Cajun Cheesy Hash Brown Casserole image

Provided by sgre52160

Time 3h

Yield 6

Number Of Ingredients 16

1 package (large size) frozen cubed hash brown potatoes, thawed
2 cloves garlic, minced
1 stalks celery, chopped
1 small onion, chopped
1/4 cup butter
1/4 cup flour
1 1/2 cup heavy cream
1/2 cup low-sodium chicken broth
1 1/2 cup shredded sharp cheddar cheese
1 1/2 cup shredded Monterey Jack cheese or Mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon ground nutmeg
1/2 teaspoon white pepper
1/2 teaspoon sea salt
1/2 teaspoon Creole or Cajun Seasoning
additional shredded cheese to top casserole, optional

Steps:

  • Preheat oven to 350 degrees F. In a large bowl, combine cheeses and tossing lightly until evenly coated; set aside. In a skillet, saute the celery, onion and garlic in the butter until tender. Stir in the flour and cook until flour mixture is slightly browned. Add cream, broth, and seasonings; stirring to mix well. Cook on medium heat for 10 minutes to form a thick white sauce. Stir constantly to prevent scorching or burning. Turn off the heat. Stir in cheeses until melted. Fold in the potatoes. Add additional cream and/or broth if the mixture is to thick. In a large gratin dish, spread half of potato mixture then sprinkle evenly with 1 cup cheese mixture, salt, black pepper and granulated garlic. Repeat layering one more times. Set aside. Place potatoes on center rack of oven and bake until golden brown and fork inserted into center meets little resistance, about 75 minutes or until golden brown. Top with shredded cheese mixture and bake an additional 30-45 minutes or until cheese has melted. Remove from oven and let cool 10 minutes before serving.

  • Preheat oven to 350. In a 12″ (or larger) oven-safe skillet (preferably cast-iron), heat the butter over slightly-hotter-than-medium heat. Melt the butter in the heated skillet and add the garlic and sliced sausage. Cook until the garlic is tender and fragrant. Add the potatoes and cook according to the package/recipe directions until crispy on the outside and tender inside. Season to taste with Cajun seasoning or Tabasco sauce. Remove from heat.
  • Using a spoon, make 6 evenly-spaced indentations into the potatoes. Carefully crack an egg into each well and, if desired, sprinkle lightly with Cajun seasoning or salt and Tabasco sauce. Bake in the preheated oven for 18-25 minutes or until the egg whites are completely cooked but the yolks are still runny (mine were done at exactly 20 minutes, but you want a little give or take in each direction). If adding cheese, do it in the last 5 minutes of cooking. Carefully spoon out of the skillet and serve immediately. Makes 6 servings.

  • Preheat a 12” or larger heavy-bottomed skillet (cast iron if you have it,) over medium-high heat then drizzle in enough extra virgin olive oil to coat the bottom. Add sausage then saute until lightly browned, 4-5 minutes. Remove to a plate then set aside.
  • Turn heat down to medium then add enough extra virgin olive oil to once again coat the bottom of the skillet. Add potatoes, season with Old Bay, then saute, stirring occasionally, until potatoes are lightly browned, 10 minutes, adding more extra virgin olive oil if potatoes begin to burn.
  • Add more extra virgin olive oil to the skillet with bell pepper, onion, and mushrooms then season with more Old Bay. Saute until vegetables are tender while stirring occasionally, 20-25 minutes, turning the heat down and/or adding more extra virgin olive oil if needed. Taste along the way, adding more Old Bay and/or salt as needed. Add sausage back into the skillet then stir to reheat.
  • Meanwhile, heat another large skillet over medium heat then spray with nonstick spray. Cook eggs according to your preference (scrambled, over easy, sunny side up, etc.) then scoop hash onto plates and top with eggs.
