, whisk the remaining 1/2 cup of warm water with the flour until the mixture is smooth; whisk the flour slurry into the sauce. Bring the mixture back to a boil, whisking constantly until smooth and thickened, 2 to 5 minutes. Stir in onion powder and cayenne pepper. Serve hot.

I have lots of different tomato gravies or "sauces", but this is the one that's best with braciole.

1 -2 leftover pork spareribs
1/4 cup extra virgin olive oil
2 large onions, chopped
4 garlic cloves, crushed
1 lb italian sweet sausage
2 (28 ounce) cans crushed tomatoes
2 teaspoons dried oregano
2 tablespoons sugar
1/2 cup parmesan cheese
4 tablespoons dried parsley flakes
2 bay leaves
2 tablespoons dried basil
1 (4 ounce) can tomato paste
1/2 cup red wine (Lambrusco)

Steps:

  • In a large dutch oven, saute the onions in the oil until tender. Add the garlic and saute about 30 seconds, stirring often. Take pot off burner so garlic won't cook further. Add in oregano, parsley, bay leaves, basil, and tomato paste. Put the pot back on the burner. Mix ingredients well and stir constantly for about 1-2 minutes. Add tomatoes, sugar, spareribs, Parmesan, and wine. Stir well and take it back off the burner.
  • Poke several holes in each of the Italian sausages. Cook the sausages in microwave until they are halfway done. Take out of microwave and discard grease. Cut each sausage in half. Drop the sausages into the pot of tomato gravy. Stir a little.
  • Put the pot back on the burner. (**Add the braciole if you made them.) Cook slowly with a lid partly on for 1 1/2 hours. Check it often. Stir as needed. You may add a little water if it gets too thick for your taste.
  • (You may also add meatballs if you made them.).

  • Add minced onions, celery, green peppers, minced cayenne pepper, and garlic in the cast iron skillet and cook for about 5 minutes stirring as needed.
  • Next, add the diced vine-ripened tomatoes to the well-seasoned cast iron skillet or metal pan if tomatoes are out of season you may use canned diced tomatoes; I recommend using an organic brand. If you do not have a cast iron skillet you have used for 6+ years to fry fatty meats such as bacon, sausage, and fried chicken I would recommend you cooking tomatoes separately so your seasoning is not removed. Cook for 3-4 minutes stirring occasionally.
  • Add Cajun seasoning, thyme, and all-purpose flour to the cast iron skillet, keep moving the four in the cast iron skillet to combine with the oil and vegetables constantly, cook for about 2-3 minutes to cook off raw flour taste and darken the roux, do not scorch the flour and oil mixture.
