Steps:
- Heat oven to 400F degrees.
- Spread the potatoes single layer on a baking sheet.
- Sprinkle with the paprika, chili, cajun spice and then drizzle with the olive oil.
- Mix the potatoes with a spatula to coat all sides evenly.
- Season with salt.
- Bake potatoes until crisp, turning with a spatula every 10 minutes, Apprx 40 minutes.

CHEESY CAJUN HASH BROWNS

- Heat oven to 350°F. Spray 1 1/2-quart casserole with cooking spray.
- In 12-inch nonstick skillet, melt butter over medium heat. Cook onion in butter 3 to 4 minutes, stirring frequently, until crisp-tender. Stir in flour and Cajun seasoning until combined. Slowly pour milk into onion mixture, stirring constantly until mixture is well combined and slightly thickened.
- Reduce heat to medium-low. Stir in Cheddar cheese and 1/2 cup of the Parmesan cheese until melted. Fold in potatoes until evenly coated with cheese sauce. Spoon mixture into casserole.
- Bake uncovered 30 minutes. Sprinkle with remaining 1/4 cup Parmesan cheese. Bake 14 to 17 minutes longer or until potatoes are tender and cheese is melted.

- Preheat your oven to 400 degrees.
- Cover a sheet pan with foil and spray down with nonstick cooking spray, like Pam.
- In a bowl, add your frozen hash browns, shredded cheese, onions and seasoning. Toss with tongs to mix. Now add olive oil to mixture and mix well, trying to spread olive oil through the mixture. Lastly, add melted butter and mix again.
- Dump cheesy hash browns on foiled lined baking sheet and spread out to an even layer.
- Bake in the oven for 28 minutes for crispy edges and finished hash browns.
- Serve with Bacon and Eggs (both done in oven too!)

- Preheat oven to 400°F. Cook potatoes in medium pot of boiling salted water until almost tender, about 5 minutes. Drain well. Spread potatoes on heavy large baking sheet. Sprinkle with paprika, chili powder and Creole seasoning. Season with salt. Drizzle olive oil over potatoes and stir to coat.
- Bake potatoes until crisp, turning with metal spatula every 10 minutes, about 40 minutes.

- Preheat oven to 350 degrees F. In a large bowl, combine cheeses and tossing lightly until evenly coated; set aside. In a skillet, saute the celery, onion and garlic in the butter until tender. Stir in the flour and cook until flour mixture is slightly browned. Add cream, broth, and seasonings; stirring to mix well. Cook on medium heat for 10 minutes to form a thick white sauce. Stir constantly to prevent scorching or burning. Turn off the heat. Stir in cheeses until melted. Fold in the potatoes. Add additional cream and/or broth if the mixture is to thick. In a large gratin dish, spread half of potato mixture then sprinkle evenly with 1 cup cheese mixture, salt, black pepper and granulated garlic. Repeat layering one more times. Set aside. Place potatoes on center rack of oven and bake until golden brown and fork inserted into center meets little resistance, about 75 minutes or until golden brown. Top with shredded cheese mixture and bake an additional 30-45 minutes or until cheese has melted. Remove from oven and let cool 10 minutes before serving.

- Preheat oven to 350. In a 12″ (or larger) oven-safe skillet (preferably cast-iron), heat the butter over slightly-hotter-than-medium heat. Melt the butter in the heated skillet and add the garlic and sliced sausage. Cook until the garlic is tender and fragrant. Add the potatoes and cook according to the package/recipe directions until crispy on the outside and tender inside. Season to taste with Cajun seasoning or Tabasco sauce. Remove from heat.
- Using a spoon, make 6 evenly-spaced indentations into the potatoes. Carefully crack an egg into each well and, if desired, sprinkle lightly with Cajun seasoning or salt and Tabasco sauce. Bake in the preheated oven for 18-25 minutes or until the egg whites are completely cooked but the yolks are still runny (mine were done at exactly 20 minutes, but you want a little give or take in each direction). - Preheat a 12” or larger heavy-bottomed skillet (cast iron if you have it,) over medium-high heat then drizzle in enough extra virgin olive oil to coat the bottom. Add sausage then saute until lightly browned, 4-5 minutes. Remove to a plate then set aside.

- Peel potatoes and shred in a food processor with the shredding attachment (preferred) or with a box grater.
