CAJUN-STYLE RED BEANS AND RICE
This is a hearty Southern dish, easy to make and full of flavor and quite spicy! I sometimes add in cooked ground beef, you can add in some chopped cooked bacon or use spicy dryed smoked sausage to the beans for smokey flavor --- I also like to add in some Creole seasoning -- see my recipe#186029

Steps:
- Heat oil in a large skillet over medium heat.
- Add in onions, garlic green bell pepper and crushed chili flakes; saute until veggies are soft (about 8 minutes).
- Sprinkle with chili powder and paprika, cook about 1 minute.
- Add in tomato sauce, stewed tomatoes and hot sauce (if using) season with salt and add in sugar to taste if needed.
- Add in beans, cooked ground beef and bacon if using; mix to combine and simmer for about 1 hour.
- Serve mixed or over rice topped with a dollup of sour cream if desired.
AUTHENTIC LOUISIANA RED BEANS AND RICE
Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

- Rinse beans, and then soak in a large pot of water overnight.
- In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
- Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
- Stir sausage into beans, and continue to simmer for 30 minutes.
- Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

- Place kidney beans in large pot. Add enough water to pot to cover beans by 2 inches. Bring to boil. Remove pot from heat. Cover and let beans stand 1 hour to soften. Drain. Return beans to same pot. Add 7 cups water and chicken broth. Bring to boil. Reduce heat to medium-low and simmer until beans are tender, about 1 hour. Drain beans, reserving 2 cups of cooking liquid.
- Heat vegetable oil in heavy large skillet over medium-high heat. Add 2 cups onions and saute' until beginning to soften, about 4 minutes. Add sausage, bell pepper, celery, and garlic. Reduce heat to medium and saute' until vegetables are tender, about 10 minutes. Stir in beans, reserved 2 cups cooking liquid, 1 teaspoon salt, 1/2 teaspoon black pepper, paprika, and cayenne. Reduce heat to low; simmer until liquid thickens slightly, about 15 minutes.
- Meanwhile, combine remaining 2 3/4 cups water, rice, butter, bay leaf, thyme, and remaining 1/2 cup chopped onion, 1 teaspoon salt and 1/4 teaspoon black pepper in a large saucepan. Bring to simmer over high heat. Cover, reduce heat to low and cook until rice is tender and water is absorbed, about 20 minutes. Remove from heat and let stand covered 10 minutes.
- Spoon kidney beans into bowls. Top with rice and serve.

- Heat oil in a medium-size skillet over medium heat. Saute onion (and veggies, if using) until onion is translucent. Add kielbasa about halfway through onion cooking.
- Stir in Cajun seasoning and rice and let it lightly toast for 1 minute. Pour in tomatoes (and greens, if using) and water. Stir well.
- Open and drain kidney beans, then add them to the skillet and stir. Cover pan and reduce heat to low. Cook for 15-20 minutes - or until rice is done (time varies depending on the kind of rice).
- Add salt, pepper, and hot sauce to taste. Serve with a salad or steamed vegetables.

CAJUN-STYLE BEEF AND BEANS
I make this recipe for my husband for lunch. He loves the Cajun Style Sausage and Rice, however it plays havoc on his stomach at times but I found this recipe doesn't do that and he enjoys it almost as much. If you like cheese it also tastes very good with some sprinkled on the top after you remove it from the oven.

- Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
- Preheat an oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. - Wash beans. Add in the crock pot: the washed beans, onion, bell pepper, garlic, hambone, and bay leaf. Pour enough water in the crock pot so that the water is 2 to 3 inches above the beans. Turn the crock pot on low and cook overnight or 10 hours or during the day while at work. Do not peek or uncover.
- Early the next morning or after returning from work, check and see if the water has been reduced. If further reduction of water is needed (and generally it is needed), turn the cooker on high. Smash some of the beans to thicken and cook one or two more hours; adding the smoked sausage in the last half hour of cooking. Remove bay leaf and season to taste with salt and pepper.
- Alternatively, pour the entire mixture from the crock pot to a large heavy duty pot or black cast iron pot. Smash some of the beans to thicken the gravy. Cook to reduce the water and thicken the gravy. When the gravy is almost the consistency you want, add the smoked sausage, salt and pepper and remove the bay leaf. Cook for 30 minutes.
